Hi guys!!
Another day is rollin’ on by. I’ve been working on some stuff for the fruit + veggie coalition (including designing yet another webpage layout
) and am just now enjoying this awesome lunch at my desk! I photographed it last night so it’s all dark. Gotta remember to pack my lunch while the sun is out!
There’s no shortage of colors in this lunch!!!! Sooo many nutrients!!
After eating that sharp cheddar + jam sandwich last week I couldn’t wait to pack one again
Organic Valley Sharp White Cheddar that I was sent to sample along with Crofter’s SuperFruit spread and spinach. Heavy. Dense. Delicious!
A little salad with spinach, carrots and bell peppers drizzled in EVOO and honey. The spinach wilted slightly overnight, but that just made this more of a mixed veggie salad and less of a leafy salad. It was great!
And another awesome tangelo!!!
Totally fresh and delish!
Have a terrific afternoon!

I must find that jam! Looks delish.
I remember that sandwich from last week! I need to try that! I love the combo of sharp cheese with sweet jam!
Have a great afternoon
You have me addicted to the cheddar and jam combo now!
I want a tangelo sooo badly. I am hoping I can find one tonight!
I love any type of cheese with jam – brie or st andre is especially good – yum!
Looks delicious! I plan on purchasing oats this weekend for next week’s meals. I need to get gluten free…any suggestions? I was planning on the Red Mill’s brand…
Definitely a delicious combination Kath! Hope your day is going well!
What a colorful lunch! Hope the rest of your day goes well
so many colors! do u buy organic veggies? or do u pick and choose which to do organic, which not?
I pick and choose. Recently started buying all organic apples and spinach. Sometimes peppers, sometimes other things. It depends on the sales. I find myself more and more drawn to organic foods for no reason other than to support the industry.
Yum your luch looks great!
Happy Thursday…..
What a vibrant lunch! Looks great kath!
Yum, I love spinach on sandwiches, just the perfect flavor. And cheddar plus jam I’ve never tried but I bet I would love that cheesy + sweet combo. =)
I have never had cheddar (or any cheese!) with JAM, but it sounds like a fantastic combination!
I cannot wait to try it!
your lunch looks amazing!! Hope it keeps you going through the afternoon!
Oh my gosh, cheese and jam?! That’s brilliant!! Pear jam and cheese would be amazingly yummy! I’m definitely adding that to my list.
Oh I used to eat cheese and jam sandwiches as a kid! I will have to remember to add spinach! mmmmm
Do you pre-wash your spinach?
Nope. If it says pre-washed I trust the package. I’m willing to take my chances. Washing greens is a huge pain in the a$$
that sandwich looks sooo good! cheese and jam go so well together – especially sharp cheddar! i also love jam with brie or goat cheese!
I love crofter’s and that cheddar! I’ll have to try that sandwich sometime!
I’m a little nervous to try one of those sandwiches, but you make it sound so good!
*delicately mopping up drool* Oh, excuse me. I’m going to make myself a jam and cheddar sandwich now.
I love that jam so I’m sure that sandwich is amazing!
I bought some tangelos and they are amazing!!
Mmm it all looks amazing!! so many colors.
I LOVE raw sharp white Cheddar. And Crofter’s! Therefore, I have to try that sandwich.. it sounds incredible!! I love the combinations you make.. so creative!
Loving that sandwich – my favourite is goat’s cheese with jam, that is SO sweet and rich tasting – delicious!
You got my mind whirling for dinner–cheese ‘n’ pumpkin butter?? Perhaps!
You would have got along so well with my old cafe bnoss – she was always pestering customers to try her favourite snack, which was a grilled cheese sandwich with apricot jam! She used to offer it free of charge, she was so keen
I’m definitely going to buy spinach, jam & cheddar at the store tomorrow so I can make that simple, but scrumptious sammie!
I love lunches that are packed full of whole, healthy foods. That salad and sammie look delicious! Mmm, cheddar and jam
That sandwich looks great! Good idea taking photos the night before, too…very efficient!
I love colorful lunches like that
Sharp Cheese and jam as a sandwich? Genius!
There is an awesome book for kids called give me five a day! Def should look into it!
Kath – I’m a long time reader, first time to comment – THANK YOU for all your great information and ideas! You’ve really encouraged me to make healthier (and still yummy) food choices, as well as keeping me motivated to make use of my indoor playground
So – what kind of jams to do you recommend? I love me some Smuckers…but I’m guessing it’s not the most healthy option out there?!
I have so many artisan jams that were given to me as samples or holiday gifts that I haven’t bought jam in ages!! I love Trader Joe’s all fruit jams. Anything that has a simple ingredient list (fruit, sugar) works for me.
I love color! There’s something so fantastic about opening the fridge and seeing nothing but color and pulling out all sorts of options for your meal.
My work is currently in the midst of a “wellness competition” every three weeks we have a mini challenge–this week started 3 weeks of the “5-a-day Challenge.” I already eat 5 a day, so I’m aiming for 8 a day….it was amazing to me to hear some of co-workers say that couldn’t remember the last time they ate a veggie…other than iceberg with ranch!
oooh that jelly sounds good in your sammich
yay for 5 a day!
Great looking sammie – the sharp cheddar is a perfect addition
Mmm, citrus. I had a Cara orange for lunch (new to me, and so delish) and it was delightfully refreshing!
SO colorful! i just had my first tangelo after seeing yours the other day…that thing was the juiciest piece of citrus i’ve ever had! AH-mazing
I’ve gotta try the jam & chedda sandwich sometime soon…such a great combo!
I definitely have to try out that sandwich! It sounds like such a great combo – and I have lots of superfruit spreads to use up. http://healthylaps.com/2010/02/10/crofters-superfruit-jam/
ps – i am dying to see Fresh! I wish there was a screening around Boston!
I’ve been eating Organic Valley sharp white cheddar too! Great minds think alike
Love that first photograph!
Thanks for the great sandwich idea? I would have never thought of cheese and jam in a sandwich.
I have had brie with jam and crackers, of course this would be a delicious sandwich. Thanks again!
I love tangelos! I tried a new multigrain bread from our local Essential Baking Co. and it was fab, but my bf let it sit out on the counter for too long and it got moldy, It was heart-breaking!!!
just started blogging and yours has inspired me
Thanks
Ellie
Congrats!
i love sharp cheddar – the sharper the better!!!
Jam and cheddar? My mind…blown. Must try!
It looks like a colorful and delicious lunch.
This is probably a dumb question, but did you mix the EVOO and the honey for this salad, or just put them on separately? I hate most (ALL) salad dressings, and this sounds like it could be a good alternative.
Just drizzle them both on as I go!
Every time I see that jam, I just start drooling.
So not attractive!
I’m loving the sandwich, as well! When I saw your first post about it, I thought – I like all of those things separately, why not?! GREAT THINKING:) Thanks!!
Hi Kath,
I’ve been a reader for awhile but haven’t stopped by to say hi yet! Hello! Cheddar cheese and jam are my two favorite foods, and I never thought to put them together. I think I’ll have to try that! It looks deeelish!
Hi!
I love sharp cheddar and fruit. I have some of that Crofters Jam I won in a contest so I might be trying this tomorrow for lunch.
Root vegetable are Nature’s own supply of vigor. Have you ever held a Daicon radish? Or a Burdock root? Their phallic similarity tells us a lot about their benefits.
That does look very colorful and healthy.
I love cheese and jam, yum.
Jenn
Hey Kat! I wanted to share my favorite oatmeal recipe w/ you. It’s really chocolate peanut butter bliss!
1/2 cup oats
1 cup light chocolate soymillk
1 heaping tbsp of unsweetened cocoa powder
few dashes of cinnamon.
microwave for 2 minutes or so. Top with a tbsp of peanut butter.
Yum! What a great spin on the traditional (albeit boring) cheese sandwich. This one looks like a recipe to try!
