Another night of good sleep – almonds are 2 for 2!! I really have found myself on the verge of hunger as I read in bed at night. It’s so inconvenient to get up and eat a mini meal – I don’t have an appetite for most things. But the almonds are easy to munch (and I don’t worry about sugar on my teeth…although I’m a bit concerned with all the post-tooth-brushing-and-flossing night nibbling…hope it doesn’t last long).
We’re departing on our trip shortly, so Matt is home and made smoothies for breakfast.
The base was an unmeasured generous scooping of frozen berries, milk, raw oatmeal and ice. And the top was made with coconut butter magic shell! [Check out my coconut butter page for more info.] I picked up a jar of Artisana recently (the best) after a very unsuccessful attempt to make my own from unsweetened dry coconut. $11 is a lot, but not when it lasts for months!
It’s best in the summer when it’s naturally drippy at room temp. Just drizzle it on a cold smoothie in a bowl and you have yourself a hardened coconut shell!
Use your spoon to break it into bite-sizes chunks
And crunch that smoothie away : )
Have a great weekend!!

That magic shell is so cool – I have to try it!!
I love the color of that smoothie bowl. I want to try the coconut shell! That sounds awesome. Have safe travels!
The shell is a great idea for a smoothie! Enjoy your trip!
I LOVE using frozen berries in the summer! I eat them in my cereal or oatmeal everyday. Anytime I am out I feel off center the rest of the morning! lol
Yum!
Have a great trip
I need to get that thar coconut stuff. I told the Mr about the Magic Shell properties then put it back on the shelf. *face palm*
Have a great trip!
I have never thought to drizzle coconut oil in my smoothie bowls but will try it out next time!
I tried making my own coconut butter at home. It came out pretty well, but I’m not the world’s biggest fan of coconut… probably should have considered that before I made it though.
Yeah, some ideas sounds great until you realize… hey I don’t like this!
Ha! That’s such a great idea!!
That coconut butter shell is so cool! I’m not a fan of the texture of coconut but I like the flavor, so I may have to give coconut butter a try.
Is there any added sugar in that coconut butter?
Nope – but it’s way sweeter on the palate than my homemade one was (which was almost savory!?)
Gorgeous photos today, Kath! (though who am I kidding, you ALWAYS have gorgeous photos!) I love this color scheme on a sunny Friday morning
Have a great trip this weekend!
I really need to try the whole coconut shell thing! I have a big jar of coconut butter sitting at home and you’ve convinced me that it needs using!
Have a great trip Kath, and safe travels!
Love that purple color!! Have a great weekend!
Aaaaand I just found my Sunday morning post-race treat! Thanks, can’t wait to try it
Love the coconut magic shell. This looks great I was just thinking of making granola today what a great way to use it. Also, almonds by the bedside, a Baggie in my purse, and a stash at my desk were a must for me when I was pregnant. Theyre also great for combating the crazy hunger of a nursing mom.
wow that looks super yummy!.
Have a great trip
Such the decadent breakfast! The coconut seems to be the perfect finishing touch! Safe travels!
That looks awesome. I have a jar of coconut oil but have yet to use it. This is a great idea.
Enjoy your stay in BMore!
That looks great. I am dying to try out the coconut butter but won’t be home for another 2 months. While it looks yummy, I am simply too cheap to shell out $11 and then have to trash it. Glad to hear it lasts though…about how much do you typically use at a time?
Maybe half a tbsp?
I like coconut butter…but the way it looks kinda skeeves me out
Love the way the hardened coconut butter looks atop of the smoothie! It looks like icing.

Safe travels, guys!
Too cool! Looks delicious, too!
Looks very cool –and yummy!
That coconut shell with granola is a fantastic idea!
I was so worried about cavities during my pregnancies because I couldn’t brush my teeth at night (I would get horrible heartburn/nausea from it) in combination with my morning sickness. But I came out cavity-free- and still are 6 years out. Your teethies will be just fine!
$11 is relative. Something that lasts for months and gives you dozens and dozens of moments and days of pleasure is $11 well spent!
Yum!! Love the magic shell!! Gorgeous color too! Safe travels to Bmore!!!
That looks so good!
ohhh yessss it’s my fave way of eating coconut butter! When it hardens on cold foods and it crunches~:D
That looks amazing, it makes me want to go out and get coconut butter ASAP! Wow, I’ve been gone for a few months and now you’re pregnant? CONGRATULATIONS, that’s amazing!!!
I’ve never tried a smoothie in a bowl OR coconut butter so I guess this weekend will be a good time to try both:) Looks delicious!
Yum! It’s just like she’ll topping for ice cream. I don’t lthink I’ve had anything like that in ages! It looks very delicious
That smoothie looks so delicious! Almost as pretty as the table it’s sitting on!
Your SIAB looks divine! How I wish it was smoothie weather in Australia – though, truth be known, I just have the heating on and have them anyway
Your breakfast almost looks like a cinnamon roll to me (well, a purple cinnamon roll)! Must be the coconut drizzle…looks like icing! YUM.
What a beautiful smoothie…the color is great!
I must try coconut butter! I absolutely LOVE how it turns to a coconut hardshell. Have you ever tried it on ice cream? I would imagine it would be AMAZING!
I have got to try the coconut butter magic shell trick. Never thought of that!
One of these days, I NEED to try artisana coconut butter! I’ve heard so much about it, and I absolutely adore coconut!
