Hot Run, Cold Shower

June 10, 2009

G’afternoon guys!

I just finished up a nice late lunch. I spent the morning working and wrapped up around 12:30. I was getting a little hungry but thought I could fit in a quick 45 minute run before lunch. I must have underestimated my hunger because once I got out there I really struggled! I don’t know if it was lack of fuel, the heat, or just the day, but I felt like I was running in slow motion. I arrived home and found Matt home (he gets off earlier on weeks when he works Saturdays!) and plopped down on the floor in front of him red in the face –

Then I took a freezing cold shower and felt better.

Speaking of running, I got an email from Girls On The Run that one of the girls, Bailey, is a finalist for ESPN’s Earn Your Stripes Youth Achievement Award. Vote for Bailey and support GOTR here!! I hope I can get out there and run with the girls again in the coming semesters!

I just finished this delicious replenishing lunch –

IMG_7442 (1024x768)

A harmony bowl of chopped cucumber, peppers, steamed kale, baby pickle, ~1/3 cup pinto beans, 2 tbsp goat cheese in a lemon juice, salt, dill, mustard, olive oil dressing

IMG_7441 (1024x768)

And PB2 yogurt. ~1/2 a cup of yogurt with 2 tbsp PB2 and some peanuts for garnish

IMG_7445 (1024x768)

IMG_7446 (1024x768)

And the sweetest plum ever!

IMG_7440 (1024x768)

Whenever I use a lemon in a meal I put the shell in my water :)

IMG_7443 (1024x768)

This was one of those perfect lunches in taste + texture + satiety

IMG_7439 (1024x768)

Especially when you include a little piece of chocolate for dessert!

  • A little time with Matt
  • Read all of your wonderful me&goji entries!
  • Trip to Best Buy to see if I can get 1) A $99 refund or 2) the new iPhone. Turns out I bought mine ON May 19th so I don’t know if that fits in the 30 days of June 19th!

Oh my goodness, you ARE red in those pics. Hahaha! But an icy shower after a crazy hot workout is one of the best feeling in the WORLDDD. 😉

3 Jenn Eats Nutritiously Now June 10, 2009 at 2:26 pm

Lunch looks yummy!

4 Katherine June 10, 2009 at 2:26 pm

Your lunch looks delicious – great taste/texture variety and super nutritions to boot!

Love the pictures of you post-run :) How do you do the photos side-by-side??

5 Run Sarah June 10, 2009 at 2:26 pm

The PB2 yogurt looks awesome! I love collapsing home after a good workout :)

6 Amanda's Eats June 10, 2009 at 2:33 pm

I hear they aren’t giving current iphone users any breaks on the new one. I’ve had mine for a year and if I want to upgrade early I have to pay the 399 for the phone…which I am so not doing. Suckage! But I am excited about picture text messages 😛

7 Kath June 10, 2009 at 2:36 pm

Best Buy has a 30 day return policy, so that’s how i would get around it.

8 Lisa June 10, 2009 at 2:36 pm

I think you’ll like the me&gogji stories. I was reading through them earlier and they’re great!

I’m always the one at a restaurant who orders “water with lemon, please.” And a meal’s just not complete without something a little sweet at the end!

9 Foodie (Fab and Delicious Food) June 10, 2009 at 2:37 pm

Nice lunch!

10 Melissa @ For the Love of Health June 10, 2009 at 2:38 pm

Have fun at your Girls Night!!

12 Nicole (dishin') June 10, 2009 at 2:41 pm

13 Courtney (The Hungry Yogini) June 10, 2009 at 2:44 pm

15 Hallie June 10, 2009 at 2:49 pm

That face in the first picture is what I look like after finishing my run, I think.

Good luck at Best Buy :-)

16 Megan (The Runner's Kitchen) June 10, 2009 at 2:51 pm

i actually kind of like hot, sweaty runs – especially after a long winter!

lemon water, veggies, and yogurt seem like the perfect way to refuel and rehydrate :-)

17 sue June 10, 2009 at 2:51 pm

haha the pics are too funny!
lunch looks delicious. good luck at best buy!

18 Recipes for Creativity June 10, 2009 at 3:00 pm

Oooh, you just reminded me I bought some locally made goat cheese at the Farmer’s Market that is begging to be added to a salad, mmmmm….

19 Anne K. June 10, 2009 at 3:05 pm

Haha I love the pic sequence. What a delicious lunch! Good luck at Best Buy!

20 Traci June 10, 2009 at 3:08 pm

Yum! That looks like a great lunch! Wish it was warmer here in Boston like it is there!

21 Linda June 10, 2009 at 3:11 pm

Salad looks delish. I like how you steamed the kale so that it’s not entirely a “cold” salad.

22 Shannon (The Daily Balance) June 10, 2009 at 3:15 pm

lunch looks fab – have a fun girls night!

23 Serena June 10, 2009 at 3:19 pm

Best Buy has a 30 day return policy on the phone but it’s about your AT&T contract too, which you may not be able to cancel. My friend ran into the same issue – no luck because you can’t cancel your contract without paying the fee. Let us know if you have better luck so I can tell her!

24 april June 10, 2009 at 3:21 pm

haha those pictures are too funny! Your lunch looks very satisfying!

25 Heather @ Health, Happiness, and Hope June 10, 2009 at 3:56 pm

What a great salad to replenish your strength after that run! Good job on sticking out that run to the finish… sometimes you just have to push yourself to keep going! Keep that water coming! :)

PB2 in yogurt is my FAVORITE! That’s basically the only way I eat it haha!

Good luck with the iphone dealio… I’d totally protest if they didn’t give you an upgrade! 😉

26 Heather @ Health, Happiness, and Hope June 10, 2009 at 3:59 pm

Also, do you know what size the screen is on your laptop? I’m taking your advice and getting an HP notebook, but I’m not sure if I should get a 13 inch or 14 inch screen? Thanks Kath!

27 Sarah (LovIN My Tummy) June 10, 2009 at 4:02 pm

Raise hell with those iPhone people. They should GIVE you a new phone with all the free advertising they are getting from you!

28 Mara @ What's for Dinner? June 10, 2009 at 4:14 pm

YOu have plums already?! AAH! We don’t get them til at least the end of June!

29 Adventures of Alice June 10, 2009 at 4:14 pm

Kooops! —-I’ll always think of you as Koops (yay Davidson!)
anyway, I helped coach a GOTR group at the Lake Norman YMCA my sophomore year. Are you helping out with a group or just running with them in their big run? I think it’s a really cool organization/idea and really enjoyed working with the kids.

30 Sues June 10, 2009 at 4:49 pm

Yum Peanut butter in yogurt is SUCH a good idea. (Actually, peanut butter in anything is a good idea). And your salad looks so delicious and healthy!

31 Angie June 10, 2009 at 4:49 pm

Yum! Lunch looks delicious!! And love the PB2 in yogurt. I really like the idea of adding peanuts for some texture/crunch!

32 K June 10, 2009 at 4:51 pm

I looooooooove PB2 yogurt!! Congrats to the GOTR girl! I’ll be voting for her :)

33 Emily L. June 10, 2009 at 5:32 pm

It’s all about about goat cheese.

34 Tammy June 10, 2009 at 6:01 pm

Kath, would you be willing to do a post on kale sometime? I want to try it and am curious about how to prepare it and cook with it. I’ve never had it before!

35 Faith June 10, 2009 at 6:11 pm

I haven’t tried PB2, but it looks so good!

36 [email protected] June 10, 2009 at 6:13 pm

I love a beautiful lunch after a workout! It feels so good.

37 Sarah (Running to Slow Things Down) June 10, 2009 at 6:36 pm

That was me after my run today…*tough*! And very sweaty. But it just feels so good afterwards. 😀

Love your lunch! Especially that plum! Mmm…I’ve yet to get any this summer, but I’m excited to pick up some along with peaches and nectarines. Yum, yum…

38 KatieTX June 10, 2009 at 7:14 pm

I was wondering if you were gonna do something about your iphone! I hope they let you do one of those 2 options! My bf is going nuts over getting the new one. I haven’t seen him this excited in a long time! Hope it all works out! It is already topping 95 in Texas. I can no longer run outdoors!

39 Kath June 10, 2009 at 7:32 pm

Katherine ,
Just shrink the photos and put them together.

Go with the smaller so the computer will be easier to transport.

Adventures of Alice,
Aliiiice! Hey! I coached last fall and had to take the spring off due to my class schedule. They canceled their summer sessions, but I’m hoping to do it again in the fall.

Tammy ,
Yes, I suppose I could. Check out the kale chip recipe on the sidebar for that one though – it’s a good one!

40 Tammy June 10, 2009 at 9:07 pm

Thanks Kath — I will check it out! Don’t worry if you don’t get to another post — I love your regularly scheduled programming! :)

41 Chloe June 10, 2009 at 9:52 pm

Hey Kath, are you going to be taking nutrition questions and concerns over email now that you’ve started the new job? I’d love to ask you some questions about my lifestyle and was wondering if you’re still open to that!

42 Joelle (Chasing Pavements) June 11, 2009 at 1:10 am

That PB2 seems pretty awesome!

43 Kath June 11, 2009 at 7:52 am

Chloe ,
Yes. I am putting together some packages with Mary to offer as online consultations. I hope to make some of them affordable personalized Q&A style, so perhaps you could consider that?

44 Sarah June 11, 2009 at 2:42 pm

Hope you are able to work it out with the iPhone! Yummy chocolate :)
