You Told Me So

OK, OK. I’ll say it.

“Why the heck did we wait until mid-August to turn on the air conditioning!?!??!!”

It’s soooooo nice in here. Gosh.

Matt and I have had the best evening together. Cooking, walking and general lounging.

We decided to mix a few drinks while we prepped dinner. Since I’ve been doing a lot of drinking, I opted for a teeny tiny Minty Manhattan, which is a cross between a Manhattan and a Mint Julep.

Matt had an Allagash beer that my dad brought him from Maine!

And we set to work on this:

Turnip, potato and carrot pancakes seasoned with garlic and thyme and molded with an egg. I don’t have a recipe because I’m not even sure how many of each root went into the food processor, but I’d guess 2 of each kind plus the egg and seasonings taste.

We fried them in a skillet

And they turned out awesome!!!! Very buttery from the sweet roots –

Served with an egg + runny yolk

I also prepared collard greens with a Raspberry Jalapeno marinade leftover from the Great Harvest picnic (I think this came from EarthFare). It’s kinda like a slightly savory raspberry jam.

To cook collards, remove leaves from stems –

And then tear them into bite size pieces.

Rinse and dry and put in Dutch oven with some water and your flavors and cook, turning, until leaves are wilted. Drain.

That bunch turned into this little pile:

They were good though! I added a little dijon mustard too –

I realized when we sat down to dinner that I wasn’t that hungry, so I left a cake for tomorrow –

Tusker sure enjoyed the party!! I had a few sips of the Allagash White that was opened too.

After dinner we went on a 30 minute walk through the neighborhood (and were happy to come home to a cool house!)

Not sure what the evening plans are, but I still have some Summit work to do!

    COFFEE POT OATS?!?!

    Does Kath or anyone know how to make oatmeal in a hotel room coffee maker? i think it is important to know i like my oats with milk, not water. i also like regular oats, not instant packages. how do i do this???

    Stacy,
    I’ve traveled pretty much every weekend this summer and I can’t live without my oats. Unfortunately, in order to make coffee pot oats (that I know of), you have to use water. Just put cold water into the coffee filter like you normally would for coffee and pretty the start button. You don’t need to put in the coffee grinds. It should come out as hot water. I have only tried using instant oats and it works perfectly. I guess you can always hit up a Starbucks for their oatmeal too? Hope this helps

    what a pretty dinner!
    i love love love turnips and always feel like i’m the only person on earth who does. i eat them instead of mashed potatoes at thanksgiving, and the rest of the family stares at me like i’m crazy 🙂

    those pancakes are brilliant! will definiltely have to give them a go this fall, when roots are in abundance.

    this evening i made that tropical coleslaw (pineapple/coconut/black bean) salad you posted a while back. i had to make a lot of substitutions (dehydrated pineapple instead of canned, oj instead of pineapple juice and no black beans) but it was still really delicious and unique. dinner guests loved it. fabulous.

    Those root pancakes sound sooo good! I wish I had a food processor that could chop my veggies into little bits like that. Maybe we will have space for one in a couple months? 😉

    I’ve tried similar pancakes with the carrots before but not the other root vegetables. Crafty! I enjoyed mine with a bit of thick greek yogurt.

    I’ve never had collard greens, but always see them using them on the Food Network and you make it look so easy. Next time I’m at the grocery store I will purchase and try some!

    You know, for whatever reason I haven’t made veggie “pancakes” in probably a couple years. I used to LOVE making zucchini pancakes!! Thanks for the reminder that that’s a tasty but easy way to use up extra produce!

    Dustin and I love that elephant bottler opener! So cute 🙂

    I’ve seen Alton Brown make coffee pot oats. He uses 2 packets of instant oatmeal when he travels, I believe!

    And mmmmmmmm runny egg yolks are wwwwwwwwonderful!!

    Haha, I wish I had air conditioning! It’s been a month since I used my oven! Even using the stovetop is too much some days…

    I love Allagash! We went to Nashoba Winery here in MA yesterday, and there were also lots of great beers to try. If you haven’t been you and Matt should add it to your next Boston itinerary; it was beautiful!

    I’ve tried to make those cakes before … with zucchini, I think. They always turn out mushy on the inside. But I’ll have to keep trying!
