Snappy Casual

Just a casual summer evening around here. I ventured to the bakery for the afternoon for a marketing meeting (we have an intern this summer!) and a call with our mentor. For some reason I was just not hungry today – I only felt called to have 1 bite of Praline Cookie and 2 water bottles of water.

We’re winding down in preparation for going to Baltimore tomorrow and made a soup full of bits and pieces from the fridge. I have been avoiding soups since about 6 weeks pregnant but for some reason a tomato-y soup sounded good tonight.

This simple soup involved combining in a pot:

  • 1 cup chopped leftover beef steak
  • 2 summer squash
  • 2 carrots
  • 1/2 a bell pepper
  • 1/2 cup frozen corn
  • 1/2 cup frozen lima beans
  • 1 can diced tomatoes in juice
  • 1 cup broth
  • 1 tsp Italian seasoning
  • Black pepper
  • 1/4 tsp smoked paprika
  • 2 glugs liquid smoke

Mix together and let bubble for about 30 minutes, or until hungry and veggies are cooked!

Served on the side: one big Spinach Feta Scuffin!

I ate my half with gusto – it was sort of like having a biscuit with dinner!

We try to eat “family dinner” most days of the week, but tonight Matt decided he wanted to watch TV and I G-chatted with Caitlin! Can’t wait till she shares her birth story : )

Feeling pretty sleepy tonight. I have SYTYCD and reading to do!

    That’s awesome that you got to chat with Caitlin! I am also really excited to hear the birth story. Baby HTP is adorable! And that is very cool that you have an intern in the summer. If I were the intern, you could just pay me in cinnamon bread!

    The soup looks good, but I’m not much of a soup person. It just doesn’t ever seem that satisfying to me for some reason, no matter how much stuff or what kind of stuff I put in it. Go figure.

    Haha, “snappy casual”. That’s actually the term we use in my sorority to pretty much replace “business casual” when describing how we’re supposed to dress up for chapter meetings.

    Dinner looks good for a nice summer evening! Yum-mi! And what a great way to get the family to eat spinach too.

    OK Kath and ladies and gents (if there are any) My official weigh-in to start the VA Hopsital MOVE program (like weight watchers) was today! I lost 3.7 pounds since last month May 15. YAY! And guess what!?! I ATE REAL FOOD!! All inspired by Kath. Next weigh-in is in one month. Thank you for the motivation!

    ahhhhh that scuffin sounds so amazing! I must be hungry because everything I see on the computer is calling out to me. And hope you have a great night! btw, just out of curiosity–so you haven’t WANTED soup at all? Or was there another reason for your avoidance of soup? 🙂

    I really need to makes soups more often. I love the idea of just throwing a bunch of ingredients in a pot and letting it do it’s thing. I guess I also need to use my slow cooker more often too…

    I’m sure you get this ALL the time but you really inspire me!     Kath, any chance you might divulge more info about the spinach feta scuffin? Is it pretty straight forward as the name would say? I am intrigued! How big are the chunks of feta? Thanks!
