Need A Lift?

Listen to this song. I DO NOT do things like this, but I swear I got out of my chair just to dance around the room to it this morning! (NOTE: Skip to :52 where the song starts ) I feel like I have shied away from country music and the South in recent years, especially since moving to a “big city”, but by gosh I used to go to bonfires in the country in hay fields just like the one in the video all the time when I was in high school!!

I definitely think my mood is better today. Who knows if it was the vitamin, the song or a psychological effect. I went to the gym mid-morning and had a great workout. I didn’t bike there today because there was a chance of rain, but I sure feel guilty for driving! I arrived just 15 minutes early for a cycle class and decided to go (luckily I had thought to pack my shoes). I warmed up on the ET while I waited for class to start, sweat buckets in the 45-minute class, and then ended with some of Kelly’s moves. She sure is smooth! I was able to do the lunges and the pushup/pikes but I was sure more awkward than Kelly!

Winter Salad

I got home and put some veggies in the oven while I showered. I am SO THANKFUL to be able to cook lunch at home a few days a week. This was a small acorn squash, 1/4 a large green pepper, a portabello mushroom and a carrot, all sprayed generously with cooking spray and sprinkled with salt, pepper and garam masala and baked for 30 minutes at 400*. I ate about 75% with lunch and have a few leftovers.

I topped a bed of baby spinach (which was drizzled in EVOO and salt) with about half a cup of leftover Red Lentil Dal and Near East Pilaf long with the veggies and a sprinkle of pecans.

    Does acorn squash roast all the way through in 30 min. when you chop it up into little pcs.? I’ll have to try that to shave off some cooking time! looks wonderful!

    Kath — I think it’s fantastic that you make a meal, and SIT DOWN and eat it, civilized-style. I find I usually eat standing in the kitchen, or sitting at my desk while working, or in the car…which becomes a problem. I need to do the above (pictures) more often.

    That’s one thing I miss about not being in school anymore – I never get to make a lunch at home during the week!

    We live 30 minutes from work, so there’s no time to go home at lunch – that’s one of my goals one day. Live close enough to work to go home for lunch 🙂

    I wish I could make lunch at home too 🙂 I ended up having ramen noodles for lunch – I’m almost ashamed to admit it in front of so many health conscious bloggers…but it’s true…and i loved it.

    Great song! I too used to be a country girl with hog roasts and such. Then I moved to a bigger city, changed my ways and am now back into the country music. While I did not get up to dance, it did put a smile on my face 🙂

    I love that song. I honestly had never heard anyone call it “chicken fried” until this summer when we went to visit my boyfriend’s aunt and uncle in central Kansas (I’m from northeastern Kansas) and his uncle was raving about this “chicken fried”. I’ve always called it chicken fried steak and never shortened it, but this song always makes me think of that trip and smile. 🙂

    Your salad looks so good! I can’t wait to watch Kelly’s video tonight, I am always looking for quick strength workouts to do at home! I need something quick because I lose interest way too fast…

    Love countrey music! Always have, but I have a question for anyone from the South what exactly is chicken fried steak? I feel like I am having a very Jessica Simpson moment b/c I do not know if it’s chicken or steak! Lol.

    I ordered some Barney Butter after reading your blog a few months ago. I am wondering why everyone uses it. Does it have more nutrients, lower in fat, calories? I love it, but I am just wondering why everyone chooses it over other butters.
    I know you would be the perfect person to fill me in on all the great properties of Barney Butter.

    I lurrrrve lurve lurve country music. It all just makes me want to run around in my bare feet dancing like crazy. I’m not from the south but my dad drives a pickup and listens to country 🙂 (not a hick though – he’s a pension consultant; it’s like his secret side life or something.) So I grew up on it.

    Another great lunch I need to try . I had your tuna salad today and tonight Im making your tortilla loaded with all that good stuff on top. Thank you for giving me inspiration to eat well! I feel so good. I love your jellybelly idea for a little sweet treat. I love those sugar free mini York peppermint patties. THere perfect for the sweet tooth and only 15 cal. for one.
