One heckofa lunch!!!

Bursting with flavor, color, nutrients, volume & texture –

I made a big salad with a foundation of:

  • Spinach
  • Green pepper
  • Carrot
  • Cucumber

Dressed in:

  • Olive oil (~1 tsp)
  • Honey (~1 tsp)
  • Sea salt
  • Black pepper

Topped with:

  • Cranberry BBQ chicken from last night’s dinner
  • Rice dollops from last night’s dinner
  • Goat cheese
  • Lauren’s nuts

Before lunch, Matt and I got the call that we would likely need to be at the hospital around 2PM to pick up Karen, who is doing OK this morning. So we got the go-ahead to go out for a run, which covered 5 glorious warm, sunny miles.

Today’s running discussion topic: health insurance. Ugh!

We should be departing any minute. Not sure of our evening plans, but we might end up watching a movie by the fire at Karen’s house since we’ll be spending the night. We will have to save any wild and crazy plans for next year

    Sounds like a perfect plan for tonight…that is what I will be doing with my boys too! Health insurance is a weighty topic. I hate dealing with it, but ya gotta have it! Lunch looks delicious!

    I’m always curious- how do you have a conversation while you’re running, without getting too out of breath? Were you always able to do that, or did you build up to it by running so often?

      Basically on the hills I have to say “Hold on, I can’t talk” and then I can talk again on the next downhill/flat 🙂

    And soooo happy that Karen is coming home today and doing well!

    Health insurance…omg I would love to find an option that doesn’t cost as much as our rent. Self employed, preexisting conditions, make it an impossible situation. Hope you guys have better luck w/ insurance than we do!

    I’m glad Karen is recovering ok, what a blessing and relief. What kind of BBQ sauce do you use? My fav the Original Kansas City Bullseye by Kraft. I definitely grew up on it and they recently changed the recipe from HFCS to sugar – hurah! Have a great run. I’m going to run outside today too instead of going to the gym – it’s actually 50 degrees out! CRAZY. I’m not doing anything (literally) for New Years. I’ve never really considered it a legit holiday. Sleep sounds good! Im exhuasted

    Health insurance makes me blue in the face and could turn my hair gray! Good thing it’s a pretty brown. I have done a lot of research on individual/group coverage, costs, what plans cover, etc. I hate the whole system but have become knowledgeable if you have a question! Happy new year!

    I’ve heard, don’t know if there is any truth to it, that Asuris has the best coverage at the best cost if you don’t go through a large company policy. Are you guys looking to provide health insurance to your employees?

    That salad is AWESOME!

    Self-employed + health insurance is brutal. Dustin and I have a better deal now, but Empire Blue Cross wanted $2200/month since this new health care law. It really screwed with self-employed people!! 🙁
