The Missing Hour

Rather than being in Salisbury at 7:30, I’m due there at 6:30 this morning (with an hour drive to get there) to prepare and sample oatmeal, do a nutrition education lesson and assist with an Accuclaim audit, so I set my alarm for 4:45 this morning and have 9 minutes to eat breakfast and blog simultaneously!

No time to cook!

Overnight oats with pumpkin!

The Mix:

  • 1 container Stonyfield Pumpkin yogurt
  • ~1/4 cup pumpkin
  • 1/3 cup raw rolled oats
  • 1/3 cup 2% milk
  • Pinch salt
  • 1 tbsp chia seeds (the best!!)
  • Half banana sliced
  • Topping: NUTTZO!! Love this on overnight oats

No time for French press so I used one of my SBUX Via packets today!!

Not my fav in taste, texture or froth 🙁 But it’ll do in a pinch, which today definitely is! (And will be fun to sip on my commute)

EDITED TO ADD:

SCHOOL IS CANCELED due to flooding today!! I just got a call from my preceptor and am to work from home today! Wahoo for no driving! But bummer I was up so early, showered and fed!

    Oh man, that is an early day and then to not have to really go anywhere. We are having tons of rain here too but nothing is cancelled 😀 Hope you have a great day!

    Oh my gosh that’s an early start!! It puts things into perspective, I used to moan about a 5.50 start…
    but yay for school being cancelled!! An unexpected day at home always feels so special, hope you enjoy it!

    Sorry to hear that it got cancelled. I’d be pretty upset if I rushed to get ready and I found out that I didn’t have to be in such a hurry. =\

    Btw, I tried your overnight oats for the first time a few nights ago to see if it would be a breakfast worth having in the dorms before my work out and it turned out all right for the most part. Is there anyway to make it less soupy? I put 1/3 cup Vanilla Silk, rolled oats and yogurt together with some banana slices (I’ll remember to put those in the next day instead of over night) and then microwaved it for 30 seconds in the morning. I prefer my oats chewier like steel-cut and I was just wondering if there was a way to get more of that texture. Thanks in advance!

      Just use less milk and more yogurt 🙂 Chia seeds also help thicken it.

    Do you find that a calorie heavy breakfast like this one really keeps you fuller longer and/or eating less the rest of the day? I recently read an article about a study where people ate more calories than they usually did for breakfast and that made them eat less throughout the day. Just curious if you have ever noticed that.

    Well that was an early start to your day. How nice that you get to work from home today. My husband likes to keep thos SBUX packets on hand for a quick cup of he said they are the best of instant he has tried. They are a little pricey though!

    i wish my work was cancelled today! 🙂 although i guess you still have to work, but from home? that’s definitely a better option though 🙂 if i were you, I’d use the extra time to relax with some yoga!

    YAY..nothing like a day off school…that’s the BEST Monday morning ever (and don’t tell me you are not happoy girl…I just won’t believe it unless youa re a superhuman 😉

    I am jealous.Even if you do some work /blog stuff from home that is a ZILLION times better than going in to work, so please enjoy if for the rest of us !

    Don’t you love/hate that?! It’s kinda like when you were in school and already up and dressed and ready and they canceled class at the last minute. But yay for no commute! At least you have plenty of time to get things done today!!

    It poured here in Raleigh early this morning and was wicked windy.. we have HUGE branches down in our subdivision and the creek that runs behind our house is nearly spilling it’s banks.

    I’m jealous of your flood day! 🙂 Being a New Englander I miss those random snow/ice days we would get. Is it bad, that every winter I pray for a major ice storm or blizzard that will shut this place down for a few days?! 🙂

    Enjoy your day at home!! I almost called in sick today b/c the wind and rain sounded so awful from my warm, cozy bed. Alas, I trudged to work (the fate of one living within walking distance of the office), but I’m counting the hours until I can curl back under my covers!

    I actually really like the Starbucks Via packets. It’s definitely not a drip pot, but I think it’s the best instant coffee by far.

    that’s the type of morning that’s so great but
    a bit of a disappointment at the same time!
    i recommend catching up with ellen this morning. 😉

    i have a quick question for you:
    what’s the best way to make steal-cut oatmeal overnight?
    my dad’s just discovered scottish oatmeal
    but he doesn’t feel motivated enough to watch it on the stove in the morning
    before rushing off to work.
    i told him about soaking them overnight,
    but i was wondering if there’s a special way that works the best,
    and i figure you’re the top reference on this subject!
    what’s your advice?

      I actually don’t make steel cut oats, so I’m not sure how well they work for overnight oats. Rolled oats have more surface area and therefore less cooking time and so they work well soaking overnight. I do think someone wrote me that their steel cut worked well recently though, so give it a try and see.

    Flooding? :O Is the school you’re interning ok? It sucks that you woke up so early for this only to have it cancelled, but working from home definitely sounds great 😀

    I’ve heard about the Starbucks VIA packs but haven’t had a chance to try them yet. Do you mind sharing your review on KERF? I would love to hear your thoughts on them.

      I agree with the others – it’s not amazing coffee, but for instant, it’s quite good and very much like the real deal.

    Unexpeted days off are nice but I always prefered the calls before I got out of bed so I could sleep just a bit longer. Didn’t always happen but twas night when it did.
