COMPLETE!

Whooo hoooo! I finished my project!! Nine pages of case study and analysis + 4 dietary reports, each 3 days long. And I’ve had a headache all afternoon. It’s in my shoulders and do you know what I think it is? Coffee withdrawal. It’s down my shoulders and neck, which is the same feeling I got last spring. But hopefully it’s not! I’m off to get a massage on the couch while we watch The Office…..

….oh, you wanted me to blog first? OK, if you insist! I’ll be quick:

I was so hard at work today that I didn’t stop for a snack. I drank 4 cups of tea (2 with soymilk, 2 without) to keep myself warm so that probably filled me up. I did have a tiny handful of these around 4:30 because my mouth was bored:

My dear husband made dinner tonight (my recipe, his labor) while I worked.

DSC05895

Sauteed kale (in raspberry vinegar + brown sugar), roasted acorn squash, and frozen Butternut Squash + Maple Syrup Ravioli. And a hunk of spelt bread. It was a GREAT dinner!

Completely with a pumpkin bark finish –

OK, now I am off to relax!!

Congratulations on finishing! You really deserve to relax now =)

Your dinner looks amazing, I need to try more of your recipes. I did make the Pumpkin Oatmeal Pancake today but with applesauce instead of egg whites. It didn’t hold together that well but I got it to stick together and it was really delicious!!!

You’ve got me smitten with that Pumpkin Bark haha

    Kath,

Quick question that I think you’ll be good at answering 🙂 What do you do if you go over to someone’s house for a meal and EVERYTHING is unhealthy? I know if I’m going to not be there long, I’ll just have a small amount, and then eat more when I get home. But for example today, I was at someone’s house for a LOOOONG time and their family ordered Pizza Hut pasta. There was really nothing else to eat, and I didn’t want to be rude, so I ate it. I was hesitant to look at the nutrition facts online when I got home…needless to say it wasn’t good. What do you recommend when this happens? And I’m not only talking about high in calories, also super artificial things, things that you know have hydrogenated oils, etc.

Congratulations!!! I know what you mean about tea filling you up. I drink it really often just because I love it but I have to be careful I don’t get too full, haha! Luckily there’s always room for good eats 😉

Speaking of good eats, yours look above and beyond.

Relax now that your project’s done, you deserve it!

I need to give kale another try. I did kale chips (and I think I left them too wet) and hated them. This recipe looks pretty tasty though.

P.S. Your sandwich today with the pumpkin sounded wonderful…definitely going to have to try that after I buy some more cottage cheese.

    BethT ,
But it’s SOO good!! Maybe I should just switch to decaf…which isn’t as good.

    Allison ,
I think you did the right thing by eating to be polite. You have to realize that one meal of ANYTHING – even a bowl of trans-fats – won’t harm you long term if you have very healthy diet 90% of the time. I’ve definitely gotten “stuch” with less-than-ideal choices and while it is kinda disappointing, you just have to eat it, enjoy it, and move on the next day. Always having an emergency bar in your purse will help with hungry – if you can eat that as a snack before then you won’t need to fill up on the food as much and can have a smaller portion.

    Lida ,
These had a better filling, those have a better “shell”. It’s a toss up!
