Hello, hello! I hear the internet is back at home!! That makes me glow inside with happiness
I’ve been busy all morning putting together a blog start-up proposal for work and working on designing a poster. If there’s one thing I’ve learned during my internship it’s that I really enjoy design!
I was getting really hungry around 11 and had tea and it magically held me over till 12:45 to eat lunch. Imagine that. I’m just now digging in to my sandwich and it’s heavenly!
Today’s lunch was made with love by Matt last night after I realized I would be home late. I asked if he’d put together something with leftover grilled tofu and avocado and he assembled this killer sandwich.
Grilled tofu, avocado, mustard, spinach on Flax Oat Bran (my favorite Great Harvest bread!)
A juicy organic pear on the side, which I sliced at work and sprinkled with cinnamon that I packed in my lunchbox.
And a Biscoff to end on a good note
(I also accidentally packed the whole package of Biscoff’s in my lunchbox instead of putting them back in the cabinet so another one might end up in my mouth!)
Weekend’s almost here!!

So sweet of Matt to make your lunch for you! The sammy looks great! You guys make such creative sandwiches!
Matt is so sweet
I wish my man would make me lunch sandwiches too
How do you pack cinnamon in your lunch box? I always wish I had mine with me at all times but know that, my luck, it’d explode all over my bag if i brought the actual shaker
I packed the whole shaker!
That does look like an awesome lunch. Did he also take the photo for you?
no I took them this AM
That sandwich just looks so delicious and sounds amazing with the avocado!
How can it be a killer sandwich without any kind of fruit spread?!
So nice of Matt though
extra Biscoffs are definitely a happy accident!
I cannot get enough avocade lately, so this looks especially delish!
Tea is always a good “snack” when you have no access to food! So nice of Matt to make such an incredible sammie. Most guys would make a PB&J and call it a day! Happy Friday
What a sweet husband and awesome looking sandwich.
Hehe, how do you “accidentally” pack the whole box?
I really did!! It’s a sleeve of them (halfway gone) and my brain fogged and I put them in my lunchbox instead of the cabinet!
that sandwich sounds so great…’specially the bread part
i need to see if there’s a great harvest here in colorado and hit them up weekly! hope your friday is killer!
YAY for the return of the internet, what a relief!
Love the look of that sandwich – I think tofu is fast becoming one of my favourite foods…love it
I thought of you the other day when I saw Biscoffs at Walgreens. I almost bought them, but realized I would have eaten them WAY too quickly!
Nice of Matt to make such a nice lunch for you! I am so ready for the weekend! My brain needs a break…
Wow what a great sandwich! You are a lucky girl
I’ve never had tofu in a sandwich before – sounds great!
That sandwich looks perfect! And perfect way to start the weekend knowing that the internet is back on!
Pears are really good recently; organic Red Bartletts are showing up again and they’re so juicy. And I’d like to add that I always bring the whole cinnamon shaker when on vacation.
I recently switched from regular McCormick to their organic “gourmet collection” Saigon Cinnamon and you can smell AND taste the big difference!
The FOB is the best!
Awww, so sweet of the hub to make your lunch for you
Looks very balanced!
The sandwich looks great. I haven’t tried tofu yet but I’d like to. Awesome for your internet being back to!!
Q: Does he care that you asked for specific items to be in your lunch? My husband HATES it when he offers to make dinner and I ask him to use certain ingredients or not use certain things. He wants to be in complete control when it is his turn, and I have a really hard time giving it to him!
Matt’s pretty laid back
Ooooh that sandwich looks all kinds of delicious!
Awww that’s so sweet that he made you lunch – LOVE that! I think I have come to the conclusion that EVERY SANDWICH should include AVOCADO – it’s so good on sammie’s.
An entire package of biscoff would be a major downfall for me. They are heaven in a cookie.
I love when my job gives me a chance to do design work to advertise our programs. It makes me feel creative.
glad you have your internet back! i go crazy when mine is down!
Yummy lunch! I haven’t had tofu in ages, but I’m on a serious tempeh kick as of late.
Love the avocado addition in your sandwich too…yum!
Yummm.. I had a sandwich almost exactly like that (without tofu) on GH bread yesterday and it rocked!
That sounds so good! I’ve never had tofu on a sandwich, I bet it’s awesome with avocado.
Jenn
I read every post too but usually on my phone so I don’t comment. You’re the best
That sandwich looks so great.
What a wonderful husband, and that does sound like a good lunch.
Mmmm, biscoff
Grilled tofu and avocado is one of life’s best combos, in my opinion. I highly recommend adding BBQ sauce to the mix as well!
Your lunch looks great! I would be afraid to let my fiance make my lunch. It’s actually quite entertaining trying to think of what he’d make me
Aww, everything tasted better when it’s made with love!!
