Overnight Oats That Sound Like Dessert

This post that I wrote about an Overnight Oats Banana Split was such a hit last year that I thought I would continue the dessert theme with a sundae! Of course, this Raspberry Coconut Overnight Oats recipe is anything but dessert – it’s a wholesome, nutritious, oat-based breakfast recipe that will leave you fueled and satisfied – and still tastes like a yummy treat!

Overnight oats are the BEST in the summer because there’s no cooking to it. I also just love how filling they are – the yogurt, milk, oats and chia seeds all come together for a fiber and protein filled breakfast.

As you probably already know, I am a huge texture person. The more chew variety I can get into a bite, the better! So I love the coconut and chopped almond crunch in this recipe.

How To Make Theses Raspberry Coconut Overnight Oats

Here’s the starting lineup:

Begin by adding your oats, milk, and yogurt to a jar and mix well.

Add the rest of the ingredients – and mix, mix, mix!

Put on the lid on the jar and store it in the fridge overnight.

In the morning, serve as simply or as fancy as you like, and add more raspberries, oats and coconut for garnish!

Ingredients

  • 1/3 cup Quaker Old Fashioned Rolled Oats
  • 1/3 cup 2% greek yogurt
  • 1/2 cup milk
  • 1/3 cup fresh raspberries
  • 1 tbsp chia seeds
  • 2 tbsp shredded coconut
  • 1 tbsp chopped almonds
  • 1/4 tsp vanilla
  • Pinch cinnamon
  • Pinch kosher salt

Instructions

  • Mix all ingredients together in a jar and refrigerate overnight.
  • In the morning, layer overnight oats with more raspberries and top with extra coconut.

    My mouth is absolutely watering now. Matt isn’t a huge fan of the texture of overnight oats, but I can’t get enough! I love how you served it in a sundae glass!

    You left raspberries out of the ingredient list! Where’s that editor when you need her ?!?! I’ve never tried overnight oats, but this recipes makes me want to give a try ; )

    Do you think Overnight Oats would thicken enough without the yogurt if you use chia seeds? I’m trying to stay away from dairy but often use coconut or almond milk with oatmeal.

      Yes, but I would use a scant amount of milk for fear it would be too liquidy

      The original overnight oats recipes all use milk (dairy milk) and not yogurt. It tastes great! I’m sure you could use nut milks or coconut milks easily. I prefer overnight oats with milk instead of yogurt.

    This looks amazing! I’ve been having a hard time with breakfast lately. I end up making breakfast for all the boys and then forget about myself. I need to do this every night so I can have breakfast ready made.

    That looks absolutely amazing, Kath! I so wish I could make that right now, but I do not have yogurt & raspberries on-hand. However, when I get some yogurt & raspberries tomorrow, I am going to make it 🙂

    Thank you for the delicious recipe, I can’t wait to try it. My ingredient list did list the raspberries, and even if it didn’t, I would know to buy some to make this, since it is in the picture and in the name of the recipe.
