Need A Lift?

January 27, 2009

Listen to this song. I DO NOT do things like this, but I swear I got out of my chair just to dance around the room to it this morning! (NOTE: Skip to :52 where the song starts ) I feel like I have shied away from country music and the South in recent years, especially since moving to a “big city”, but by gosh I used to go to bonfires in the country in hay fields just like the one in the video all the time when I was in high school!!

PS. The lead singer looks just like my bachelor neighbor, who LOVES beer on Friday nights 😉

I definitely think my mood is better today. Who knows if it was the vitamin, the song or a psychological effect. I went to the gym mid-morning and had a great workout. I didn’t bike there today because there was a chance of rain, but I sure feel guilty for driving! I arrived just 15 minutes early for a cycle class and decided to go (luckily I had thought to pack my shoes). I warmed up on the ET while I waited for class to start, sweat buckets in the 45-minute class, and then ended with some of Kelly’s moves. She sure is smooth! I was able to do the lunges and the pushup/pikes but I was sure more awkward than Kelly!

Winter Salad

I got home and put some veggies in the oven while I showered. I am SO THANKFUL to be able to cook lunch at home a few days a week. This was a small acorn squash, 1/4 a large green pepper, a portabello mushroom and a carrot, all sprayed generously with cooking spray and sprinkled with salt, pepper and garam masala and baked for 30 minutes at 400*. I ate about 75% with lunch and have a few leftovers.

I topped a bed of baby spinach (which was drizzled in EVOO and salt) with about half a cup of leftover Red Lentil Dal and Near East Pilaf long with the veggies and a sprinkle of pecans.

And had a plate of oranges with it –

And I had a few beans for dessert –

Rock on!!!

2 Moran January 27, 2009 at 1:58 pm

Such a colorful lunch for winter!!!
Enjoy the rest of the day!!

3 fitforfree January 27, 2009 at 2:00 pm

Does acorn squash roast all the way through in 30 min. when you chop it up into little pcs.? I’ll have to try that to shave off some cooking time! looks wonderful!

4 Meg January 27, 2009 at 2:01 pm

Kath — I think it’s fantastic that you make a meal, and SIT DOWN and eat it, civilized-style. I find I usually eat standing in the kitchen, or sitting at my desk while working, or in the car…which becomes a problem. I need to do the above (pictures) more often.

That’s one thing I miss about not being in school anymore – I never get to make a lunch at home during the week!

We live 30 minutes from work, so there’s no time to go home at lunch – that’s one of my goals one day. Live close enough to work to go home for lunch :)

Salad looks great!

6 Shelby January 27, 2009 at 2:01 pm

I LOVE your winter salad, I need to roast up some veggies for one of those!

7 ashley (sweet & natural) January 27, 2009 at 2:02 pm

Wow! Yum! I love Roasted Veggies!

10 megan January 27, 2009 at 2:10 pm

I wish I could make lunch at home too :) I ended up having ramen noodles for lunch – I’m almost ashamed to admit it in front of so many health conscious bloggers…but it’s true…and i loved it.

11 gina (fitnessista) January 27, 2009 at 2:11 pm

14 Melissa (fitnessnyc) January 27, 2009 at 2:14 pm

the salad looks awesome! thanks for yet another great idea.

The song didn’t make me get out of my chair and dance, but that’s probably a good thing because I am at work!

15 Faye January 27, 2009 at 2:15 pm

Ooh, I did an elliptical warm up and a spin class as well! BTW- you’re the one who gave me the idea to try spin class! Good lookin’ lunch as well!

16 Mia January 27, 2009 at 2:16 pm

Great song! I too used to be a country girl with hog roasts and such. Then I moved to a bigger city, changed my ways and am now back into the country music. While I did not get up to dance, it did put a smile on my face :)

17 Gina January 27, 2009 at 2:18 pm

Love the song! I usually make sure it’s the last one I listen to on the way to work so it wakes me up for the day :-)
And that salad looks delicious!

18 Courtney (The Hungry Yogini) January 27, 2009 at 2:19 pm

21 polly January 27, 2009 at 2:29 pm

us country folks LOVE that song!! We sing it all the time… pretty much that is my kinda peeps. 😉

22 JayhawkGirl January 27, 2009 at 2:30 pm

I love that song. I honestly had never heard anyone call it “chicken fried” until this summer when we went to visit my boyfriend’s aunt and uncle in central Kansas (I’m from northeastern Kansas) and his uncle was raving about this “chicken fried”. I’ve always called it chicken fried steak and never shortened it, but this song always makes me think of that trip and smile. :-)

23 Victoria January 27, 2009 at 2:31 pm

Ha. I used to love country music back in high school. Weird since I was living in Chicago.

24 Andrea [bella eats] January 27, 2009 at 2:35 pm

Your salad looks so good! I can’t wait to watch Kelly’s video tonight, I am always looking for quick strength workouts to do at home! I need something quick because I lose interest way too fast…

And I can’t wait to listen to the song later either! My boss probably wouldn’t approve if I started blasting it out of my computer right now… :)

25 Oh She Glows January 27, 2009 at 2:35 pm

Wow mght I just say that the shot of your orange is amazing!!! I felt like I could almost taste it 😀 Great camera, eh?

I will listen to the song when I get home from work!

26 Heather McD (Heather Eats Almond Butter) January 27, 2009 at 2:35 pm

Yum – love roasted veggies. Glad you’re in a brighter mood today. I bet the vitamin did help. Enjoy the rest of your Tuesday Kath!

27 Betsy in Pgh January 27, 2009 at 2:36 pm

Your citrus looks SO much better than what we get up here. Closer to the source, I guess!

28 Diana January 27, 2009 at 2:43 pm

Wow those Jelly Bellys are making me crave sweets! And the salad looks amazing! My lunch was a serious disappointment today! Oh well…there is always tomorrow!

29 Sarah January 27, 2009 at 2:58 pm

Love countrey music! Always have, but I have a question for anyone from the South what exactly is chicken fried steak? I feel like I am having a very Jessica Simpson moment b/c I do not know if it’s chicken or steak! Lol.

30 The Duo Dishes January 27, 2009 at 3:01 pm

That song reminds us of pig pickins we used to see happening on our college campus! The roasted veggies are our fave. Delish.

31 Missy (Missy Maintains) January 27, 2009 at 3:09 pm

I will listen to the song later since I am in a quiet office right now! I’ll take your leftover veggies :)

32 Meg January 27, 2009 at 3:11 pm

Yeah for bean desserts. Your salad looks delicious.

33 Nena January 27, 2009 at 3:12 pm

I ordered some Barney Butter after reading your blog a few months ago. I am wondering why everyone uses it. Does it have more nutrients, lower in fat, calories? I love it, but I am just wondering why everyone chooses it over other butters.
I know you would be the perfect person to fill me in on all the great properties of Barney Butter.

34 Maggie January 27, 2009 at 3:21 pm

I lurrrrve lurve lurve country music. It all just makes me want to run around in my bare feet dancing like crazy. I’m not from the south but my dad drives a pickup and listens to country :) (not a hick though – he’s a pension consultant; it’s like his secret side life or something.) So I grew up on it.

35 Steph January 27, 2009 at 3:30 pm

haha i love that song and country music- even though i am alone on that here in NYC & CT haha, can’t relate to any of it. salad looks great

Lunch looks super yummy with all those veggies! Dessert looks mighty tasty, too. 😉

43 neimanmarxist steph January 27, 2009 at 5:19 pm

44 Carrie January 27, 2009 at 5:32 pm

Love the song!

45 emmetmd January 27, 2009 at 5:37 pm

48 Lori January 27, 2009 at 7:16 pm

I love the bowl and the salad looks awesome!

When is the husband’s blog coming?? Would you be called “the wife” in his blog?

49 Kath January 27, 2009 at 8:07 pm

fitforfree ,
I forgot to say that I nuked it for 2 minutes to soften it and then I did cut it into pieces.

Nena ,
I think we all just love the taste of Barney Butter. It’s roasted and very creamy smooth.

Lori ,
His blog will be up within the week – if he gets all of the rest of the posts done! I think I’ll be Kath, and actually, I think he’s going to turn into Matt when his blog debuts. It’s easier to type than the husband and since he’ll have his own online identity, seems like a good time to switch. But it’s so weird for me because I only call him Kanz in person!!

50 Hil January 27, 2009 at 8:56 pm

That salad looks amazing. It’s so great that you can cook lunches at home a few days a week. I miss hot lunches so much!

51 Bridget January 27, 2009 at 9:00 pm

That is definitely a good-mood song!!

52 Ashley H January 27, 2009 at 10:38 pm

53 Anne P January 28, 2009 at 7:17 am

What a fun song! I’m not a huge country fan, but that was really cute, and I liked the video, too :) I also love the sweet lyrics :) Kind of refreshing after listening to dirty rap songs, haha.
