Two Couch Potatoes

December 21, 2012

Today was one of those days. The kind where I was in outfit #2 by 10am and never got around to taking a shower. But the meals were good and the little company was even better!

I made this glorious bowl of oatmeal for breakfast, and it kept me going until 1pm. Coach’s Oats with pumpkin and cottage cheese swirled in and sunbutter on top.

With two cups of decaf coffee, nice and toasty

Mazen is obsessed with his llama that Hannah Banana gave him. I’m guessing it’s the softness of his fur, but he loves to kiss lick the llama’s face, and this was the first time I caught them snuggling together. THE CUTENESS!

Lunch was leftover pizza + salad by the Christmas tree

Heated in our toaster oven for maximum crispiness

served with a plate of salad greens topped with olive oil, hummus, chopped veggies, avocado, marcona almonds and figs.

We made it out of the house late this afternoon. I had hoped for a run yesterday and again today, but  it just wasn’t gonna happen. Maybe tomorrow. We did get a little walking in though, and we hit up the post office and Splendora’s where I picked up a decaf cappuccino as part of project urban

By the time Matt came home tonight, I had 3/4 of a gourmet dinner ready to go by candlelight.

Matt’s bonus grandmother Bonnie sent us some various meats for Christmas – perfect foodie + new parents gift! We decided to kick them off with the filet mignon. Sprinkled with lemon pepper salt and seared on both sides. To the right we had TJ’s braising greens sautéed in 1 tbsp lemon juice and 2 tbsp Dijon mustard. So simple but tons of flavor.

I also baked an acorn squash – 400* for 30 minutes – drizzled with coconut butter after the fact.

A little red wine rounded out our romantic dinner for two. Baby was sound asleep in his swing.

Baby just had his bath, and now I’m going to take mine!! With bubbles. And a magazine.

I love that bowl your oatmeal is in – so cool! Beautiful photo of your dinner in front of the Christmas tree too. :) Enjoy your day!

Llama needs a name. Lucy? Lulu? Or Larry? Ludwig?

3 KathEats December 21, 2012 at 9:32 am

It’s Llamey

4 Ella December 21, 2012 at 11:11 am

Ludwig! That is too much! Though Llamey is sweet :)

5 jillian December 21, 2012 at 11:20 am

I love llamey <3

6 Cheryl December 21, 2012 at 12:00 pm

I bet Sarah is looking forward to meeting Llamey!

7 Mom December 21, 2012 at 12:26 pm

Yes! She is shy around some other animals, feels sheepish, but she likes llamas.

8 Lucy December 21, 2012 at 9:27 am

That acorn squash with coconut butter is now my new breakfast as of tomorrow!

9 Lisa December 21, 2012 at 9:27 am

You definitely have those days as a mama. I try very hard to exercise each morning but with 4 kids (plus a few more I babysit) I have to be flexible. We’ve had a lot of sickness lately and so yeah, exercise falls to the wayside at times. I try to be creative and fit it in two smaller segments instead of one when these days happen.

I love the picture of Mazen with his llama from your mom. I think he resembles her in that picture too!

10 Katie @ Talk Less, Say More December 21, 2012 at 9:30 am

That picture of M with his llama is so precious!!!

11 [email protected] December 21, 2012 at 9:30 am

That is one of the cutest photos of ever of Mazen asleep, he’s holding on tight! :) Gorgeous bowl of oats and the festive pizza photo is incredible, always in awe of your photography skills!

Looks like a nice relaxing day. How are you able to make a plate of pizza look so pretty? :)

17 Nicole December 21, 2012 at 9:39 am

If you think that llama is going to be his “lovie”, trust me when I say go out NOW and get a few more! I learned this lesson the hard way when my first son attached himself to his “Lambie” and we waited a year or so to try to find more!

18 Anele @ Success Along the Weigh December 21, 2012 at 9:40 am

That pic is adorable. It should go on his graduation memory board for sure!

Gotta love meat gifts! YUM!

19 bekah December 21, 2012 at 9:41 am

Llama!! So adorable. I love it when they hug the toys. My babe has some little monkey carseat strap covers and he just pats and pats them. So precious.

20 Claire @ Live and Love to Eat December 21, 2012 at 9:51 am

OMG llama photo! So adorable and peaceful. :)

Maze is too cute or words with his little llama!

23 Cait's Plate December 21, 2012 at 10:17 am

Nothing beats a bubble bath with a magazine!!

And I am absolutely obsessed with that wooden table you shot your lunch on. AMAZING.

I am so glad it is pizza friday at our house…the picture of your pizza and salad has me drooling for pizza! :) Friday night pizza nights were always our romantic evenings when the kids were younger…we continue them still today! A glass of red wine is the perfect accompaniment! :)

Holy llama cuteness

26 Jen December 21, 2012 at 10:40 am

Kath, I wanted to share with you my new favorite breakfast – a combo of two of your creations! A few months ago you posted a recipe for roasted apples and squash – and I’m now addicted to roasting apples! (Er, squash maybe not so much . . .) :)
I combined your Overnight Oats and roasted apples recipes into one delicious breakfast! I use about 3/4-1 cup of roasted apples, 1/8 cup dried cranberries, oats, chia, greek yogurt, and vanilla soymilk (I use the 1/3 cup measurements usually but add extra liquid to this one because the apples and cranberries seem to soak up a lot of moisture). Then add pecans before devouring. It’s so yummy! Thanks for the inspiration!

28 GrandPeePaw December 21, 2012 at 10:41 am

You didn’t take a shower! Oh no! Please take an extra one before arriving for Christmas so that you’re all caught up 😉

29 KathEats December 21, 2012 at 10:55 am

I did by the end of the day!

30 Katie @ Peace Love & Oats December 21, 2012 at 10:46 am

If I had a llama like that, I’d snuggle with it too! Adorable.

31 Jaime December 21, 2012 at 10:50 am

Love that pic of Maze and Llamey! Tip for you- if he continues to favor the llama, buy five. My MIL bought my daughter a sweet little giraffe at the zoo when she was about Mazen’s age… and my daughter loved loved loved that stuffie. (Named Lovey, appropriately). One horrid day, two years later, we lost Lovey. I searched high and low for another, and couldn’t find one. We had moved, so couldn’t even go to that zoo. I happened to travel back for a wedding and made a side trip to that zoo on the off chance they still carried Lovey, and they had stopped selling them. I asked if they could perhaps look up the brand (I was desperate) and he went to look at a book in back and found TWO sitting in the back room, randomly. I bought them and my daughter was SO excited.

32 KathEats December 21, 2012 at 10:54 am

Wow it was your lucky day! We will definitely look into a second and third if he continues to show favoritism : )

33 Tracy December 21, 2012 at 3:08 pm

We had the same issue with my second son’s stuffed gecko given to him by his Honey (Grandma). Oh the stressssss at naptime/bedtime when we couldn’t find it! Definitely get “stand-ins” for emergencies.

34 Mom December 21, 2012 at 12:07 pm

What a story. So sweet and lucky!

35 natasha December 21, 2012 at 1:04 pm

We have 3 lovies here and they came in a set called “a pair and a spare” which I think is so cute! Mazen is precious!

36 kristen @ verbs and vignettes December 21, 2012 at 10:59 am

that snuggle is the cutest ever. :-) and jealous of your leftovers by the christmas tree. i have to head over to my parents’ house so i can have breakfast next to theirs.

37 Averie @ Averie Cooks December 21, 2012 at 11:51 am

A bubble bath with wine and vino – YES, you deserve it and hope it was as good as it sounds :)

Love “Project urban!” It cracks me up because I always feel a bit more “cosmopolitan” when I decide to indulge in a coffee drink to-go. :)

40 Annette @FitnessPerks December 21, 2012 at 2:10 pm

Love the pizza by the tree! :)

41 Alex @ Raw Recovery December 21, 2012 at 2:11 pm

I think the Mazen/llama picture is the cutest one yet!

42 Laurie December 21, 2012 at 2:15 pm

I did my first random 26 acts of good deeds today by paying for the person behind me at the Dunkin Donuts drive thru. I think even the cashier appreciated what I was doing. Made my coffee taste even better this morning :)

43 Diana @ Eating Made Easy December 21, 2012 at 3:00 pm

I love a good bubble bath especially this time of the year, I have one every morning!! Have a Merry Christmas!!

What is a “bonus” grandma?

45 KathEats December 21, 2012 at 3:21 pm

grandma by marriage

46 eliza December 21, 2012 at 4:01 pm

he is so cute!! Why do you eat cottage chs in your oats? do you like the taste or for the extra protein or both?

That picture with the llama is so sweet! I love seeing all the pictures of your beautiful son. I have a 2-year-old daughter, and the baby time (as I’m sure you’re experiencing) goes by so fast! You’ll be potty training before you know it! :)

51 KatyBug December 21, 2012 at 5:15 pm

Yesterday, I got spit-up on at 9am. Right after I took my shower and got dressed. I figured it wasn’t the end of the messes for the day, so I did a “wet wipe” bath on myself. Sure enough…by 3pm, I was on outfit #2. :)

52 Ana December 21, 2012 at 5:31 pm

I love that cup of yours, do you know where it is from?
The picture of Mazen sleeping with the llama is the cutest ever, your baby boy is precious!
I am happy to see you enjoying him so much! I was also blessed to be able to stay home with my son and I love every second of motherhood. I love all the phases, the easy ones, the hard ones, I learn something every single day with my kid. Being a mom is the best thing in the world! My boy is 10 now and even though it is a very fun age that I am enjoying a lot sometimes I miss the younger days when he wouldn’t be so easily embarassed by giving me hugs and kisses… sigh!
I really like your blog Kath :o)

53 KathEats December 21, 2012 at 5:45 pm

It’s by TAG and was an OpenSky sale a few years ago

56 Julia H. @ Live Young & Prosper December 22, 2012 at 10:32 am

Your oatmeal looks so thick and fluffy…is it the cottage cheese that gets it like that?

57 KathEats December 22, 2012 at 10:38 am

Yeah and pumpkin

58 Stephanie @ Legally Blinde December 24, 2012 at 3:54 pm

Oh my, that picture of Mazen snuggling with his llama is so precious. I’m glad you were able to capture that moment – and share it with us :) Happy holidays to you and your family, Kath!

59 Sara March 12, 2013 at 9:59 pm

Tonight is the night I make overnight oats! I also really would like to make these oats with pumpkin, but im living abroad right now, and there is no canned pumpkin here. How should I prepare a pumpkin so that I can make oats with it, and also potentially something like pumpkin bread pudding?? Please let me know!!

Thanks a bunch.

60 KathEats March 13, 2013 at 8:44 am

I’d say to roast or steam it and then you can puree to get the same effect as canned
