This afternoon, the following G-chat conversation ensued:
We had salmon with brown rice, beans, seitan and a fat slice of lasagna in the fridge. I couldn’t believe that Matt wanted the thing I wanted the least! No rock, paper, scissors necessary!
He came home tired (from staying up too late last night watching LOST!) and we were both thankful for an easy dinner night.
I surrounded the lasagna with kale and microwaved it all for 4 minutes on power level 6 (in case you want to replicate this “recipe”
) Then I topped it with some more smoked gouda and nuked for 30 seconds more. The kale was drizzled in EVOO and lemon juice plus a sprinkle of salt.
Served with lemony water!
Dessert was the last one of these… plus a glass of milk to wash it down because I was feeling pretty hungry!
Nite!

I want me some of that gouda!
Allie, you take the gouda, I’ll have that cupcake!
I’ll take both!
That’s great you didn’t have to fight over leftovers – perfect couple!
I had leftover pasta with kale tonight. Twins!
I want a cupcake! I think I know what my sweet is going to be Saturday!
Haha. No Rock, Paper, Scissors!
Ya’ll are cute.
I love leftover night. You look so glowing-y in your baby pictures today. Gah, I am SO JEALOUS of your pregnancy.
look at all that kale! seems your veggie aversions are subsiding
Easy dinners are the best! Now pass me a cupcake!
Ahhhhh! You are making me so jealous with the cupcakessssss!
that kale salad looks so good right about now! I am traveling and fresh fruits and veggies are such a luxury one takes for granted til they’ve eaten airplane and road food for a day!
I have been a kale fiend lately! Just made a pureed kale soup today as a matter of fact!
That little leaf plate is so adorable! I love all things trees & leaves.
Sorry if you said this a million times already on the blog, but where is it from? [Thank you].
Cb2…. I think!
Funfetti icing is my favorite! Hope you enjoyed it
I love easy nights with delicious leftovers!
I’d like me some Lasagna! I looove Lasagna… the last time I had some was probablllyyyy… Over a year ago? Its rare when we get to eat some. My mother only makes them for special dinners or on my demand when she decides to invite people over lol. I might try and make a small one loaded with veggies!
The only leftovers from my birthday and Easter dinner was my Dairy, Egg and Peanut/Tree Nut Free Carrot Cake…my favourite part of the dinner! lol!
Ah, when leftovers can be divided, there is a happy fridge indeed. Just cleaned mine out today — lost track of too much with a swamped bakery week last week. Back on track today!
um, I would like that cupcake please.
I love leftover lasagna! Yum!
Leftovers are definitely great for a tiring day!
I pushed my leftover Easter dessert to my diabetes clinic coworkers. Twisted?
It’s always nice to have left overs!
Crazy weird combinations are born constantly
Now my hubby and I both cook extra large meals to have left overs
Haha I was feeling lazy tonight, so I had $1 pizza at the pizza place next door. (Their pizzas are normally $12 so it’s kind of a steal!) Sometimes it’s nice to be a little lazy
Kale is next on my to-try list. You seem to cook with it so often, and it always looks delicious! Unfortunately, it’s hard to find in Wisconsin until Farmer’s Market season.
P.S. If you or fellow KERF readers are interested in free foodie loot, I’m hosting my One Month Blogiversary Giveaway this week.
Now you’ve got me craving cupcakes! I had to settle for a marshmallow Peep
Isn’t it nice to have such lovely daylight later into the evening for sweet dinner shots?! love springtime and summertime
Leftovers for dinner are the best…they taste even better the second time round!
I’m all for quick dinners!! Coming home starving with nothing simple to whip up can be pretty depressing, haha! =)
My boss went on vacation last week to visit his parents, who live minutes outside of Charlottesville, and I made him promise me he would go to GH. He came back today and brought dog treats and bread in tow. I was very thankful. Whole grain goodness – delicious. He also said he had a sandwhich while he was there, which was delicious and changed his view on veggies and bread. He will now eat cucs on all sandwichs!
Oh yay! Enjoy!
Love it when that happens… fights over leftovers can get nasty real quick around these parts! ;D
This is what marriage is all about…
Love a quick and easy dinner!
“Dibs on the old salmon” just made me laugh!! Also, just wanted to let you know I’ve had great success with freezing the Cville Crunch Granola. I just transfer it to the fridge when I’m ready for the next bag and its delicious!!
Wonderful! Thanks for the feedback
Leftovers are my favorite because you get to eat something you love twice.
I want that cupcake!
Hi Kath!
The word ensued means that something followed as a result of something else. For example: I smashed the pie in his face. Hilarity ensued. Your first sentence should read: The following conversation took place. Or perhaps occurred.
I guess the problem is that I didn’t finish the sentence: “This afternoon, the following G-chat conversation ensued after Matt and I started talking about dinner”
did you have the kale raw? if so, can you estimate how much olive oil? and would balsamic vinegar work in place of lemon? thanks!
No it was microwaved with the lasagna. About a tsp of olive oil drizzled on top
Lasagna topped with cheese? Yes thank you.
Love when things work out nicely that way!
BERF Comment actually: (but site isn’t posting my comment, odd glitch- so sorry if it suddenly pops up 5 times or something later!)
Anyway, was going to mention benzoyl peroxide is still on the “safe” list & is a cheaper acne option!
