One heckofa lunch!!!

Bursting with flavor, color, nutrients, volume & texture –

IMG_6813BlogIMG_6821Blog IMG_6822Blog

I made a big salad with a foundation of:

  • Spinach
  • Green pepper
  • Carrot
  • Cucumber

Dressed in:

  • Olive oil (~1 tsp)
  • Honey (~1 tsp)
  • Sea salt
  • Black pepper

Topped with:

  • Cranberry BBQ chicken from last night’s dinner
  • Rice dollops from last night’s dinner
  • Goat cheese
  • Lauren’s nuts

Served with some sweet potato terra chips

It was one to remember : )

Before lunch, Matt and I got the call that we would likely need to be at the hospital around 2PM to pick up Karen, who is doing OK this morning. So we got the go-ahead to go out for a run, which covered 5 glorious warm, sunny miles.

Today’s running discussion topic: health insurance. Ugh!

We should be departing any minute. Not sure of our evening plans, but we might end up watching a movie by the fire at Karen’s house since we’ll be spending the night. We will have to save any wild and crazy plans for next year

What a great lunch! I love the way pretty much anything goes when topping a salad.

2 Cathy B. @ Bright Bakes December 31, 2010 at 2:04 pm

Oh my. Barbecue on top of salad? Plus goat cheese? That has got to be the best of all worlds!
I’m jealous.

great looking lunch!

4 Sarena (The Non-Dairy Queen) December 31, 2010 at 2:08 pm

Sounds like a perfect plan for tonight…that is what I will be doing with my boys too! Health insurance is a weighty topic. I hate dealing with it, but ya gotta have it! Lunch looks delicious!

5 Stacy @ Every Little Thing December 31, 2010 at 2:08 pm

I always forget to add honey to my salads! Sounds delish :) Have a happy new year, even if you’re sitting at home in front of the fire!

6 Jen H December 31, 2010 at 2:08 pm

I’m always curious- how do you have a conversation while you’re running, without getting too out of breath? Were you always able to do that, or did you build up to it by running so often?
Happy New Year!

7 Kath December 31, 2010 at 2:19 pm

Basically on the hills I have to say “Hold on, I can’t talk” and then I can talk again on the next downhill/flat :)

8 Amy December 31, 2010 at 4:30 pm

I really had to build up to being able to talk while running!

9 Gabriela @ Une Vie Saine December 31, 2010 at 2:12 pm

I’ve been LOVING salads for lunch lately too. So full of nutrients- makes me feel energized for the rest of the day! Glad Karen is doing well- enjoy your NYE!

10 JessicaEn December 31, 2010 at 2:14 pm

Heckofa is so TOTALLY a word 😀

11 Melissa @ I Never Imagined December 31, 2010 at 2:16 pm

Mmmmm I was tossing up between salad or chips and dip for lunch… now I’m totally going with the salad! Yay!

12 Averie (LoveVeggiesAndYoga) December 31, 2010 at 2:26 pm

I love the title :)

And soooo happy that Karen is coming home today and doing well!

Health insurance…omg I would love to find an option that doesn’t cost as much as our rent. Self employed, preexisting conditions, make it an impossible situation. Hope you guys have better luck w/ insurance than we do!

13 Camille December 31, 2010 at 2:31 pm

Oh my, that is oh good looking lunch!

14 Meagan December 31, 2010 at 2:32 pm

I’m glad Karen is recovering ok, what a blessing and relief. What kind of BBQ sauce do you use? My fav the Original Kansas City Bullseye by Kraft. I definitely grew up on it and they recently changed the recipe from HFCS to sugar – hurah! Have a great run. I’m going to run outside today too instead of going to the gym – it’s actually 50 degrees out! CRAZY. I’m not doing anything (literally) for New Years. I’ve never really considered it a legit holiday. Sleep sounds good! Im exhuasted

15 Marci December 31, 2010 at 2:37 pm

Health insurance makes me blue in the face and could turn my hair gray! Good thing it’s a pretty brown. I have done a lot of research on individual/group coverage, costs, what plans cover, etc. I hate the whole system but have become knowledgeable if you have a question! Happy new year!

16 Leila @ Spinach and Skittles December 31, 2010 at 2:39 pm

I’ve heard, don’t know if there is any truth to it, that Asuris has the best coverage at the best cost if you don’t go through a large company policy. Are you guys looking to provide health insurance to your employees?

17 lynn (The Actors Diet) December 31, 2010 at 2:43 pm

that is one heckofa salad, indeed. my husband polished off lauren’s nuts, i think? (that sounded so horrible.)

18 [email protected] December 31, 2010 at 2:47 pm

19 Heather @ Side of Sneakers December 31, 2010 at 2:49 pm

Ahhh health insurance is probably one of my least favorite topics of all time…ahdkjfjhdk!!!

20 lissa December 31, 2010 at 2:57 pm

So glad Karen is getting out of the hospital soon. I know she knows how lucky she is to have you taking care of her and staying the first night home. Happy New Year, my very best to Karen for a speedy recovery.

21 Stacey December 31, 2010 at 3:14 pm

Oooh, you can’t beat a huge salad with tons of toppings. After the Christmas celebrations I may need to make myself a few to make up for all the feasting!

22 Kate (What Kate is Cooking) December 31, 2010 at 3:16 pm

That is a huge salad! I love voluminous meals :)

23 Lauren at KeepItSweet December 31, 2010 at 3:46 pm

Hope you still have a fun, relaxing night and that Karen continuously keeps feeling better! 😀

27 Sana December 31, 2010 at 4:27 pm

Enjoy the sleepover at your MIL’s house!!!!
Have a lovely New year!

28 Amy December 31, 2010 at 4:31 pm

I love that your salad bowl is almost the size of a mixing bowl!

29 Sarah December 31, 2010 at 4:34 pm

I think low-key New Years spent with family and friends are the best kind, anyway. Happy New Year!

30 Kaitlin December 31, 2010 at 5:10 pm

Give our best to Karen! Glad she’ll be able to ring in the New Year surrounded by love :)

34 Samantha Angela @ Bikini Birthday December 31, 2010 at 5:42 pm

All I can say is that, when it comes to healthcare, I’m happy I live in Canada

35 J3nn (Jenn's Menu and Lifestyle Blog) December 31, 2010 at 6:09 pm

That salad is AWESOME!

Self-employed + health insurance is brutal. Dustin and I have a better deal now, but Empire Blue Cross wanted $2200/month since this new health care law. It really screwed with self-employed people!! :(

36 faith @ gracefulfitness December 31, 2010 at 6:10 pm

Health insurance, ugh is right!!! We need to talk.

37 Anna @ ciaotochow December 31, 2010 at 6:18 pm

Can I please devour your lunch? Yum yum! Never would’ve thought to put dollops of rice on my salad!

38 ashley nicole December 31, 2010 at 6:32 pm

i am LOVING that bowl, girlie!

39 Stormy December 31, 2010 at 6:52 pm

Happy, Happy New Year! In this town, you should have titled it “Heckuva!”

40 Kath December 31, 2010 at 7:30 pm

41 Amalfi Girl December 31, 2010 at 6:57 pm

That is a beautiful salad!

42 stacey-healthylife December 31, 2010 at 6:59 pm

Sometimes low key New Years Eve’s are good too.

43 Chelsea @ One Healthy Munchkin December 31, 2010 at 7:10 pm

I love making salads with leftovers from dinner!

I’m so glad that Karen is doing well today. Hope you have a great NYE!
