6 Months Of Healthy Lunches

HERE IT IS!!!

The final lunchbox!!!!

6 months. Ne’er a day off. Many, many lunchboxes!! Lots of healthy, delicious foods. If I can do it, anyone can.

Lunch today features a salad halfway made with leftovers from last  night’s tempeh stir fry. A bed of romaine + frisee and sautéed veggie topping. Drizzled in Garlic Gold.

I will miss eating lunch with all of my RD friends everyday!! They have definitely made this internship experience one of friends and good company – a nice break during a busy day of work 🙂

    Packing your own lunch is definitely the way to go. Healthier, you know what you’re eating and sooo much cheaper. When I lived in NYC I would watch my coworkers blow $60 a week on lunch. So silly! Save that money for something worth it.

    That bread looks delicious. Is it Great Harvest? I’m lucky enough to live within walking distance of one, but I’m always hesitant to buy because no one else in my family eats wheat bread and I’d hate for it to go bad. Any idea how well those freeze?

    Just pure curiosity- how did you get a 6 month internship? Or maybe I should ask how in the world do they squeeze all of the required hours into 6 months? All of the internships at my school are 11 months- it seems like a long time, but I can’t imagine how hard it would be to do all of those supervised hrs in half the time.

      1040 hours…no vacation days… no holidays.

    Well done and congratulations! I hope your exam goes very, very well.

    Two quickie questions as I’ve started to experiment a lot more with your recipes: :))
    1) Does your Vita-mix take the place of both your blender and your food processor? I have a blender but find it useless for hummus and “thicker” things (ie bean burgers). I’m trying to carefully consider my next purchase.

    2) I cannot eat carrots so I substituted zucchini for the carrot in the bean burger recipe you shared a while back. Oh dear, too much liquid. Do you know of a better vegi substitute choice?

          I actually did grate it but never thought of DRYING it – wow, ingenious! I’m sure that will work – bulk and flavor (and nutrition) but not moisture.

      Re. Vitamix, I don’t think it takes the place of a food processor. That said, I haven’t really used it for food processor-like things.

    To the bean burger questioner … when I made them, I put in some thawed frozen corn and some diced red pepper. Those worked really well!

    This looks very tasty. I wish I had found your blog sooner to see what you have been eating all this time. Maybe you would consider a round-up post of what you’ve learned? 🙂 I’ve been thinking about lunch boxes recently, too, since making your own is so much healthier than buying food at work (at least for me and a lot of people I know).

    Good luck on your last day! I totally agree with you about anybody being able to pack their lunch everyday. I’m up between 5 and 5:30 every week day and I always take my lunch. Even when I have a lunch date (which is rarely). I’m always afraid something is going to come up and my lunch meeting/date will get postponed. Plus it’s waaaaay cheaper to pack a lunch. 🙂
