Two Couch Potatoes

Today was one of those days. The kind where I was in outfit #2 by 10am and never got around to taking a shower. But the meals were good and the little company was even better!

I made this glorious bowl of oatmeal for breakfast, and it kept me going until 1pm. Coach’s Oats with pumpkin and cottage cheese swirled in and sunbutter on top.

Mazen is obsessed with his llama that Hannah Banana gave him. I’m guessing it’s the softness of his fur, but he loves to kiss lick the llama’s face, and this was the first time I caught them snuggling together. THE CUTENESS!

served with a plate of salad greens topped with olive oil, hummus, chopped veggies, avocado, marcona almonds and figs.

We made it out of the house late this afternoon. I had hoped for a run yesterday and again today, but  it just wasn’t gonna happen. Maybe tomorrow. We did get a little walking in though, and we hit up the post office and Splendora’s where I picked up a decaf cappuccino as part of project urban

By the time Matt came home tonight, I had 3/4 of a gourmet dinner ready to go by candlelight.

Matt’s bonus grandmother Bonnie sent us some various meats for Christmas – perfect foodie + new parents gift! We decided to kick them off with the filet mignon. Sprinkled with lemon pepper salt and seared on both sides. To the right we had TJ’s braising greens sautéed in 1 tbsp lemon juice and 2 tbsp Dijon mustard. So simple but tons of flavor.

I also baked an acorn squash – 400* for 30 minutes – drizzled with coconut butter after the fact.

A little red wine rounded out our romantic dinner for two. Baby was sound asleep in his swing.

Baby just had his bath, and now I’m going to take mine!! With bubbles. And a magazine.

    You definitely have those days as a mama. I try very hard to exercise each morning but with 4 kids (plus a few more I babysit) I have to be flexible. We’ve had a lot of sickness lately and so yeah, exercise falls to the wayside at times. I try to be creative and fit it in two smaller segments instead of one when these days happen.

    I love the picture of Mazen with his llama from your mom. I think he resembles her in that picture too!

    If you think that llama is going to be his “lovie”, trust me when I say go out NOW and get a few more! I learned this lesson the hard way when my first son attached himself to his “Lambie” and we waited a year or so to try to find more!

    I am so glad it is pizza friday at our house…the picture of your pizza and salad has me drooling for pizza! 🙂 Friday night pizza nights were always our romantic evenings when the kids were younger…we continue them still today! A glass of red wine is the perfect accompaniment! 🙂

    Kath, I wanted to share with you my new favorite breakfast – a combo of two of your creations! A few months ago you posted a recipe for roasted apples and squash – and I’m now addicted to roasting apples! (Er, squash maybe not so much . . .) 🙂
    I combined your Overnight Oats and roasted apples recipes into one delicious breakfast! I use about 3/4-1 cup of roasted apples, 1/8 cup dried cranberries, oats, chia, greek yogurt, and vanilla soymilk (I use the 1/3 cup measurements usually but add extra liquid to this one because the apples and cranberries seem to soak up a lot of moisture). Then add pecans before devouring. It’s so yummy! Thanks for the inspiration!

    Love that pic of Maze and Llamey! Tip for you- if he continues to favor the llama, buy five. My MIL bought my daughter a sweet little giraffe at the zoo when she was about Mazen’s age… and my daughter loved loved loved that stuffie. (Named Lovey, appropriately). One horrid day, two years later, we lost Lovey. I searched high and low for another, and couldn’t find one. We had moved, so couldn’t even go to that zoo. I happened to travel back for a wedding and made a side trip to that zoo on the off chance they still carried Lovey, and they had stopped selling them. I asked if they could perhaps look up the brand (I was desperate) and he went to look at a book in back and found TWO sitting in the back room, randomly. I bought them and my daughter was SO excited.

        We had the same issue with my second son’s stuffed gecko given to him by his Honey (Grandma). Oh the stressssss at naptime/bedtime when we couldn’t find it! Definitely get “stand-ins” for emergencies.

    I did my first random 26 acts of good deeds today by paying for the person behind me at the Dunkin Donuts drive thru. I think even the cashier appreciated what I was doing. Made my coffee taste even better this morning 🙂

    That picture with the llama is so sweet! I love seeing all the pictures of your beautiful son. I have a 2-year-old daughter, and the baby time (as I’m sure you’re experiencing) goes by so fast! You’ll be potty training before you know it! 🙂

    Yesterday, I got spit-up on at 9am. Right after I took my shower and got dressed. I figured it wasn’t the end of the messes for the day, so I did a “wet wipe” bath on myself. Sure enough…by 3pm, I was on outfit #2. 🙂

    The picture of Mazen sleeping with the llama is the cutest ever, your baby boy is precious!
    I am happy to see you enjoying him so much! I was also blessed to be able to stay home with my son and I love every second of motherhood. I love all the phases, the easy ones, the hard ones, I learn something every single day with my kid. Being a mom is the best thing in the world! My boy is 10 now and even though it is a very fun age that I am enjoying a lot sometimes I miss the younger days when he wouldn’t be so easily embarassed by giving me hugs and kisses… sigh!

    Tonight is the night I make overnight oats! I also really would like to make these oats with pumpkin, but im living abroad right now, and there is no canned pumpkin here. How should I prepare a pumpkin so that I can make oats with it, and also potentially something like pumpkin bread pudding?? Please let me know!!

      I’d say to roast or steam it and then you can puree to get the same effect as canned
