5 A Day

Hi guys!!

Another day is rollin’ on by. I’ve been working on some stuff for the fruit + veggie coalition (including designing yet another webpage layout 🙂 ) and am just now enjoying this awesome lunch at my desk! I photographed it last night so it’s all dark. Gotta remember to pack my lunch while the sun is out!

There’s no shortage of colors in this lunch!!!! Sooo many nutrients!!

After eating that sharp cheddar + jam sandwich last week I couldn’t wait to pack one again 🙂

Organic Valley Sharp White Cheddar that I was sent to sample along with Crofter’s SuperFruit spread and spinach. Heavy. Dense. Delicious!

A little salad with spinach, carrots and bell peppers drizzled in EVOO and honey. The spinach wilted slightly overnight, but that just made this more of a mixed veggie salad and less of a leafy salad. It was great!

    Looks delicious! I plan on purchasing oats this weekend for next week’s meals. I need to get gluten free…any suggestions? I was planning on the Red Mill’s brand…

    so many colors! do u buy organic veggies? or do u pick and choose which to do organic, which not?

      I pick and choose. Recently started buying all organic apples and spinach. Sometimes peppers, sometimes other things. It depends on the sales. I find myself more and more drawn to organic foods for no reason other than to support the industry.

    Yum, I love spinach on sandwiches, just the perfect flavor. And cheddar plus jam I’ve never tried but I bet I would love that cheesy + sweet combo. =)

    Oh I used to eat cheese and jam sandwiches as a kid! I will have to remember to add spinach! mmmmm

      Nope. If it says pre-washed I trust the package. I’m willing to take my chances. Washing greens is a huge pain in the a$$

    I LOVE raw sharp white Cheddar. And Crofter’s! Therefore, I have to try that sandwich.. it sounds incredible!! I love the combinations you make.. so creative!

    You would have got along so well with my old cafe bnoss – she was always pestering customers to try her favourite snack, which was a grilled cheese sandwich with apricot jam! She used to offer it free of charge, she was so keen 😛

    Kath – I’m a long time reader, first time to comment – THANK YOU for all your great information and ideas! You’ve really encouraged me to make healthier (and still yummy) food choices, as well as keeping me motivated to make use of my indoor playground 🙂 So – what kind of jams to do you recommend? I love me some Smuckers…but I’m guessing it’s not the most healthy option out there?!

      I have so many artisan jams that were given to me as samples or holiday gifts that I haven’t bought jam in ages!! I love Trader Joe’s all fruit jams. Anything that has a simple ingredient list (fruit, sugar) works for me.

    My work is currently in the midst of a “wellness competition” every three weeks we have a mini challenge–this week started 3 weeks of the “5-a-day Challenge.” I already eat 5 a day, so I’m aiming for 8 a day….it was amazing to me to hear some of co-workers say that couldn’t remember the last time they ate a veggie…other than iceberg with ranch!

    SO colorful! i just had my first tangelo after seeing yours the other day…that thing was the juiciest piece of citrus i’ve ever had! AH-mazing 🙂 I’ve gotta try the jam & chedda sandwich sometime soon…such a great combo!

    I love tangelos! I tried a new multigrain bread from our local Essential Baking Co. and it was fab, but my bf let it sit out on the counter for too long and it got moldy, It was heart-breaking!!!

    This is probably a dumb question, but did you mix the EVOO and the honey for this salad, or just put them on separately? I hate most (ALL) salad dressings, and this sounds like it could be a good alternative.

    Root vegetable are Nature’s own supply of vigor. Have you ever held a Daicon radish? Or a Burdock root? Their phallic similarity tells us a lot about their benefits.

    Hey Kat! I wanted to share my favorite oatmeal recipe w/ you. It’s really chocolate peanut butter bliss!
    1/2 cup oats
    1 cup light chocolate soymillk
    1 heaping tbsp of unsweetened cocoa powder
    few dashes of cinnamon.
    microwave for 2 minutes or so. Top with a tbsp of peanut butter.
