Second Breakfast

IMG_8830-3Blog

You know how so many of you leave comments that you just ate breakfast but after looking at blog photos you want to eat all over again? I’m totally having that this morning with my own bowl of oatmeal 🙂 I got sidetracked between eating and blogging and even though this was a HUGE filling bowl, I want to eat another!

IMG_8828-2Blog

This was one awesome bowl of whipped banana oats with strawberries and cottage cheese stirred in at the end. Topped with sunbutter (nearing the end of the jar!), salty p-nuts and coconut!

Super voluminous today too!

IMG_8827-2Blog

Have a wonderful Tuesday! I love Tuesdays now because I look forward to my prenatal yoga class (and also like that since I’m doing an evening workout I can get up and shower right away!)

I love how you shower before your workout. I only shower IF (and when!) I workout :).

It depends on how much time will be going by between shower + workout! If there’s a large chunk, a shower is always worth it.

We had similar breakfasts this morning – I made a big bowl of strawberry oats – but I wish I had thought to add some peanuts to mine! I went with granola and now I’m (once again, even despite similar breakfasts) having breakfast envy!

it does look like an awesome bowl of oats. when I make them super “voluminous” though, I usually don’t snack for a long time.

I can’t wait until strawberry season!! I miss them bad.

Thanks so much for sharing the idea about cottage cheese to oatmeal. I have done it twice this week, and I love it! I think I am developing an intolerance to certain nuts, so this is a great way to add some protein to my breakfast! I add a boatload of cinnamon to my oatmeal which gives it a really nice kick!

Strawberries + cottage cheese + oatmeal is always a winner. I also like to mix it up and use part oats and part grains (couscous or quinoa). The texture is amazing!

    Hi Kath,
I have a question for you: when you make stovetop oatmeal for one (or would it be one and a quarter now that bebe is here?) how much oatmeal/milk/water do you use? And do the chia seeds contribute to the overall “volume” of the resulting bowl?

We are in CT, and are anxiously awaiting the warmer weather so we can start having overnight oats, which we discovered thanks to you! Somehow, the thought of it is not appealing until the temperature starts to rise. For now, I’m still slaving away over a hot stove. 🙂

The recipe I use almost every time is here on the Tribute To Oatmeal page: https://www.katheats.com/kaths-tribute-to-oatmeal

I think the key to real volume is stirring more bulky things in. The strawberries add a ton and the cottage cheese does too. Pumpkin is the ultimate volume adder!

        April 10, 2012 at 1:29 pm

Do you add the cottage cheese in while it’s still on the stove? I’m not sure if the aim is to actually “cook” it or just stir it in at the end… I read once where you compared the strawberry & cottage cheese oats to a strawberry cheesecake taste, and that sounds mighty good!

I think I would loooove the pumpkin, but the husband…not so sure. What is it with guys resisting pumpkin? 😉

Yes, in the last minute of cooking. Basically when the liquid is absorbed and then I stir it in and once I decide that it’s hot, I cut the heat and pour in a bowl.
