Fallness

Somehow this photo got stuck on my Eye-Fi card last night – wheeee!

Today will be less intense – just relaxin’!

Starting with the best breakfast I can imagine, a cup of Joe’s and 57* of fallness!!!

Butternut Squash Oats!

If you had to ask me my very favorite style of oats and I HAD to pick JUST ONE it would be:

Pumpkin Cottage Cheese

Since Libby is still denying me her famous canned pumpkin, I had to improvise today with our leftover butternut squash.

Since Matt doesn’t care for gourds in his oats, I was forced to combine them separately. This was good because the squash had to be mashed a bit. I added some milk and cinnamon to help with that.

The Mix

  • 1/3 cup oats, milk, water
  • Pinch salt
  • Half banana
  • Half tbsp chia seeds
  • 1 tbsp wheatberries
  • 1/3 cup mashed butternut squash, stirred in at end
  • Hail Merry Cinnamon Orange
  • Madison‘s Homemade Nut Butter
  • Drizzle of maple syrup

[Don’t ask me why I left out the cottage cheese!?]

    Whole Foods has pumpkin! I was in the same jam when I wanted to make my aunt’s pumpkin cookies. If you really start to get a craving, try WF.

        YES. I have checked every aisle of multiple store. Trust me, I am a pumpkin expert. I refuse to pay $2.99 for the organic stuff that I do not like, but it might have to come down to that.

    Pumpkin oats are probably my favorite as well. I’d like my canned pumpkin to return, and not be so darn expensive!

    Have you ever used fresh pumpkin? Any other recommended pumpkin recipes?

      I haven’t used fresh, mostly because I haven’t had the courage to turn the stinky raw pumpkin smell into something edible

    I used to be a lover of pumpkin oats too, but since Libby’s has denied me as well, butternut squash is an extremely good alternative! I live to put my apple cinnamon oats in the roasted butternut squash bowl! So good! Have a great day!

    I haven’t checked to see if I can find Pumpkin here, but from what I’m hearing I’m afraid to even check. Sounds like we’ll all be mashing our own pumpkin this year

      Leftover pumpkin shortage is in AZ too-but have been able to find it at Sprouts-in organic only. Unlike Kath, I am willing to pay! I also alternate with B-nut squash:)
      I was in Canada visiting family-there is pumpkin as far as the eye can see on store shelves-what gives???

    You all need to check Costco – they usually sell Libby’s in a 3-pack mostly year round (at least in Washington). Find someone with a membership!

    yum! i’m also an avid oat eater, so all your ideas always make me drool! living in hawai’i doesn’t make squash very affordable, though (i guess since it’s so heavy they raise the prices?). maybe it’s time to replant some butternuts ๐Ÿ™‚

    I used to get “Hungry Girl” newsletters and remembered them talking about an upcoming pumpkin shortage so I googled it and found out this

    “Our inbox has been FLOODED with emails lately about the fact that it is nearly impossible to find the regular 15-oz. cans of Libby’s 100% Pure Pumpkin on shelves. The HUGE cans are more readily available, but even those are becoming scarce. Where, oh where, is our beloved pumpkin?! HG subscribers (and one very concerned bunny) wanna know. We contacted our pals at Libby’s (THE pumpkin people) to get the scoop, and here’s what we unearthed. Due to bad weather, many of last year’s pumpkins were deemed unacceptable, and so we’re NOW feeling the effects of those unfortunate circumstances. The good news? Libby’s promises to have normal-sized cans of pumpkin back on shelves by late September. ”

    this was from August 10, 2009, so the late September is this month!

    Really, nothing beats apples fresh picked. (really this goes for anything) We used to have apple trees growing up, so much more flavour.
