Stoplight Dinner

Busy as a bee, per usual!!

Post-work, pre-yoga snack – munching while on a quick business call!

Emily and I met for a 45 minute walk. Our Thursday walks are SO CALMING! We just chit-chat and all seems quiet on the western front. Like when I biked the other day, life just seems to slow down as we talk about fun things and our summers.

After walking, we went inside for yoga! Class was awesome!! Here’s a sweaty Emily, me and our new friend and instructor, Sarah after class!

I came home a starvin’ marvin’ and made a simple breakfasty dinner.

A sunny side up egg on a Kodiak Cake! Topped with a little Organic Valley Sharp Cheddar –

I made the Kodiak cake a bit too runny so it was almost crepe-like!

Served with some simple raw veggies (I have a hard time feeling satisfied at lunch and dinner if veggies aren’t involved! Probably psychological – but could be physical!?)

This was a great dinner! Matt was out tonight so I ate solo – with a little Glee! I’ll have to finish it in the AM, but I got to Puck’s solo and he was HOT!

Going to take an Epsom Salt bath as my post-yoga cleanse and crawl into bed to try to get in just a few pages of my book read…

    LOVE Epsom Salt bathes! They make you feel so good! I took one two days ago and it really rejuvenates you! Enjoy your bath and your peaceful evening. Oh, I second that a meal is just not complete with a vegetable (or a fruit)!

    I love how you make all of your meals so colorful! ever since I’ve started reading KERF, I’ve learned the importance of incorporating veggies into most of my daily meals 🙂

    I completely SWOONED over Puck’s performance on Glee this week. it totally made me see him (his character) in a different light.

    I love that you used the term “starvin’ marvin”! It’s something my parents always used to say. I just looked it up — and lots of “South Park” stuff came up. Something tells me my parents didn’t get it from there. 🙂

    Sometimes, you just gotta have some raw veggies in your life. It’s fun tasting the actual natural sweetness of vegetables on their own without being all gussied up with oils and vinegars and such.

    Hi Kath, I’m a big fan of your blog! I don’t know if you’ll be able to reply to this, but I just wanted to comment somewhere, because I thought maybe you could help me. I’m a 14 year old girl and I have struggled with my weight the past couple years. I feel horrible saying that because I’m so young! And I wouldn’t say its my eating habits, because i don’t like most processed foods, and my family loves healthy food. I think the reason is we are on a budget now, and many healthy foods are too expensive for us. We still try and eat fruits and veggies, and avoid HFCS but I know our budget affected my waistline. I still exercise, but I WISH i could eat the way you do! Do you have any suggestions?

      I’m not Kath, but I saw your post and wanted to offer a few words. I’m sorry to hear that your family is going through a challenging time. 🙁 Eating healthfully on a budget can be tricky, but can be made easier with a few tips. Sites like Coupons.com, SmartSource.com, and RedPlum.com offer free online printable grocery coupons that are changed regularly; MamboSprouts.com also offers natural/organic online printable coupons. Also, I’ve found that food companies usually either have links to coupons on their web site or will gladly send some your way upon request. Keep an eye out for store fliers/sales and try to combine these with coupons. Fresh produce is usually not too expensive, and buying from “bulk” bins (i.e. ‘scoop-your-own’-style oatmeal, rice, nuts, beans) can also save money. Baking/making your own bread, muffins, veggie burgers, etc. can be very cheap and long-lasting — just remember to freeze all this + any meal leftovers so they can be eaten later! It seems like your family’s eating habits are on the right track; try sharing these ideas with them and see if they help. (I’m not sure if you’re on Twitter, but I often post about healthy coupons @MasPublicHealth.) Good luck, Talia!

      Excellent suggestions already by MPH!

      I was going to suggest bulk bins, beans, and frozen veggies. One of the most nutritious and cheapest foods in the world are dried beans. Eating healthy on a budget requires one important thing: prep time.

      Do you have a farmer’s market nearby? Often the product there can be cheaper than that in the grocery stores. And I’d stick to choosing the in season and on sale fruits and veggies – check your grocery store website, which often tells you what’s on sale that week – and plan meals around them.
