The Missing Hour

January 25, 2010

Rather than being in Salisbury at 7:30, I’m due there at 6:30 this morning (with an hour drive to get there) to prepare and sample oatmeal, do a nutrition education lesson and assist with an Accuclaim audit, so I set my alarm for 4:45 this morning and have 9 minutes to eat breakfast and blog simultaneously!

No time to cook!

Overnight oats with pumpkin!

IMG_4363 (640x427)

The Mix:

  • 1 container Stonyfield Pumpkin yogurt
  • ~1/4 cup pumpkin
  • 1/3 cup raw rolled oats
  • 1/3 cup 2% milk
  • Pinch salt
  • 1 tbsp chia seeds (the best!!)
  • Half banana sliced
  • Topping: NUTTZO!! Love this on overnight oats

IMG_4364 (427x640)

No time for French press so I used one of my SBUX Via packets today!!

IMG_4345 (640x427)

Not my fav in taste, texture or froth :( But it’ll do in a pinch, which today definitely is! (And will be fun to sip on my commute)

6 Kiersten January 25, 2010 at 7:00 am

Is it wrong to say that I WISH the part of Charlotte I’m in got flooded and my classes were cancelled too?

7 Karla January 25, 2010 at 7:05 am

Oh man! School cancelled! I wish that would happen here too! It’s pouring out!

10 Bec January 25, 2010 at 7:14 am

11 Jac January 25, 2010 at 7:15 am

well..think of it this way..cancelled class.. more free time=nap time! 😉

12 Kristen @ Change of Pace January 25, 2010 at 7:47 am

Well now you can take a nap or hit the gym early :)

13 Heather @ Health, Happiness, and Hope January 25, 2010 at 7:48 am

Hooray for a day off from school! Brings you back to your own school years, right? 😉 At least you can get a lot accomplished this morning!

14 Freya @ January 25, 2010 at 7:50 am

Oh my gosh that’s an early start!! It puts things into perspective, I used to moan about a 5.50 start…
but yay for school being cancelled!! An unexpected day at home always feels so special, hope you enjoy it!

15 amanda January 25, 2010 at 7:58 am

Wow, that sucks you got up so earlier but at least now you can enjoy home and catch up on things

16 Daniel January 25, 2010 at 8:01 am

Sorry to hear that it got cancelled. I’d be pretty upset if I rushed to get ready and I found out that I didn’t have to be in such a hurry. =\

Btw, I tried your overnight oats for the first time a few nights ago to see if it would be a breakfast worth having in the dorms before my work out and it turned out all right for the most part. Is there anyway to make it less soupy? I put 1/3 cup Vanilla Silk, rolled oats and yogurt together with some banana slices (I’ll remember to put those in the next day instead of over night) and then microwaved it for 30 seconds in the morning. I prefer my oats chewier like steel-cut and I was just wondering if there was a way to get more of that texture. Thanks in advance!

17 Kath January 25, 2010 at 2:01 pm

Just use less milk and more yogurt :) Chia seeds also help thicken it.

18 Anna @ Newlywed, Newly Veg January 25, 2010 at 8:03 am

4:45?!? Yowza, that’s early!!! So sorry you got up so early only to have school cancelled!!

19 Cole January 25, 2010 at 8:03 am

Yikes. At least you got an early start to your day?

20 Jess. January 25, 2010 at 8:04 am

I would be a bit irritated if I got such and early start for nothing… Enjoy some unexpected time at home today!

21 Erin (Travel, Eat, Repeat) January 25, 2010 at 8:08 am

Wooo hoo! (Flooding is bad, but a day off is good… :) )

22 Lara January 25, 2010 at 8:16 am

Do you find that a calorie heavy breakfast like this one really keeps you fuller longer and/or eating less the rest of the day? I recently read an article about a study where people ate more calories than they usually did for breakfast and that made them eat less throughout the day. Just curious if you have ever noticed that.

23 Kath January 25, 2010 at 2:01 pm

Absolutely. If I don’t eat enough breakfast I am hungry all day!

24 Sarah (Running to Slow Things Down) January 25, 2010 at 8:17 am

That’s the best feeling when you know you can work from home.

Enjoy your day “off”!

25 Simply Life January 25, 2010 at 8:18 am

I got those coffee packets for a gift and have yet to use them! You make it look great!

26 Paige(Running Around Normal) January 25, 2010 at 8:19 am

Ahhh got up SO early for nothing! Oh well… enjoy the day off 😀

27 Tiffany January 25, 2010 at 8:21 am

Ahh at least you can use the extra time to get things done! And you can go to sleep extra early tonight, too. :) Have a great day off! Maybe you can visit the KERF spa again and extend the weekend… 😉

28 Kath January 25, 2010 at 2:01 pm

Haha. I love it when y’all use my own creations back at me :)

29 [email protected] January 25, 2010 at 8:27 am

Well that was an early start to your day. How nice that you get to work from home today. My husband likes to keep thos SBUX packets on hand for a quick cup of he said they are the best of instant he has tried. They are a little pricey though!

30 The Paris Food Blague January 25, 2010 at 8:30 am

35 Mara @ What's For Dinner? January 25, 2010 at 8:36 am

Oh i’d be so annoyed if i were up that early for really no reason, but I guess there’s potential for a productive day!

36 Sam (Merit to the Carrot) January 25, 2010 at 8:40 am

Well, just think of it as a day to get things done. I’d jump for joy if school was canceled! :)

37 Jasmine @ Eat Move Write January 25, 2010 at 8:43 am

OH no! Actually, I think I’d like that if I were you. Now you have your whole day ahead of you.

38 Meg @ Be Fit Be Full January 25, 2010 at 8:49 am

Oh my gosh! So jealous! The rain pelting on the windwos last night kept me up for a while. I’ve never seen it rain so hard! Enjoy your day at home!

39 Jessica @ The Process of Healing January 25, 2010 at 9:06 am

wow, double dose of pumpkin! Yum!

Don’t you love/hate that?! It’s kinda like when you were in school and already up and dressed and ready and they canceled class at the last minute. But yay for no commute! At least you have plenty of time to get things done today!!

40 Heather @ Side of Sneakers January 25, 2010 at 9:11 am

Bummer on getting up so early when you didn’t need to, but at least you have allll day at home now!

41 Christina January 25, 2010 at 9:12 am

It poured here in Raleigh early this morning and was wicked windy.. we have HUGE branches down in our subdivision and the creek that runs behind our house is nearly spilling it’s banks.

I’m jealous of your flood day! :) Being a New Englander I miss those random snow/ice days we would get. Is it bad, that every winter I pray for a major ice storm or blizzard that will shut this place down for a few days?! :)

42 Jenna January 25, 2010 at 9:16 am

Yummy overnight oats!!
Glad your school is cancelled but bummer you were up sooo early!

43 Jenny January 25, 2010 at 9:16 am

ha aw man, even though you ended up not being rushed out the door, I’m still extremely impressed that you were posting+eating simultaneously!

Have a great day off!

44 Kathleen Ichord January 25, 2010 at 9:18 am

Stonyfield Pumpkin yogurt ….still can not find it!

45 katherine January 25, 2010 at 9:24 am

Enjoy your day at home!! I almost called in sick today b/c the wind and rain sounded so awful from my warm, cozy bed. Alas, I trudged to work (the fate of one living within walking distance of the office), but I’m counting the hours until I can curl back under my covers!

46 emily January 25, 2010 at 9:27 am

I hope you enjoy your “freebie!” Sorry it came on such an early morning.

47 Allie (Live Laugh Eat) January 25, 2010 at 9:33 am

So so lucky!!! That totally would have thrown me off big time! For some reason I get so discombobulated when I have to wake up early and rush around just to have something cancelled. I’m weird like that :)

48 Heather January 25, 2010 at 9:56 am

Enjoy your day! It is too bad you were up so early and ready to go – at least you didn’t drive all the way there!

49 Haleigh January 25, 2010 at 10:11 am

Good luck on the busy, early morning!

50 Heather (Heather's Dish) January 25, 2010 at 10:18 am

that’s crazy it’s completely canceled! at least you do get to work from home though…that’s gotta be a fun change :)

51 JENNA January 25, 2010 at 10:28 am

yay for school being cancelled (??)….seeems like as i get older its just more of a hassel than anything else when they call for ‘snow days’ …sad! I hope you enjoy your morning at home:)

52 Katharine January 25, 2010 at 10:40 am

Yay for no school but boo for an unnecessary early morning wake-up call! Enjoy your day off. :)

53 Emily January 25, 2010 at 10:54 am

Jealous that you got to stay put! It was a mess here this morning.

54 Ash @ Good Taste. Healthy Me January 25, 2010 at 11:29 am

Haha aw that stinks that you were already up! I hate when that happens.

55 Mama Pea January 25, 2010 at 11:48 am

Hate to cheer a flood, but working from home is the BEST!

56 Heather (The Single Dish) January 25, 2010 at 12:15 pm

I wish my work was cancelled today! Enjoy your day at home :)

57 Lauren January 25, 2010 at 12:35 pm

I actually really like the Starbucks Via packets. It’s definitely not a drip pot, but I think it’s the best instant coffee by far.

58 Alison (Life's Little Lusts) January 25, 2010 at 12:41 pm

that’s the type of morning that’s so great but
a bit of a disappointment at the same time!
i recommend catching up with ellen this morning. 😉

i have a quick question for you:
what’s the best way to make steal-cut oatmeal overnight?
my dad’s just discovered scottish oatmeal
but he doesn’t feel motivated enough to watch it on the stove in the morning
before rushing off to work.
i told him about soaking them overnight,
but i was wondering if there’s a special way that works the best,
and i figure you’re the top reference on this subject!
what’s your advice?

59 Kath January 25, 2010 at 2:03 pm

I actually don’t make steel cut oats, so I’m not sure how well they work for overnight oats. Rolled oats have more surface area and therefore less cooking time and so they work well soaking overnight. I do think someone wrote me that their steel cut worked well recently though, so give it a try and see.

60 Fei Fei January 25, 2010 at 1:43 pm

Flooding? :O Is the school you’re interning ok? It sucks that you woke up so early for this only to have it cancelled, but working from home definitely sounds great 😀

I’ve heard about the Starbucks VIA packs but haven’t had a chance to try them yet. Do you mind sharing your review on KERF? I would love to hear your thoughts on them.

61 Kath January 25, 2010 at 2:04 pm

I agree with the others – it’s not amazing coffee, but for instant, it’s quite good and very much like the real deal.

62 Jil January 25, 2010 at 1:57 pm

Oh man, school flooding … never good. But yay for not having to commute! Boo for being up so early…but at least you got a good start on the day. :)

63 Cynthia (It All Changes) January 25, 2010 at 2:25 pm

Unexpeted days off are nice but I always prefered the calls before I got out of bed so I could sleep just a bit longer. Didn’t always happen but twas night when it did.

64 Jenn (www. ) January 25, 2010 at 6:29 pm

Snow days (or bad weather days) rock! After seeing your lunch post, the day was not wasted!!! 😀

65 lynn (The Actors Diet) January 25, 2010 at 8:28 pm
