Kath Eats Real Food For Real

This has been such a rejuvenating weekend and just what I needed. Hope I can get reservations at the KERF Spa again soon! From nourishing meals to fun exercises to relaxation, this weekend had it all (wish Matt and I could have spent more time together though!)

This afternoon I worked on an academic project for my internship for a bit and then did something I haven’t done in ages: lounged on the couch and watched TV in my sweats! Glorious. I never got around to packing up all my big dishes this weekend, but that can wait. It’s a sunny day project anyways.

Around 4:30 I knew there was nothing in the world I wanted more than some Great Harvest bread. My body is still weirdly hungry but not hungry. I have determined that my hydration must be the cause. But the bread did wonders for my legs – they felt so much better afterwards!

SO SO SO easy. I served a heaping spoonful over baby spinach and leftover turmeric rice and garnished with cilantro, avocado and Cholula!

I’ve got a suuuuper early morning tomorrow – and overnight oats brewing in the fridge! Going to watch 30 Rock and then get in bed early. Nite!

      Sort of. I came up with pineapple chicken and then I remembered someone had told me about a similar recipe and I ended up doing pretty much the same thing!

    This may sound really odd, but for some reason, I was just thinking about you today and how I NEVER seem to see you just VEG out! LoL, I swear, I was just thinking to myself, “that Kath is always on the go!”

    Sunday afternoons definitely call for some veg out time on the couch 🙂 Sometimes my stomach feels off after a longer (or faster) than usual run. I often feel hungrier the day after a long run…

    Spending the day relaxing on the couch in your sweats is so rejuvienating sometimes – I wish I had more time to do it!

    I love my crock pot and am trying to experiment more with recipes – there is nothing easier.

    Enjoy your overnight oats in the morning – I love waking up to a pre-made breakfast!

    hey kath,
    this is unrelated to tonight’s post, but i wanted to say thanks — i tried wheatberries for the first time with dinner tonight (they don’t sell them in my neighborhood, but when i was across town at a grocery store i’ve never been to before, i thought of it from your blog and other recipes) and your “wheatberry lesson” was very helpful about how to prepare and the nutritional information. i used my own recipe tonight, but hope to try some of your wheatberry concoctions too!

    Ohhh I’m glad you liked the recipe. It’s on my menu for this month again. It’s one of my favorites especially over couscous. But I’ll have to try adding the avocado next time.

    Thanks for the overnight oats idea. I made mine tonight, too- with almond milk and a smashed banana. Can’t wait to see how it looks in the morning! Yum!

    Just made this chicken dish – with crushed pineapple (that’s all I had) and it was yummy – I was so hungry by the time it was ready that I forgot all about the cilantro and avocado – but it was still soooo yummy ! Thanks!
