How long has it been since I’ve made an oatmeal pancake!?

A whole year??!

I’ve seen a few in blogland and decided today was as good a day as any since we restocked our egg supply yesterday. I used to always make them with carton egg whites, but I don’t buy them any more (not because I think they are “bad” but because I wasn’t using them anymore over real eggs). I think these are better with just egg white, but I hate wasting a yolk (or saving them and having them go bad) so I just used the whole egg. Still turns out fine though.

I mixed 1/3 cup oats, 1/2 an egg, 1/2 tsp baking powder, a tbsp of milk and vanilla into 2 ramekins and then added 2 tbsp mashed banana to each.

Put on a medium hot skillet and mash down. They are ready for flipping when they move when you shake the pan.

Topping included the rest of the mashed bananas mixed with some PB2!

And coconut, syrup and a dollop of White Chocolate Coconut Peanut Butter

Matt made us some new coffee. Sea Island Coffee specializes in rare and exotic coffees from around the world and recently opened shop for online purchasing. They asked if I’d like to try them. I’m not sure if they are shipping to the USA yet, but in England shipping is free!

Combined with rich 2% milk, this was one delicious cup of coffee!!!!!! It had that classic coffee taste with no bitterness and lots of body. Liked it a lot!

LOVE oatmeal pancakes. They are just so much more hearty than regular. You know what would be amazing on these for brunch? A dollop or two of frozen banana whip and blueberries!

those look beyond amazing! and I just bought a bunch of bananas, I think this recipe is in the works for breakfast tommorow. if ihop was good for you, I’d probably live there.. I love pancakes!

Speaking of pancakes….are any of you from the NYC/NJ area?

If so, I’m sure you have ate/heard of the pancakes at Clinton St. Baking Company? I just had them for the second time yesterday. OMG. The BEST!

Sorry – but these delectable fluffers of goodness are the real deal (eggs, butter, maple syrup, etc.!) Big taste, lots of calories. But, it’s SO worth it!

This is definitely one of my stand by meals :) I have to eat on the go for breakfast during the week… oatmeal pancakes are very portable!

I used to get the cartoned egg whites, too, but found I missed yolk. They are good for baking, but I still don’t use them too often with that – they would end up getting tossed and I hate doing that!

Hi Kath,
How do you get the pancake not to stick on the griddle? I always have a hard time and end up ruining my skillet. Is cooking spray enough? Thanks!

Those look YUMMY! When I make oatmeal pancakes, I make them protein pancakes with fat free ricotta or cottage cheese. They come out awesome. Oh, and being oats don’t have gluten, I omit the baking soda/powder because it won’t rise anyway.

Those look delicious. The nut butter sounds awesome! I’ll have to make some tomorrow a.m.

I just ate a blog-worthy lunch, and thought of you! A fresh ‘mater and a “peaches & cream” corn on the cob (nuked in micro with husk on for 2 min). Both veggies dressed in S&P. A sandwich on 5 grain Publix bread with: laughing cow swiss cheese wedge and basil pesto on one side, apple butter on the other side and turkey breast and baby swiss in the middle! I did not want it to end. You should really try it! Apple Butter + Pesto = YUM

I still see the symbols too (and am in Canada but I don’t think that has anything to do with it).

The strange thing is, when I hit “comment” and the new page loads, the text is fine and an apostrophe looks like an apostrophe.

Those pancakes look delicious! I love switching from my everyday bowl of oats using this recipe. The addition of coconut flakes and the White Chocolate Coconut Peanut Butter looks amazing as well. Have a great day!

Mmm it’s funny how GOOD a good cup of coffee can be and how nasty a bad one is. I can’t have coffee until after Halloween, I’m not sure if I’ll make it through!
