I’ve waited 2.5 years for this day!! The day I am 1 exam away from being a Registered Dietitian.

My first chemistry class January 2008.

Lots to type to reflect on my experience, but I’ll save that for a day when I have some time to sit back and thoughtfully put it together.
I didn’t sleep all that well last night. I actually haven’t slept well in a few weeks. All that’s going on has my mind rolling 24/7. I woke up to Matt showering last night this morning and couldn’t go back to sleep.
When I did, I dreamt I was coming out of a yoga class in a field and I passed a bunch of my friends from high school. Then a bunch of friends from college. Someone slipped and told me the city was honoring me for something but they didn’t know what. Then I woke up!! Guess I’ll never find out
I decided to have yogurt today. I haven’t been eating oats because I’ve had to be at work an hour earlier than the rest of my time and it’s meant getting up at 5:30 and less time in the kitchen. Oats will be back tomorrow!!
I made what Caitlin calls "un-overnight oats." Basically the same ingredients but mixed on the spot instead of mixing them overnight.
I have to say, this wasn’t nearly as good as overnight oats! It lacked that doughy thickness.
The Mix
- 1 container Oikos (forgot how delicious Stonyfield yogurt is!!)
- ~1/4 heaping cup rolled oats
- 1 tbsp chia seeds
- 1 banana
- ~1/4 cup milk
- Nuttzo PF
- Lingonberry preserves
- A nice little dollop of Biscoff
Same old, same old.

I can’t believe this is my last day!!! Going to leave now so I get in early. I’ve got Scuffins for the office!!

This sounds sort of like “The Thing” that I recently tried. You combine a frozen banana and raw oat on the spot. The only difference is that “The Thing” is awesome!

I’m excited for you. You are one of the most level-headed and positive people I have “met”. You don’t complain…you’re just real.
Does oikos come in 6 oz containers? I assume its not the same cause of no milk…and of course not left to soak up overnight….but I think that if you left it alone for a 10 minute span or something it might work.
I am 29 years old now. I have 2 university degrees ( undergrad 4 year degree, and a professional program 3 year degree). But I have always kinda wanted to go back to do the RD. I would have to 2 years to complete the requirements, then a year of unpaid internship.
The problem is finances. I am in extreme financial debt from my first 2 degrees (and I hate – hate- my field with a passion…its bad)…so its not looking good for me. At 29…I feel kinda sad about it all.
You are smart to have followed your desires vs. doing something just “because” something had to be done. I assume you are still super young also.

Congratulations! I still have a semester worth of classes to go before I can start applying for internships, and I have to say that reading your blog has given me a little shot of hope and motivation on days when the crazy competition and/or stressful work/class/volunteer/meeting schedule was getting me down.

Congratulations on your accomplishment. I once remember my mom telling me that right before she decided to go to college to become a teacher (this was after all of us kids were finally in school) that she had said to my dad… “But I won’t be a teacher for 4 years which will make me 36.” And his reply was… “You will be 36 in 4 years anyway, so you might as well be a teacher when you get there.”
I always take that in consideration when thinking about a goal that takes a major time investment.
Somtimes fathers really do know best.
I am glad your 2.5 years of schooling are complete and now you can get in to the heart of the job.

Congrats Kath!!!! I definitely remember what it was like on my last day as a dietetic intern, too, and I’m so happy for you! Such a great, freeing feeling to be done with all the internship hours. Best wishes with studying for the RD exam, too. I’ve been using the RD in a flash cards, which are pretty helpful.

Now I know where Kath gets it! …you know, hey if the ‘yogurt’ (or whatever) is a little past the expiration, looks OK and passes the sniff test, go ahead and eat it… I’ve always done this (hate to waste), and am just fine. Hadn’t seen Rascals in decades-fun! (I kept waiting for the message to come out different by the time it went all the way around–kind of like when the first person whispers something and by the time the last person says it outloud it isn’t even close to the original.) Enjoy all that Mush and Milk next week. Ooohhh, BTW, Kath, Congratulations!!! Had no doubt you could do it. Enjoyed the journey–seemed as if everyone was routing for you along the way too. You’re truly an inspiration to many.
Actually Mary Frances, the “milk” was really Plaster of Paris. Someone had accidentally spilled the milk in the kitchen (I think) and had the bright idea to substitute P of P. The children put the “milk” on their mush and it hardened, preventing them from eating it. The episode is called Milk and Mush and you should watch it all — mush makes a reappearance later on and I won’t spoil it for you. I couldn’t find the entire episode to post it.

Actually, I’ll give you a little now: I took one month and just studied and studied… I had my exam date scheduled and the week of the exam got sick of looking at all the study material. Schedule your exam for not too early but not too late. I gave myself time to wake up naturally and a buffer time for finding the place.
I took about 1 hr and 15 minutes to complete the exam. The most nerve wrecking part is when you are filling out the survey at the end and your exam is being calculated. The best part of the day is when your computer screen switches to it saying you passed and you walk outside to the attendant at the desk to get your score

What’s your favorite brand of Greek yogurt? I’m actually not a big fan of Oikos Greek… it’s never as thick as other brands. I prefer Fage.

First of all, congratulations! My husband is just starting his second undergrad, hoping to one day be an RD. It’s stressful in a lot of ways for both of us, but I’m so glad he’s doing it.
Secondly, I tried overnight oats and couldn’t stand them, but “un-overnight oats”/muesli is delicious, in my opinion. Meanwhile, I have another friend who can’t stand rolled oats except in granola bars. Funny how that works, right?

Congratulations! I’m pretty much in the same position now as you were 2.5 years ago… I’ve been seriously considering making a change in education/career goals, and I think I’m going to take the plunge into the world of nutrition! I’m just 3 years away from a PhD in English, and I hate to stop short of attaining that, but the more I think about it, the more I think my true love is really nutrition. Looking back over your journey is very encouraging, especially since you also come from a humanities background! Hopefully that will be me in just a few short years! =)
