Cozy @ Home! (Not In Class!)

This arrived in my Inbox shortly before class:

NUTR 371 canceled today

Sweet! I’m now at home sipping a cup of hot tea in my slippers and hoping to knock this semester nutrition project off my to-do list for good.

But going back to campus… here’s what I packed for lunch.

A romaine, carrot, POM, hummus (it’s hidden in the lettuce), caper (sorry Fancy!) and blue cheese salad with some vinegar on the bottom for flava. This was the last of that giant hunk of blue cheese I got at BJ’s. It turned out to be pretty economical!

Plus my newest invention: a cottage cheese, pumpkin + honey-cinnamon sandwich on High 5 bread! It was excellent. I just spread a quarter-inch thick layer of the goods on there and drizzled with honey and a sprinkle of cinnamon. It did get a TAD bit soggy on the pumpkin side, but that was OK.

OK, back to my project. It’s all downhill from here. Just Organic in the AM and the weekend begins! Too bad I have a ton of studying to do this weekend, so next weekend can be wide open – we’ve got company coming for an exciting reason – more details TBA!

    wow that sandwhich combo sounds GOOD! I bet it would be good with pumpkin butter too huh?

    good luck with the homework and projects! I have a Nutrition test tonight and project to work on this weekend too.

    Do you have to take Organic II? Or just 1 semester of it? I just signed up for Chem 1 next semester (gulp).

    that sandwich sounds good. i cant eat much pumpkin though, i think im mildly allergic. my throat gets all scratchy and its hard to swallow. i still eat pumpkin pie though!

    Classes getting canceled (before you actually get there to find a note on the door) are the best.

    Cottage cheese & pumpkin sandwich eh? Too bad I just used up the last of my cottage cheese for lunch today, otherwise I might have to try it. Looks mighty interesting, as does the salad (minus those capers!).

    I used to LOVE getting those “class is cancelled” emails!! It’s like bonus free time!
    2 things for you: 1) where oh where did you get that great lunch bag? and 2) I cut open my first pomegranate yesterday, and the seeds were brown. Blah.

    You have to try that sandwich toasted sometime!! I love taking the cottage cheese (or ricotta), sprinkle with cinnamon and place on pc of toasted bread, then on the other pumpkin butter, heat under broiler until warmed then smooshhhh together into goodness!!

    A sweet sandwich?? The sweetest I’ve ever made is pb and banana- how sweet is it with the cottage cheese in there? Hmmm. I know I’ve said this before, but I LOVE your lunch bag. I severely need one. Do you recommend it?

    Gotta agree with Fancy about not being a big caper fan, haha, sorry. I’m glad you get some unexpected time to finish up that project- thanks for the coupon!!

    I just finished lunch and I’m trying not to open/buy perishable items as I’m leaving town tomorrow (which would mean a new can of pumpkin & carton of cottage cheese)… but I’m really having a hard time not rushing to make one of those sandwiches right now!

    Pom question! Are the pom seeds supposed to be crunchy? Or soft? Mostly dark red? Or light red?

    I can’t tell if the pom seeds i’m eating are good or not….they’re kinda grassy, maybe. Advice?!

    How do you make your oatmeal? I see your bowl every morning and it definitely looks so delicious. I’m glad that you include what you put in it each time, but could you include your basic recipe? Like, do you mash the banana, or puree it, or chop it into pieces? Do you cook it with the banana and all the other stuff in it, or do you just add it as a topping? Do you mix in the peanut butter? Stuff like that 🙂
    I want to make a delicious bowl of oatmeal Kath-style, but I need some help!

    Did you read my post from yesterday? This was my sandwich:
    peanut butter, banana, whipped cottage cheese, pumpkin and pumpkin butter on whole wheat.
    Talk about great minds think alike (although I hate that expression).
