She Eats Shells By The Seashore

Another night of good sleep – almonds are 2 for 2!! I really have found myself on the verge of hunger as I read in bed at night. It’s so inconvenient to get up and eat a mini meal – I don’t have an appetite for most things. But the almonds are easy to munch (and I don’t worry about sugar on my teeth…although I’m a bit concerned with all the post-tooth-brushing-and-flossing night nibbling…hope it doesn’t last long).

We’re departing on our trip shortly, so Matt is home and made smoothies for breakfast.

The base was an unmeasured generous scooping of frozen berries, milk, raw oatmeal and ice. And the top was made with coconut butter magic shell! [Check out my coconut butter page for more info.] I picked up a jar of Artisana recently (the best) after a very unsuccessful attempt to make my own from unsweetened dry coconut. $11 is a lot, but not when it lasts for months!

It’s best in the summer when it’s naturally drippy at room temp. Just drizzle it on a cold smoothie in a bowl and you have yourself a hardened coconut shell!

Use your spoon to break it into bite-sizes chunks

    I LOVE using frozen berries in the summer! I eat them in my cereal or oatmeal everyday. Anytime I am out I feel off center the rest of the morning! lol

    I tried making my own coconut butter at home. It came out pretty well, but I’m not the world’s biggest fan of coconut… probably should have considered that before I made it though.

    That coconut butter shell is so cool! I’m not a fan of the texture of coconut but I like the flavor, so I may have to give coconut butter a try.

    Love the coconut magic shell. This looks great I was just thinking of making granola today what a great way to use it. Also, almonds by the bedside, a Baggie in my purse, and a stash at my desk were a must for me when I was pregnant. Theyre also great for combating the crazy hunger of a nursing mom.

    That looks great. I am dying to try out the coconut butter but won’t be home for another 2 months. While it looks yummy, I am simply too cheap to shell out $11 and then have to trash it. Glad to hear it lasts though…about how much do you typically use at a time?

    I was so worried about cavities during my pregnancies because I couldn’t brush my teeth at night (I would get horrible heartburn/nausea from it) in combination with my morning sickness. But I came out cavity-free- and still are 6 years out. Your teethies will be just fine!

    I must try coconut butter! I absolutely LOVE how it turns to a coconut hardshell. Have you ever tried it on ice cream? I would imagine it would be AMAZING!
