Somehow this photo got stuck on my Eye-Fi card last night – wheeee!

Today will be less intense – just relaxin’!

Starting with the best breakfast I can imagine, a cup of Joe’s and 57* of fallness!!!

Butternut Squash Oats!

IMG_2487 (640x427) (2)

If you had to ask me my very favorite style of oats and I HAD to pick JUST ONE it would be:

Pumpkin Cottage Cheese

Also exhibited here here here and here

Since Libby is still denying me her famous canned pumpkin, I had to improvise today with our leftover butternut squash.

Since Matt doesn’t care for gourds in his oats, I was forced to combine them separately. This was good because the squash had to be mashed a bit. I added some milk and cinnamon to help with that.

The Mix

[Don’t ask me why I left out the cottage cheese!?]

I had butternut squash OIAJ last night! Squash in oats is one of my favourites 😀
Have a good day!

2 Kristy @ KristyRuns.com September 5, 2010 at 8:28 am

Is it seriously in the 50s there this morning?!?! Wow, autumn, here we come! :) Looks like a great fall-ish start to a fall-ish feeling day. Enjoy!

3 Jessica @ How Sweet It Is September 5, 2010 at 8:31 am

Love butternut squash, can’t imagine it in oats though!

4 Meg September 5, 2010 at 8:34 am

It’s definitely starting to look like fall when Kath puts squash in her oats 😉

5 Hannah September 5, 2010 at 8:35 am

I love how chunky and fresh that homemade nut butter looks! I need to get a stronger food processor…

6 Laura September 5, 2010 at 8:38 am

Love the shadow puppet =P

7 christina cadden September 5, 2010 at 8:39 am

mm, I need to come to your place for breakfast. It always looks so good!

8 Annie@stronghealthyfit September 5, 2010 at 8:40 am

I’m addicted to pumpkin overnight oats, so I definitely think I’d like squash oats! I’m not picky :-0

9 A Teenage Gourmet (Sami) September 5, 2010 at 8:41 am

Whole Foods has pumpkin! I was in the same jam when I wanted to make my aunt’s pumpkin cookies. If you really start to get a craving, try WF.

10 Liza @ Health Nutting September 5, 2010 at 8:44 am

Looks so good! I love fall — I’m getting so excited! Can’t find pumpkin in my grocery store either. :( I might give the butternut squash a try! :)

11 Samantha September 5, 2010 at 9:12 am

Seriously guys! Have you checked the baking aisle? It’s there, not the veg aisle.

12 Kath September 5, 2010 at 9:42 am

YES. I have checked every aisle of multiple store. Trust me, I am a pumpkin expert. I refuse to pay $2.99 for the organic stuff that I do not like, but it might have to come down to that.

13 laura September 5, 2010 at 10:34 am

we have plenty in birmingham…

14 Erin September 5, 2010 at 8:44 am

Yum! Great idea — I’m anxiously looking for Libby’s on the shelves. Hopefully soon because fall is definitely here in the mornings, which I lurve! 😀

15 Laura (On the Threshold of Greatness) September 5, 2010 at 8:47 am

So excited about the fallness, too! Love this time of year, and love all things pumpkin! :)

16 Janna (Janna's Keeping it Real) September 5, 2010 at 8:49 am

Oh yum! Great idea!

Love the peace sign at the end! :0)

17 Amanda September 5, 2010 at 8:51 am

I adore that picture of you and Matt at the top!

Pumpkin oats are probably my favorite as well. I’d like my canned pumpkin to return, and not be so darn expensive!

Have you ever used fresh pumpkin? Any other recommended pumpkin recipes?

Have a brilliant day!

18 Kath September 5, 2010 at 8:59 am

I haven’t used fresh, mostly because I haven’t had the courage to turn the stinky raw pumpkin smell into something edible

19 Sarena (The Non-Dairy Queen) September 5, 2010 at 8:52 am

I used to be a lover of pumpkin oats too, but since Libby’s has denied me as well, butternut squash is an extremely good alternative! I live to put my apple cinnamon oats in the roasted butternut squash bowl! So good! Have a great day!

20 Sarah @ EatRunGarden September 5, 2010 at 9:13 am

MMM, I love how fall = pumpkin and squash anything. I think this year I will have to give pumpkin oats a try.

21 Peggy September 5, 2010 at 9:18 am

These sound so delicious! I bet I would love the savory squash in my oats!

22 Evan Thomas September 5, 2010 at 9:18 am

I haven’t checked to see if I can find Pumpkin here, but from what I’m hearing I’m afraid to even check. Sounds like we’ll all be mashing our own pumpkin this year

23 Jillian Bean September 5, 2010 at 1:22 pm

Leftover pumpkin shortage is in AZ too-but have been able to find it at Sprouts-in organic only. Unlike Kath, I am willing to pay! I also alternate with B-nut squash:)
I was in Canada visiting family-there is pumpkin as far as the eye can see on store shelves-what gives???

24 Heather September 5, 2010 at 9:20 am

It was beautiful up in Massachusetts this morning as well!

Love the picture from last night! I also cannot wait for pumpkin season – pumpkin bread is my favorite.

Enjoy your day!

25 Nicole September 5, 2010 at 9:20 am

I still have yet to try any kind of squash/pumpkin/vegetable in my oats! The bowl you made looks incredible- kind of like dessert!

26 Lindsey @ Gingerbread Bagels September 5, 2010 at 9:39 am

We have tons of Libby’s pumpkin at my grocery store! If you want Kath, I could send you some! :)

27 Kath September 5, 2010 at 9:42 am

Oh I would love that but it’s so darn heavy I bet the shipping would be too much :(

28 Caitlin September 5, 2010 at 9:55 am

You all need to check Costco – they usually sell Libby’s in a 3-pack mostly year round (at least in Washington). Find someone with a membership!

29 Camille September 5, 2010 at 9:59 am

It is 48 degrees here in Oregon! I am loving it :)

30 Sarah (Running to Slow Things Down) September 5, 2010 at 10:15 am

I can not wait until pumpkin shows up in the grocery stores. This year I need to be sure and stock up for a year-long supply. 😉

31 Mary @ Bites and Bliss September 5, 2010 at 10:19 am

I cannot wait until Libby’s restocks!! Ahh I hope they do soon!

32 Angela @ Eat Spin Run Repeat September 5, 2010 at 10:25 am

yum yum yum!! i stocked up on 3 cans of pumpkin yesterday so i should be good for about…. a week maybe? LOL. can’t wait to try the squash in my oats too! :)

33 Michelle @ Give Me the Almond Butter September 5, 2010 at 10:32 am

I can’t wait to try pumpkin again. I’ve only had the pumpkin in pies, but never in oatmeal.

34 Heather September 5, 2010 at 10:34 am

I saw your twitter about the pumpkin lol! I have been looking and looking as well!

35 holly @ couchpotatoathlete September 5, 2010 at 10:55 am

I’m not a fan of gourds in my oats either — it just doesn’t taste quite right.

Enjoy your day!

36 Valerie @ City|Life|Eats September 5, 2010 at 11:07 am

I love pumpkin oats so butternut squash is definitely something i need to try. :)

37 Laughter-Loving Stacy September 5, 2010 at 11:17 am

NIICE. I use to looooooove squash, but I have definitely burned out on them… but I still love pumpkin. :) yummmm, now I think I’m going to get a pumpkin spice latte :-p

38 Felicity September 5, 2010 at 11:25 am

This morning I saw a recipe for overnight oats using steel cut oats at http://www.thekitchn.com/
Looks like an interesting variation.

39 Sara @ myfancytuna.blogspot.com September 5, 2010 at 11:25 am

Yum, I can’t wait to try that! I put mashed sweet potato in my oats once – it was actually pretty good, but REALLY filling…so much starch!

40 Chelsea @ One Healthy Munchkin September 5, 2010 at 11:26 am

I love pumpkin in my oats, but I’ve never tried any other squash in them! I’m excited to try some new ones out this fall! 😀

41 Jean@RoastedRootsandPumpkinSpice September 5, 2010 at 11:29 am

That’s a great way to substitute pumpkin. I think I will still wait it out until canned pumpkin comes back out so I can start off my Fall breakfast with the real stuff 😉

42 Courtney @ Bread & Bokeh September 5, 2010 at 11:33 am

Yumm! What a perfect fall bowl of oats!!!

43 Jessica @ The Process of Healing September 5, 2010 at 11:43 am

OH how I loooove pumpkin oats!

44 Jillian September 5, 2010 at 12:24 pm

So many new uses for squash!! I think I know what I’m buying at the store next time I go!

45 Alaina @ The Jogging Concierge September 5, 2010 at 12:41 pm

I never thought about putting butternut squash in oats. What a great idea! I’ll have to try that out sometime!

Love the peace shadow :-)

46 Simply Life September 5, 2010 at 12:46 pm

oooh what a perfect fall bowl of oats!

47 Chelsea (Chelsea's Chew and Run Fun) September 5, 2010 at 1:05 pm

I love squashy oats! Those look fab!

48 Haley September 5, 2010 at 1:15 pm

yum! i’m also an avid oat eater, so all your ideas always make me drool! living in hawai’i doesn’t make squash very affordable, though (i guess since it’s so heavy they raise the prices?). maybe it’s time to replant some butternuts :)

49 Neen@Broad Bean to Runner Bean September 5, 2010 at 2:39 pm

ohh i’d never in a million years have thought to put Bnut Squash in oats! how creative!

50 Kelly September 5, 2010 at 6:28 pm

I used to get “Hungry Girl” newsletters and remembered them talking about an upcoming pumpkin shortage so I googled it and found out this

“Our inbox has been FLOODED with emails lately about the fact that it is nearly impossible to find the regular 15-oz. cans of Libby’s 100% Pure Pumpkin on shelves. The HUGE cans are more readily available, but even those are becoming scarce. Where, oh where, is our beloved pumpkin?! HG subscribers (and one very concerned bunny) wanna know. We contacted our pals at Libby’s (THE pumpkin people) to get the scoop, and here’s what we unearthed. Due to bad weather, many of last year’s pumpkins were deemed unacceptable, and so we’re NOW feeling the effects of those unfortunate circumstances. The good news? Libby’s promises to have normal-sized cans of pumpkin back on shelves by late September. ”

this was from August 10, 2009, so the late September is this month!

51 Leanna September 5, 2010 at 6:43 pm

Really, nothing beats apples fresh picked. (really this goes for anything) We used to have apple trees growing up, so much more flavour.
