Figures…

No stove today 🙁  There was an error in the delivery pick-up. The 2 people I spoke to were extremely nice, but I am still very annoyed (but I was nice on the phone!) It’s supposed to come tomorrow. It BETTER because we’re cooking for the husband’s grandmother here on Saturday night and we need a stove!!

After a few hours of chemistry I set out on a run. I am SO THANKFUL for 1) Being able to run again and 2) Being able to run during a weekday. When I worked full time, all I wanted was some freedom to do things during the day and I soaked in the happiness on my run (of course normally I’d be in class right now…). The run was awesome – I did about 5.5-6 miles. My music was awesome too – from Battle Hymn of the Republic to Sandstorm to Tracy Lawrence’s Stars Over Texas to the musical Starlight Express.

I finally made lunch around 1:00. A huge salad!

  • Carrot + red pepper
  • Pom
  • Capers
  • Blue cheese stuffed olives (4)
  • Cottage cheese

Plus a thick slice of fresh GH bread with homemade pumpkin butter –

So filling, so delicious!

Did you know there’s a song called Cath!? The husband is bottling beer with a friend who told me about it. Too bad she spells her name differently. And too bad the song is about marrying the wrong guy!

I’m off to the public library to study!

    The salad sounds really good.

Too bad about the stove 🙁

That is the thing that I really hate about having a full time job. I can’t break up the work day and do other things, like exercise – I have to get in my 8 hours every day, all in a row. It is so frustrating!

Hope you have a nice afternoon 🙂

what do those pom seeds taste like? They look like little fruit gummies to me! I’m interested to try them, but wanted to ask first.

What a disappointment about the stove delivery! I was gettin’ excited to see it! I can’t hardly imagine how excited you must have been!

I am fortunate enough to have my gym within walking distance of my office – it’s quite literally around the corner. I use my lunch break to go to the gym, and I can eat my lunch at my desk! I can’t work out for more than 45 minutes though. I have to factor in changing time and walking to-and-from time. Only problem is that I don’t have time to shower, you’d hate that, Kath. But I’m not too bothered by it. So even though I work full time, I can run during the day! Yay for treadmills!

I’d love to have free time during the day, but I work full time right now so I try and get up early and do “house things” and exercise so that my morning is more than just work. Also, we’re moving offices and our new office has a shower! I might run during my lunch break. 🙂

    Hi Kath,
Just wondering, but is your metabolism considered to be a slow one? My sister is trying to eat “healthy” now and reads your blog but i don’t think she realizes that you have to eat based on your metabolism.
i think you have a great blog though!

Thanks for another great salad idea. I always put way to much cottage cheese. Probably because I’m trying to gain some muscle.

I can’t wait until my knee is strong enough to run again. I love watching the sun come up, or even just a nice 10am jog is also very refreshing. It’s been a long time since I’ve had a good run…baby steps, but soon I’ll get there.

Battle Hymn of the Republic is one of my favorite songs and always gives me goose bumps. I’ll have to keep Tracy Lawrence’s Stars Over Texas in mind the next time I’m music shopping, or add it to my wish list.

    Jennifer ,
Don’t knock it until you try it.

    Abby ,
The juice flavor is kind of like raspberry meets cranberry but the seed as a whole is kind of grassy and the seed part is chewy. But they are fun to eat!

    Adi ,
I usually do about a tbsp of lemon juice or vinegar, a 1/2 tsp to a tsp of oil, a tsp of mustard and sprinkles of salt and pepper.

    Alex ,
I’m not sure what my metabolism is. Weight loss/gain is based on your calories in and out, not your metabolism, although metabolism can affect that number. Perhaps she should see an R.D. to get a good idea.

I’ve been enjoying your site so much and am looking forward to trying some of your recipes. I am a fairly new convert to oatmeal and I
    love your topping ideas.

Could you give a little information about using fresh pomegranite? I know it’s good for you, but have never used any. Ive got 2 sitting on the counter, staring me down! I imagine that you wouldn’t use a whole one for just one or two people, so what do you do with the rest? Do you liberate the seeds ahead of time or something, or just peel them out as you cook your oatmeal?

I also like that you do your oatmeal on the stove top.(Or at least you did! *grin*) I think some people have gotten so used to using the microwave for cooking, that they think using the stove or oven must be so much harder, and it’s just not true.

I also appreciate seeing what and how much you eat. As an obese person, it is good for me to see what a normal sized, healthy meal should look like. It helps me with portion control.

    Thanks!
