This has been such a rejuvenating weekend and just what I needed. Hope I can get reservations at the KERF Spa again soon! From nourishing meals to fun exercises to relaxation, this weekend had it all (wish Matt and I could have spent more time together though!)
This afternoon I worked on an academic project for my internship for a bit and then did something I haven’t done in ages: lounged on the couch and watched TV in my sweats! Glorious. I never got around to packing up all my big dishes this weekend, but that can wait. It’s a sunny day project anyways.
Around 4:30 I knew there was nothing in the world I wanted more than some Great Harvest bread. My body is still weirdly hungry but not hungry. I have determined that my hydration must be the cause. But the bread did wonders for my legs – they felt so much better afterwards!
Flax Oat Bran topped with Nuttzo and Crofter’s Superfruit spread
While I vegged, dinner cooked!
Slow-Cooker Pineapple Chicken
Recipe here and for printing, here —>
+ 4 hours =
SO SO SO easy. I served a heaping spoonful over baby spinach and leftover turmeric rice and garnished with cilantro, avocado and Cholula!
I’ve got a suuuuper early morning tomorrow – and overnight oats brewing in the fridge! Going to watch 30 Rock and then get in bed early. Nite!

The Paris Food Blague
Dinner looks great! Pineapple and chicken are a match made in heaven.
Did you come up with that recipe yourself?
Sort of. I came up with pineapple chicken and then I remembered someone had told me about a similar recipe and I ended up doing pretty much the same thing!
i have been cooking with my slow cooker a ton! its easy to make & clean up.
Yum! Looks delicious! Enjoy 30 Rock…it’s a funny one!
That dinner looks amazing!!!
The avocado on top makes the dish look perfect! Yum
YUM! I love the sweet/savory flavor that pineapple adds to a dish. You’re definitely redefining the “Campbell’s slow-cooker recipes” stereotype!
Your dinner looks soooo good. And yes 30 rock was awesome
This may sound really odd, but for some reason, I was just thinking about you today and how I NEVER seem to see you just VEG out! LoL, I swear, I was just thinking to myself, “that Kath is always on the go!”
So glad you got some down time to yourself this afternoon. You deserved it!
Oh my gosh I don’t know HOW to veg out!! Seriously, the minute I sit down I think of something else to do. Glad I was able to relax today!
Me too girl! Me too!
Sunday afternoons definitely call for some veg out time on the couch
Sometimes my stomach feels off after a longer (or faster) than usual run. I often feel hungrier the day after a long run…
I made a similar crock pot dish before. It was delicious! Looks like you had a great weekend!
Cholula! YUM!
Slow cookers make the best meals…I wish I ate chicken so that I could try this!!
Mmm… dinner looks good… per usual!
Slow cooker meals normally turn me off, but that looks amazzzinnnggg.
I just got caught up on this week’s 30 Rock — amazing, as usual.
I’m so glad you enjoyed the weekend! And what a fabulous dinner to cap Sunday night off!
Yay for a relaxing weekend! Your dinner looks wonderful and so simple, too!
yum..pineapple! I love overnight oats…even in the cold winter! Enjoyed with a cup of tea of course!
that chicken looks really good! have a great monday tomorrow:)
I love using my crockpot. It always makes thing so tender! Glad you recooperated this weekend. Hope you have a great week!
Bread looks great!
How can I get a reservation a the KERF spa?!
I definitely could have used a slow cooker for the shredded chicken I made tonight. Not sure what’s taking me so long to get one!
This looks yummy. I’ll try it with a meat substitute. I’m a vegetarian and it can be hard to find meatless slow cooker recipes. I am posting healthy slow cooker recipes on my blog http://healthyslowcooking.wordpress.com if you want to take a look.
That looks fantastic!
I might have to make that next Sunday!
Yay great weekend! Don’t you just love your crockpot? I love mine. I love coming home to a yummy smelling house and an awesome meal!
Yum, avocado! For some reason that dish says tropical to me. Must be the pineapple. Love sweet + savory.

I’m glad you had a relaxing weekend =) I think I’m going to copy you and prep some overnight oats – a first for me!
OMG I’m making pineapple chicken this week! That sounds so good! Thank you so much for sharing this recipe. I can’t wait to try it.
Spending the day relaxing on the couch in your sweats is so rejuvienating sometimes – I wish I had more time to do it!
I love my crock pot and am trying to experiment more with recipes – there is nothing easier.
Enjoy your overnight oats in the morning – I love waking up to a pre-made breakfast!
dinner sounds terrific! i love the combo of pineapple with chicken.
I need to get out my crock-pot and make the pineapple chicken recipe this week! It’s been a while since I’ve used mine.
hey kath,
this is unrelated to tonight’s post, but i wanted to say thanks — i tried wheatberries for the first time with dinner tonight (they don’t sell them in my neighborhood, but when i was across town at a grocery store i’ve never been to before, i thought of it from your blog and other recipes) and your “wheatberry lesson” was very helpful about how to prepare and the nutritional information. i used my own recipe tonight, but hope to try some of your wheatberry concoctions too!
Awesome! You’re welcome!
Ohhh I’m glad you liked the recipe. It’s on my menu for this month again. It’s one of my favorites especially over couscous. But I’ll have to try adding the avocado next time.
Oh that looks so yummy and healthy!
Dinner looks really great.
So glad you had a relaxing weekend.
You are always so busy!
Night cheese!
Thanks for the overnight oats idea. I made mine tonight, too- with almond milk and a smashed banana. Can’t wait to see how it looks in the morning! Yum!

That looks delicious
OH I love 30 Rock! I’ve got season 2 waiitng to be watched in my DVD stash, I can’t wait!!
Have a good evening
*sigh* looking at your blog everyday makes me with that i could just live with you and Matt, and you guys could be my personal dieticians/personal trainers and cook me delicious foods every day. LOL
You had me at pineapple!
that looks delish, cant wait to try it!
Just made this chicken dish – with crushed pineapple (that’s all I had) and it was yummy – I was so hungry by the time it was ready that I forgot all about the cilantro and avocado – but it was still soooo yummy ! Thanks!
