One heckofa lunch!!!
Bursting with flavor, color, nutrients, volume & texture –
I made a big salad with a foundation of:
- Spinach
- Green pepper
- Carrot
- Cucumber
Dressed in:
- Olive oil (~1 tsp)
- Honey (~1 tsp)
- Sea salt
- Black pepper
Topped with:
- Cranberry BBQ chicken from last night’s dinner
- Rice dollops from last night’s dinner
- Goat cheese
- Lauren’s nuts
Served with some sweet potato terra chips
It was one to remember : )
Before lunch, Matt and I got the call that we would likely need to be at the hospital around 2PM to pick up Karen, who is doing OK this morning. So we got the go-ahead to go out for a run, which covered 5 glorious warm, sunny miles.
Today’s running discussion topic: health insurance. Ugh!
We should be departing any minute. Not sure of our evening plans, but we might end up watching a movie by the fire at Karen’s house since we’ll be spending the night. We will have to save any wild and crazy plans for next year

What a great lunch! I love the way pretty much anything goes when topping a salad.
Oh my. Barbecue on top of salad? Plus goat cheese? That has got to be the best of all worlds!
I’m jealous.
love,
cathy b, @ brightbakes
great looking lunch!
Sounds like a perfect plan for tonight…that is what I will be doing with my boys too! Health insurance is a weighty topic. I hate dealing with it, but ya gotta have it! Lunch looks delicious!
I always forget to add honey to my salads! Sounds delish
Have a happy new year, even if you’re sitting at home in front of the fire!
I’m always curious- how do you have a conversation while you’re running, without getting too out of breath? Were you always able to do that, or did you build up to it by running so often?
Happy New Year!
Basically on the hills I have to say “Hold on, I can’t talk” and then I can talk again on the next downhill/flat
I really had to build up to being able to talk while running!
I’ve been LOVING salads for lunch lately too. So full of nutrients- makes me feel energized for the rest of the day! Glad Karen is doing well- enjoy your NYE!
Heckofa is so TOTALLY a word
Mmmmm I was tossing up between salad or chips and dip for lunch… now I’m totally going with the salad! Yay!
I love the title
And soooo happy that Karen is coming home today and doing well!
Health insurance…omg I would love to find an option that doesn’t cost as much as our rent. Self employed, preexisting conditions, make it an impossible situation. Hope you guys have better luck w/ insurance than we do!
Oh my, that is oh good looking lunch!
I’m glad Karen is recovering ok, what a blessing and relief. What kind of BBQ sauce do you use? My fav the Original Kansas City Bullseye by Kraft. I definitely grew up on it and they recently changed the recipe from HFCS to sugar – hurah! Have a great run. I’m going to run outside today too instead of going to the gym – it’s actually 50 degrees out! CRAZY. I’m not doing anything (literally) for New Years. I’ve never really considered it a legit holiday. Sleep sounds good! Im exhuasted
Health insurance makes me blue in the face and could turn my hair gray! Good thing it’s a pretty brown. I have done a lot of research on individual/group coverage, costs, what plans cover, etc. I hate the whole system but have become knowledgeable if you have a question! Happy new year!
I’ve heard, don’t know if there is any truth to it, that Asuris has the best coverage at the best cost if you don’t go through a large company policy. Are you guys looking to provide health insurance to your employees?
that is one heckofa salad, indeed. my husband polished off lauren’s nuts, i think? (that sounded so horrible.)
Best salad evahhhhhhhhh!
Ahhh health insurance is probably one of my least favorite topics of all time…ahdkjfjhdk!!!
So glad Karen is getting out of the hospital soon. I know she knows how lucky she is to have you taking care of her and staying the first night home. Happy New Year, my very best to Karen for a speedy recovery.
Oooh, you can’t beat a huge salad with tons of toppings. After the Christmas celebrations I may need to make myself a few to make up for all the feasting!
That is a huge salad! I love voluminous meals
So glad Karen is doing well and coming home today! Happy New Year!
Oh how I love sweet potato chips! Have a great New Years Eve nursing Karen back to health!
I have some movie recommendations, not that you asked lol:
The Town
Mother and Child
These two movies are rally good…Happy New Year!!
Mmm…I love big ol’ salads. And I love sweet potato chips. Your lunch is a real winner!
Hope you still have a fun, relaxing night and that Karen continuously keeps feeling better!
Enjoy the sleepover at your MIL’s house!!!!
Have a lovely New year!
I love that your salad bowl is almost the size of a mixing bowl!
I think low-key New Years spent with family and friends are the best kind, anyway. Happy New Year!
Give our best to Karen! Glad she’ll be able to ring in the New Year surrounded by love
Looks like a great lunch!!!
Have a great new year!
wowww that salad looks absolutely gorgeous. so many colors and flavors, yum!!
now craving a huge salad
LOVE it! Hope it’ll hold over with all the alcohol tonight hahha
Enjoy your NEW YEARS!
All I can say is that, when it comes to healthcare, I’m happy I live in Canada
That salad is AWESOME!
Self-employed + health insurance is brutal. Dustin and I have a better deal now, but Empire Blue Cross wanted $2200/month since this new health care law. It really screwed with self-employed people!!
Health insurance, ugh is right!!! We need to talk.
Can I please devour your lunch? Yum yum! Never would’ve thought to put dollops of rice on my salad!
i am LOVING that bowl, girlie!
Happy, Happy New Year! In this town, you should have titled it “Heckuva!”
Haha!
That is a beautiful salad!
Sometimes low key New Years Eve’s are good too.
I love making salads with leftovers from dinner!
I’m so glad that Karen is doing well today. Hope you have a great NYE!
Glad to hear Karen’s doing OK. I’m sure she’ll be glad to see you two
That lunch looks amazing! I hate talking about insurance – I just tell the Husband “I don’t care – just do it!”
Rice in salad? Genius! I’m going to have to try it.
Great title and what a lunch! Awesome that you put rice in salad, so creative and the sweet potato chips look mouth wateringly good! Happy New Year!
Happy Happy New year, K!
That does look like a fantastic lunch! I love those bowls that have some many different textures and tastes (sweet, salty, tangy, whatever!)
Happy New Year to you!!
I lovee goat cheese!
Happy New Year Kath!:)
Beautiful! So many different colours and flavours – magnificent!
Your salad beast looks amazing– very similar to mine, crazy, colorful, nutritious and all over the place!
I just ordered that dishtowel from Crate and Barrel online sale– whee!
Oh my, a heckofa great lunch indeed!! nom. i love epic salads.
Heidi xo
Hmm, those terra sweet potato chips look awesome. I’ve seen them at the store but have been hesitant! Happy New Year!
