Phat Burrito, Phat Job!

May 12, 2009

I am so filled with excitement right now!!!

I just got back from a 3 hour meeting/lunch with Mary Brown, MS, RD of Nutrition Specialists, where I’ll be interning this summer. I cannot believe I found the PERFECT internship! Mary is awesome, and I am going to be doing so many cool things – from counseling sessions to learning all about the business side of owning a private practice. (Can I just put in a few more !!!!!!)

But here’s the coolest part: I asked if Mary would be open to doing any online counseling of blog readers who have expressed interest to me, and she thought it was a great idea! All of you who have emailed me for personal nutrition advice – now’s your chance! Mary and I are considering working together on this, and I wanted to gauge interest. So if you think you might be interested in an individualized nutrition evaluation and consultation (or a series of them), please shoot me an email to [email protected]. I’m not going to respond to your emails – I just want to see who might be interested to see if it’s worth opening the doors. This would be great experience for me before I start my internship next spring and hopefully a practice of my own in the coming years.

After we gabbed for a while, we walked to lunch in the neighborhood – to a Charlotte landmark: The Phat Burrito.

I have heard about the restaurant for ages but have never had the chance to go.

IMG_6029 (1024x768)

Boy was I ever impressed!!!

IMG_6031 (1024x768)

I ordered a Fish Salad – not really knowing what to expect.

It was DEEEElicious!

A tortilla, baked, stuffed with red beans + rice, lettuce, grilled white fish, cheese and cabbage. Served with spicy salsa! I ended up eating about half and brought the rest home.

IMG_6030 (1024x768)

Because they are “that good” we also got a kids’ size veggie quesadilla and some chips with queso. The quesadilla was stuffed with portabello mushrooms and zucchini. It was awesome. I had one of the triangles and a handful of chips –

What a yummy lunch.

And here’s the other fantastic news: grades just went up and I couldn’t have been more pleased with how I did 😉 A semester of hard work paid off!

And more excitement: I got an email from an producer (), who reads KERF and saw that I went to see Oprah at Duke, and she wanted to share that Oprah’s Duke Commencement Speech is now online. I’m going to go watch it again! Let me also add that I think Oprah should do a show on internet trends + food blogs, and I would be more than honored to come to Chicago and share my story

I’m going to go answer> comments + emails and then relax a little before I turn around and go back uptown for the Charlotte Dietetics Association meeting at a restaurant tonight. It’s a big nutrition day!

4 Lara (Thinspired) May 12, 2009 at 2:49 pm

I think an Oprah show is an excellent idea. The food blog community is expanding every day and everyone has a different story to tell.

I’m so happy for you about this internship–all your hard work is paying off!

5 sara May 12, 2009 at 2:53 pm

Oh how exciting!

I actually emailed the Oprah show, aomg others, telling them what a great idea it would be for a show. I gave a bunch of links to food blogs (including yours) but never heard back anything (that was months ago) Who knows though!! :)

Hi Kath!

What a great experience your summer internship will be! I’m interested to hear the result of the internet/blog interest :)

13 Elizabeth May 12, 2009 at 3:03 pm

I don’t think you used nearly enough !!!!!!!!!!!!!!!!!!!!!! to cover the excitement of today (and think, today is only half over! :) )

Congrats on the grades, the nod from Oprah’s people, the awesome internship & yummy lunch!

Rock on sister! )

14 Sarah May 12, 2009 at 3:03 pm

I can totally see Oprah doing a show on food blogs. She’s always covering the latest trends and she has a personal interest in health with her past struggles. It would be perfect! She can give all the audience tickets to food blog readers. Lol.

15 The Novice Berker May 12, 2009 at 3:04 pm

Very cool about the internship!! What an awesome opportunity!

The Phat burritos look awesomeee. Or, err… phat. 😛

16 Erin May 12, 2009 at 3:12 pm

Hands down, a kick ass day, eh?!

17 Melissa @ For the Love of Health May 12, 2009 at 3:18 pm

Congrats! Sounds like an amazing job!!

Delicious looking lunch!

I totally agree: Oprah should do a show on Food/Health Blogs!!

18 Kristilyn (The Food Journey) May 12, 2009 at 3:22 pm

Kath, your lunch looks amazing!! I must try out new restaurants in the city more often.

That’s also pretty awesome that Oprah’s people emailed you! I agree that it would be great if they did an internet/food blog segment on the show. Rather than talk about fad diets, talk about REAL food and how it’s the best thing you can give your body!

19 Justy2003 May 12, 2009 at 3:27 pm

Love the idea of having food bloggers on Oprah! Sounds like you’ve had a good day so far…yay!

20 Shannon (The Daily Balance) May 12, 2009 at 3:27 pm

What a fantastic day! lunch looked amazing! and Oprah? OMG!

21 Kristan May 12, 2009 at 3:29 pm

What an amazing day so far, Kath! Such great opportunities knocking at your door. Hope the rest is twice as great! :)

22 Leah @ Simply Fabulous Now May 12, 2009 at 3:31 pm

Wow, what a great post!!!

That is a GREAT opportunity that you’ll be getting with Mary!

And AS IF a producer from Oprah contacted you! How fun is that!!!

23 SarahF May 12, 2009 at 3:32 pm

Wow-congratulations Kath! That’s so exciting!

I need your (and everybody else who reads the comments) help! I’m running my first ever race in a month (it’s a 10 km too) and it’s the “Underwear Affair”. I think it might be a Western Canada race (the website always seems to just have a couple of Canadian cities listed) but it’s for all cancers below the waist. You can run in your underwear-though I don’t think I will. All in all, a super fun race.

However, I’ve decided to get a big group together to run it-and I have both accountants (where I work full time) and servers/bartenders (where I work part time) who have signed up to run it with me. The problem is-I need a team name! I have absolutely zero creativity and I want my team to have a great name! Anyone out there super creative and can come up with something interesting??

Thanks to everyone :)

24 Sara May 12, 2009 at 3:33 pm

Lunch looks so good! Cognrats on all your exciting opportunities.

25 Lauren May 12, 2009 at 3:34 pm

first, congrats on another successful semester!! :)

And…congrats on your internship! This sounds like a great opportunity to merge your future career with your success that you’ve had with this website! What an awesome idea!

And the lunch…well, I wish I were still visiting Charlotte on a regular basis for work because that looks fantastic!! :)

26 sonia May 12, 2009 at 3:35 pm

Kath, I really do adore you (in a good way :)). You go girl.

27 Tracey May 12, 2009 at 3:37 pm

Hi Kath! Congratulations on your amazing day! :)

I wanted to leave a comment and say that I would be very interested in online nutrition classes if you were to offer them. It’s something I’ve considered many times, but I would love to be able to “see” someone that I really trusted.

Take care!

28 Sarah May 12, 2009 at 3:39 pm

Wow Kath! What a wonderful day for you! Maybe Oprah will take you up on your offer!

29 brandi May 12, 2009 at 3:41 pm

glad to hear your meeting went well! that’s exciting :) looks like a great day so far!

30 Rachel May 12, 2009 at 3:43 pm

That job sounds AWESOME! What a perfect fit. Congratulations – I know you will do wonderfully with the counseling part, especially.

31 Sarah (lovINmytummy) May 12, 2009 at 3:49 pm

That is OUTRAGEOUS that an Oprah producer reads KERF! Just goes to show, you never know who’s reading out there.

Note to self: cut back on the pee pee stories and “that’s what she said” jokes.

32 weight and meditate May 12, 2009 at 3:50 pm

Yay, Kath! Everything’s going your way!

33 Lisa May 12, 2009 at 3:51 pm

Since you had burritos, I think a big “holy guacamole, that’s a great job!” is in order.

34 Leila May 12, 2009 at 3:54 pm

What a brilliant day. I’m so happy for you!! Congratulations. Although I’m not super surprised. After reading your blog for so many months the positive energy, dedication and pure enjoyment you get from helping others, such great news couldn’t happen to a more deserving person.

Enjoy your day and I hope you celebrate tonight.

35 Shannon May 12, 2009 at 3:59 pm

I might be interested in the online nutritional offerings depending on cost – thanks!

36 Heather May 12, 2009 at 4:01 pm

I’m so excited for you Kath! It sounds like you have the perfect summer planned out! What a great idea with the online blogging nutritionist idea. And congrats on the grades! We all know how hard you studied to receive them! :)

37 K May 12, 2009 at 4:01 pm

You should SO be on Oprah!! OPRAH PUT KERF ON!!!

I’m so excited for your internship to start! It sounds so exciting and I’m hoping you’ll be able to share some tidbits you learn :)

38 Allison K May 12, 2009 at 4:01 pm

What an exciting day! That burrito place looks like one of those phenomenal local places that can’t be beat!
And if you went on Oprah…I would have a hard time not telling everyone that i “know” you…even though..I don’t!

39 Angie May 12, 2009 at 4:03 pm

Woo hoo! Congrats on the internship plans. It sounds awesome! You will learn so much! I believe that online nutrition counseling will likely continue to grow over the next few years!

Great looking lunch…and congrats on the contact with the Oprah producer and your good grades…all very exciting!

40 Michelle May 12, 2009 at 4:05 pm

41 Marissa May 12, 2009 at 4:10 pm

Sounds like a wonderful internship!

42 amber May 12, 2009 at 4:11 pm

that would be awesome if Oprah did a show on food blogs and featured you, the Queen of real food (and food blogs IMO)!!

43 Hallie May 12, 2009 at 4:12 pm

I am not an Oprah girl but I would TOTALLY watch the show featuring KERF and tell everyone, “oh I am ahead of the trend. I’ve been reading her blog for years.”

You used to be in PR…pitch it, girl!

44 ri'chele May 12, 2009 at 4:13 pm

We love reading your blog. Great progress on your internship. Baja Fish Tacos are my go to meal, your lunch salad is very similar.
Ingredients are simple fresh and inexpensive. YUM!

45 Stacey May 12, 2009 at 4:22 pm

I went to Phat Burrito last month for the first time and (sadly) wasn’t that impressed. Maybe it was what I ordered? But I got the veggie stuffed burrito, and was dissapointed to see that it was mostly stuffed with rice and beans :(

Oh well! Maybe next time!

46 Foodie (Fab and Delicious Food) May 12, 2009 at 4:51 pm

Glad your meeting went so well!

47 Emily May 12, 2009 at 4:51 pm

Congrats on the grades! What a rush to be contacted by one of Oprah’s producers. You just never know when you wake up in the morning what amazing things might happen. Love your blog, BTW. Very inspiring!

60 Tyler (Raspberry Runner) May 12, 2009 at 6:45 pm

61 Kailey (SnackFace) May 12, 2009 at 7:03 pm

Kath! What a day, what a day! Everything is just too exciting in this post! It sounds as though this summer internship is absolutely perfect, and I think your opening a practice of your own is brilliant. I would definitely be interested. I’ll email ya.

OPRAH NEEDS YOU!! Your blog is THE food blog of all food blogs. I mean, I know I’d freak out if I ever met you in real life, which means you’re basically a celeb already.

Hope you have an equally amazing afternoon!

62 Erica May 12, 2009 at 7:23 pm

AH! Your summer internship sounds awesome! Great lunch too!!!!!! Everything looks FRESH! I def think you need to be on Oprah!

63 sue May 12, 2009 at 7:43 pm

wow! phat job indeed! so cool 😀

64 Kristin @ Iowa Girl Eats May 12, 2009 at 8:00 pm

WOW!!! Exciting things are happening for you – very cool!!! ps I’m drooling over your fish salad…yummmm!!!

65 Linda May 12, 2009 at 8:00 pm

I’m sure Oprah’s people will surely bite on your wonderful suggestion. I’d stay home from work to watch it!

Another example of how popular blogs, especially food blogs, have become is the Julie & Julia Project starring Meryl Streep and Amy Adams. Julie Powell’s personal experiment blog has now turned into a major movie set to release this summer! I thought it was pretty cool that she turned her blog into a book deal, but to have Meryl star in her movie…wow!

66 Kath May 12, 2009 at 8:23 pm

SarahF ,
Oh gosh, tough one!!

Bare All Miles

All Legs, No Pain

I’m too tired to think of more!

67 Hangry Pants May 12, 2009 at 9:01 pm

Oh my god. If you get to be on Oprah. I. WILL. DIE. 😀 Perhaps the Summit would be a nice topic. 😀 😀

68 Michelle Hisae May 12, 2009 at 9:08 pm

GET ON THE OPRAH SHOW. omgomgomg. Food bloggers deserve a shout out, and we all know how much Oprah likes food! Oops, did I just say that? LOL

69 Help Meghan Run May 12, 2009 at 9:31 pm

What a kickass day! :) Enjoy it tonight. You have worked so hard, you definitely deserve it! (And please go on Oprah!)

70 Bobbi May 12, 2009 at 11:13 pm

Congrats Girl!!! YOU SO DESERVE IT!!!

71 RK May 13, 2009 at 7:45 am

Kath – I am so excited for you!!! The internship sounds amazing and right up your alley. You will have a fabulous summer. I also wholeheartedly agree that you would make a stellar Oprah guest and she should totally do a segment on food blogging trends.
Your lunch looks absolutely delicious. I always get uncomfortable/self-conscious about eating with people like future bosses/supervisors. Do you struggle with this? Was it at all uncomfortable to eat with Mary?

72 debbie May 13, 2009 at 8:47 am

Hey Miss Kath, I’m one of those, you know…(gasp)lurkers. I think I’ve commented a time or two here but not much. Shame on me.

I got so excited when I read your idea of how Oprah should do a show on internet trends + food blogs, you my dear would be just the ticket! I hope it comes to pass and please do let us know as I’ll be watching!

Congratulations to you on those fabulous grades Kath! Wishing you and your sweet hubby a fabulous summer!

Blessings – Debbie

73 debbie May 13, 2009 at 8:49 am

And a very BIG CONGRATULATIONS on the PERFECT internship! I’m so excited for you!

Blessings – Debbie

74 Kath May 13, 2009 at 1:11 pm

RK ,
Not at all! People generally know I’m not afraid to eat well :)

Thanks Debbie!

75 elissa May 13, 2009 at 3:12 pm

Man, sounds like you had an exciting day! I think it’s a great idea that your internship leader wants to help out as well. I would love the opportunity to have a personalized nutrition plan. I just hired a trainer to hopefully kick start my weight lifting program and the nurtition part would be an added bonus.

76 Marianne May 15, 2009 at 11:38 pm

Are your internships broken up into smaller stints? I know for the school I’ll be going to, we do one whole year of internship at the end.
