SPRING!

Not only did the SUN come out for about an hour this afternoon, but I found this little bulb trying to peek out of the ground!

I have a feeling we’re going to get some freezing temps soon. We’ve been having unseasonably warm (and unseasonably cloudy) weather since before Christmas. Really the only horrible month in North Carolina is January. Any day now the cold weather will come, but luckily we don’t have long until we’re back in the 60’s.

I spent the morning redecorating my house. Nothing major – just moving things around, cleaning out cluttered corners, etc. I also cleaned, vacuumed and more. I wanted to rearrange two major rooms, but the husband vetoed the decision. Guess this whole day is about marital compromise!

I broke for lunch around 2:30. I wasn’t starving, but I felt empty from all my housework. I combined a bunch of stuff in our fridge into this big salad:

  • Romaine tossed in Fig balsamic vinegar and lemon olive oil
  • Broccoli + cauliflower (which I steamed for a minute in the microwave)
  • Carrot + green pepper
  • 1/2 a cup of leftover lima beans + black-eyed peas
  • 1/4 cup homemade hummus
  • Some goat cheese sprinkles
  • A few candied almonds

On the side I had a piece of leftover flax flatbread –

It was more filling than it looks with all those beans + hummus under there.

I have been so thirsty lately. I don’t drink enough water in the winter due to my coldness problems so I am making myself drinking a big orange cup throughout the rest of the afternoon.

After lunch (when the sun came out) the husband and I walked to the shopping center near our house and back to run an errand. Sadly, the sun is now hidden again by clouds 🙁

Off to do more stuff!

    Yummy looking salad! I totally understand the water/coldness dilemma– we’re down in Atlanta so have been having basically the same weather you have for a while now… yuck! In order to make myself drink enough water I have a few big plastic cups like your orange one that I fill up every time I go near the kitchen, then just move one from room to room with me and gulp from it whenever I notice it. Somehow I usually end up drinking 3-4 of the huge cupfuls a day!

    I wish it was spring! Right now, we have a great layer of ice covering everything. 🙁

    But sounds like you had a really busy day. I love the feeling that cleaning and rearranging gives me.

    Aww, what a cute little bulb! All the snow has melted here but it’s supposed to snow tomorrow!!! =( BOOO!

    Hehe…as sad as I was yesterday that I may not have gotten my newbie bulbs in the ground early enough, I too was absolutely thrilled to see last year’s bulbs peaking up through the mulch! I am over winter…too bad it hasn’t even been a month yet.

    I feel you on the cloudy stuff – I live in Western NC and I got used to it always being sunny! I know we were in a drought, but I still enjoyed it 🙂

    I get blue when I don’t see the sun for a few days…at least it’s been warmish.

    Lucky you!! We had a blizzard yesterday and ended up with an additional foot of snow on top of everything. 🙁

    Kath, the cold weather is on its way. It was much colder here in Nashville with lots of rain. Pretty dreary January thus far. I always drink hot water in the winter. Even when dining out, I ask for a mug of hot water with lemon. When I drink it cold, I cannot stay warm.

    The only way I get enough water in in the winter time is by drinking TEA and loads of it. The only time I drink plain, cold water is when working out in the AM, the rest is piping hot tea to warm me up!

    It is supposed to be -20 C tonight! Agh.

    K,
    It is an antique from my grandmother’s collection. The bottom reads: “Historic America: Kansas City, Missouri. Johnson Bros, Made in England.” I’ve got matching plates and a few other pieces as well. I love the pink and white pattern.
