Nearly two years ago I was asked to participate in Good Bite’s Weeknight Meals: Delicious Made Easy. I developed and tweaked 10 recipes to be included in a collaboration along with a host of other fabulous food bloggers. After my recipes were submitted…I forgot about the book for a while. Until it arrived on my doorstep… nearly two years later!
See the Kath Eats!?
The book just came out and it’s absolutely beautiful thanks to photography by Matt Bites. All of the dishes are easy to make and there is a wide variety of flavor included [it seems Mexican-inspired meals are my favorite
]. I am so honored to be among such amazing talented and famous bloggers.
My bio on page 189!
Today I made a video of my No Cook Mexican Scoop for the Good Bite launch. Video to debut next week!
Love this super simple recipe! I love 20 minute meals – but this one is a 5 minute one!
My studio assistant Faith came to help me record and demolish!
Chomp!
Communal chip bowl
Delicious scoop!
We have a GORGEOUS day outside and I’m headed to the bakery on foot for a meeting with the CEO of Great Harvest Cville!

Congrats on the publishing! This looks like a cookbook that would be fun to read and easy to use. Are there a number of vegetarian recipes, or is it mostly meat-based?

Congrats on being published, Kath. That’s awesome!!! I ‘know’ many other people who are also in that book, either in real life of through their blogs, and what an amazing group.
Also Matt Armendariz, aka Matt Bites, is probably the nicest, most amazing soul out there. I did a workshop with him here in SoCal about 6 mos ago (and his partner Adam who does food styling) and they are such an amazing duo. The workshop was life changing for me. And I’m sure he did your food proud!
Congrats!

Wow, that’s awesome Kath! Congratulations!!
Hi Kath!
I’ve been a reader of your blog for over a year now, and I always look forward to your thrice-daily posts with delicious recipes and beautiful photos
If you don’t mind sharing, I have been wondering for a while – how long does it take you to write each post? It seems quite time consuming, with all the photo editing, writing content, putting the post together, etc.
So I’m always impressed when I think that you’ve done this 3 times a day, every day for the past 4 years. Keep it up!!
It DOES take a while
If you exclude all the food styling and photography, I’d say each post takes me about 20-30 minutes depending on content. A big wedding or fancy event takes longer. Breakfast posts are easiest because of the natural light!
That’s so wonderful!! Congratulations!
Congrats! How exciting!
oooooOo this is so awesome!
I feel like I’m vicariously living it hehe. Are there lots of baked goods in the book?
Not really because it’s weeknight dinners!
Very cool. Congrats.
That looks SO delicious, and congratulations on getting published in the cookbook.
congrats! that looks delicious!
Congrats! What a week for you between the Foodbuzz nomination and the book! That’s awesome
I’m so excited with all of your good news Kath! Congratulations on the book entries. Can’t wait to see the video.
congrats Kath! That’s really exciting
Is the book of only blogger’s recipes?
Oh and congrats!
“…10 recipes to be included in a collaboration along with a host of other fabulous food bloggers.”
I’d assume so…
? Sorry, it was only a simple question. And “along with other bloggers” still doesn’t imply it’s “only”. But now I remember why I’ve stopped commenting.
That is a pretty snarky reply to a valid question. The way the post is written it does sound like a blogger only cookbook. Sheesh.
Are you talking about my reply? It really wasn’t meant to be snarky! Gosh…can anyone just say or ask something without being jumped on anymore!? I didn’t know I was going to offend someone.
No, I was trying to reply to laura’s rude comment to you. Sorry, I must of pushed the wrong reply button. I thought your question was valid as a matter of fact, and posed politely.
Oh gosh, I am so sorry!! I did not mean for my reply to come off snarky. I just wanted to help her out with an answer. Guess I won’t be commenting..
Oh, and sorry B n B!!
Wow congrats Kath! You must be so excited! Just wondering – what other bloggers contributed to the book?
Here’s the list:
Andrea’s Recipes – Andrea Meyers
Weelicious – Catherine McCord
Southern Plate – Christy Jordan
White on Rice Couple – Diane Cu and Todd Porter
Simply Recipes – Elise Bauer
Steamy Kitchen – Jaden Hair
Picky Palate – Jenny Flake

I have to agree!
Yep!

I am sure you mention this in a previous post, but where did you get your table that is outside? I love it!
We got it from Pier 1 in 2005
