Lettuce is back in stock, which means Hugh Jass salads are back on the lunch menu!!

This one was an awesome combination of:

  • Green leaf lettuce
  • Olive oil, salt, vinegar
  • Heirloom tomato
  • Red bell pepper
  • Leftover tofu cubes
  • Leftover eggplant
  • 1/4 an avocado
  • Caromont Farm Herby Goat Cheese
  • A cubed slice of Cville Crunch

Only thing missing was some fruit, which I covered at breakfast

As much as I love coconut water, I do not really like it with ice like this. After a hot walk I mixed some with lemonade and it was a bit too milky for my taste. But with unbeatable hydration!

    I keep trying coconut waters but I just don’t seem to like any of them. I think it’s too much of an in between milk and water for me!

    Yay for working on a project together. Salad looks wonderful.
    I am unfortunately not a big fan of coconut water. Now coconut milk… that’s different. And dis… has too much fat. *sigh* 😉

    Great salad. After a pause when our spring lettuce crop stopped producing, our second round of lettuce and arugula is ready for eating. The pauses make you appreciate it more, and it can be good to have a break, too.

    Jamba Juice here in Chicago (not sure if you have them in Cville) have coconut water drinks. I like the watermelon one…amazing! But on a side note, I hate coconut shavings, etc. Odd. I like the taste but I guess not the consistency of coconut in the raw.

    Coconut water is one of those things that I tried so hard to like a while ago, but I got a bottle from a brand that has a really thick coconut water, and I absolutely hated it (as in, couldn’t finish half of it). However, I gave it another chance recently and picked up ONE (as in the brand, not the number) and it is so good! I love mixing it with homemade lemonade post-workout to make sure I’m super rehydrated. Love the looks of your Hugh Jass salad!! 🙂

    The past few days up here in Boston have been wicked hot and so Hugh Jass salads are the only thing that sound good to me for lunch and dinner. Besides, with all of the beautiful produce this time of year, salads are the best way to use up lots of goodies all at once! Lovessss it!

    I have tried a bunch of different brands of coconut water, most tasted like cough syrup and then I found SOBE coconut waters, so freaking delicious!

    You should try the new “Unheated raw coconut water” from Harmless Harvest at Whole Foods. Words can not describe how delicious this coconut water is! I crave it almost everyday now.. leagues better than any other coconut water I’ve tried!

    I stopped in Charlottesville last week on a road trip and was lucky enough to try some Cville Crunch that my hostess had bought from you! We paired it with some fabulous cheese from Feast. It was delicious. I wish we had been able to stop by the store, I definitely will next time we’re there! It was great being back in that city.

    That salad looks amazing! What do you do with the rest of your avocado when you only eat a quarter of it? I feel like they get brown right away.

      Put it in the fridge with the pit – a little brown won’t hurt you it’s just not pretty. You can just scrape off the outer layer too

        I cover the remaining half with pit in a clear plastic wrap then put it in the fridge – no brown for at least a couple days!
