Salad Girth

This salad has some girth to it!! I packed a TON in!!!

  • A huge head of romaine, stuffed in
  • Some spinach
  • Sugar snap peas (my latest obsession)
  • MUNG beans from Emily!
  • Mushroom + tomatoes from last night’s dinner
  • A 2-tbsp blob of TJ’s Cilantro Jalapeno hummus
  • ~a 1 inch cube of bleu cheese crumbled

Who needs salad dressing when you have such great real food to dress the salad!?

    boulder canyon chips are SO GOOD…i love the cracked black pepper ones the best 🙂 and i think that bleu cheese is so awesome…it’s got so much flavor you don’t even need dressing, especially with all of those awesome veggies 🙂

    BEAUTIFUL salad! Is that the Emily who is doing all her own sprouting? I really want to start doing that..I love sprouted stuff, it’s just too exspensive to buy!

    Wow that salad looks incredible!! I love doing lots of stuff on top of my salads so I don’t need dressing… and watermelon is one of my favorites!

    I swear, your lunch post names have had me giggling with “that’s what she said” recently! I do love “dressing” salads with other stuff, but making my own salad dressing with real food is even better!

    That looks delish! Sadly, I haven’t had a desire for a fresh raw crisp salad at all lately–it must be the cold rainy weather. Days of it! 🙁
    Gimme a ginormous plate of roasted/grilled veggies and I’ll be all over it!

    Ummm, need I say, OMG! That salad is the colorful picture of perfection! I need to have a dark green salad filled with stuff like that.

    I use hummus all the time as dressing and it’s absolutely the best.

    I share the same salad philosophy–make ’em BIG and top ’em with flavorful ingredients so that dressing is unnecessary:)

    mmmm yummy! you know i’ve never tried hummus on salad before? i think the mixture of those two textures just throws my little brain off, but i do have some killer black bean hummus i might have to try this with sometime soon

    I think Blue Cheese is my current obsession – but I’ve put myself on a no-new-food-buying ban until I’ve eaten up pantry/fridge stores…. yet all I can think about is creamy tangy cheese. You’re not helping! 😛
