Nearly two years ago I was asked to participate in Good Bite’s Weeknight Meals: Delicious Made Easy. I developed and tweaked 10 recipes to be included in a collaboration along with a host of other fabulous food bloggers. After my recipes were submitted…I forgot about the book for a while. Until it arrived on my doorstep… nearly two years later!

The book just came out and it’s absolutely beautiful thanks to photography by Matt Bites. All of the dishes are easy to make and there is a wide variety of flavor included [it seems Mexican-inspired meals are my favorite 🙂 ]. I am so honored to be among such amazing talented and famous bloggers.

    Congrats on the publishing! This looks like a cookbook that would be fun to read and easy to use. Are there a number of vegetarian recipes, or is it mostly meat-based?

    Congrats on being published, Kath. That’s awesome!!! I ‘know’ many other people who are also in that book, either in real life of through their blogs, and what an amazing group.

    Also Matt Armendariz, aka Matt Bites, is probably the nicest, most amazing soul out there. I did a workshop with him here in SoCal about 6 mos ago (and his partner Adam who does food styling) and they are such an amazing duo. The workshop was life changing for me. And I’m sure he did your food proud!

    Wow, how wonderful to be published! So happy for you! The food looks delicious. I am a Mexican food addict, too, and most dinners of the week are something to do with tortillas, beans, grilled veggies, and salsa. Simple, healthy, and oh-so-tasty!

    Hi Kath!
    I’ve been a reader of your blog for over a year now, and I always look forward to your thrice-daily posts with delicious recipes and beautiful photos 🙂

    If you don’t mind sharing, I have been wondering for a while – how long does it take you to write each post? It seems quite time consuming, with all the photo editing, writing content, putting the post together, etc.

    So I’m always impressed when I think that you’ve done this 3 times a day, every day for the past 4 years. Keep it up!!

      It DOES take a while 🙂 If you exclude all the food styling and photography, I’d say each post takes me about 20-30 minutes depending on content. A big wedding or fancy event takes longer. Breakfast posts are easiest because of the natural light!
