Early Bird

The husband resumes 3am alarm clock calls tomorrow so we’re moving back our lives. We normally eat dinner around 7:30 but he wants to start eating a little earlier to give him more time to digest. Tonight we started on dinner at 5:30!

He had a beer; I had a few sips.

Dinner tonight was an instant made-up recipe: cranberries, walnuts, and brown rice stuffed into an acorn squash and topped with goat cheese. I have been loving walnuts lately – note to self to have them on oats soon! Check out the recipe here: Cranberry Walnut Stuffed Acorn Squash. It turned out really delicious! And totally filling.

On the side we roasted some brussels sprouts: quartered, rubbed in maple syrup, olive oil and salt, and baked for about 40 minutes at 375*.

I actually dipped mine in Fage and it was a great combo!

Along with some plain pomegranate iced tea the husband made from a hot tea collection we got for Xmas.

After we cleaned the kitchen I mopped the floor so it would be spick and span when I come down in the morning. That makes me happy just thinking about it! I’ve only got a few days left to get my whole life organized before I am faced with the 24 hour dread of school work. Hopefully I can make the most of tomorrow – it’s supposed to rain 😥

I can’t believe it’s only 7:39 and I feel like I am ready for bed – although I’m not sleepy at all!

    I absolutely LOVE roasted brussel sprouts! I never thought I would say this, but I have grown to love them over the past year.

    Your squash recipe looks great. I am gong to try this out- I have a squash to use up!

    Beautiful dinner!
    I think it’s so funny that 5:30 is an early dinner! Adam and I eat by 5 or 5:30 every single night… guess my whole getting up early thing does that, huh?

    Hi Kath! I love eating early, in fact I love being done eating at least 3-4 hours before bed! My belly is much happier that way. Enjoy the last couple days before school work, girl! Matt… oh my happy early bird hours! That bread is so worth it, we love you for it. 😉

    lovely meal. personally i think 5:30 is just a bit too early to eat dinner, it’s more of my snacktime. But to each their own!

    We didn’t actually eat until about 6:45 – but dinner had to be prepped and baked for an hour!

    HA! i had almost that exact same supper. swap almonds for walnuts and skip the bsprouts! (well. and the beer)
    it was yum and i have the second half for tomorrow!

    5:00-5:30 and sometimes 6:00 is also my dinner time. I hate eating at 7pm. That’s way too late for me. It’s so funny to see how everybody’s dinner time is different. 🙂

    I can’t believe people eat at 5:30. That is way too early for dinner for me. I usually eat around 8:30-9, after the gym.

    Kath- You and the Husband do not cook much meat (poultry or red meat). Is there a reason? I know you do eat it, as I have seen you eat in before, just not often. If my fiance wasn’t such a “meat” guy, I would probably do the same.

    Jennifer : It depends on your schedule. I’m up at 5am. Start work at 7am. Finish my day at 3pm. Work out. I eat dinner around 5:30. And I’m usually in bed by 9:00 or 9:30 pm. I like to be fully digest when I go to bed. I sleep much better that way. 🙂

    My husband and I eat pretty early too, like 6ish or so. I guess we’re just hungry when we get home form work. Good luck getting your life organized. I’m in the same boat, and trying not to get overwhelmed with classes starting up again.

    I used to eat dinner every day around 5:30, but lately we’ve been having later dinners, like around 7:00. I’m fine with either one, as long as I get food 🙂 Just depends on the day’s schedule!

    That acorn squash looks delish! I need to try something like this! We had stuffed peppers last night, maybe we’ll try stuffed squash soon!

    Yup, that’s my favorite way to eat sprouts too!

    I also am obsessed with having a clean kitchen floor, which is not easy with munchkins dropping apple juice-filled sippy cups on it all day!

    I love to eat dinner by like 6 most nights. It tends to make me ready for bed earlier which works on days when I have a 3 am wake-up for a bakery as well and to get me out of bed on days at 5 to run when I don’t.

    I love putting walnuts in my oatmeal! This morning in fact my breakfast consisted of your whipped banana oatmeal base made with a few drops of vanilla extract and a sprinkle of nutmeg, topped with wheatberries, a few grams each of walnuts and pecans, the leftover banana, and one diced up date, alongside some greek yogurt w/added vanilla and nutmeg and a little agave nectar to take off the tang. It’s very reminiscent of banana bread, delicious.

    The number one reason why we don’t eat a lot of meat is the cost. When we do eat meat, we choose natural (or organic) and it is expensive compared to veggies and plant protein. I realize you can find bargains (like at Costco) but I don’t want to put the work into cutting a giant tenderloin into 10 pieces to freeze (although we did do that recently). I save meat for eating in restaurants and when others are cooking.

    Hi Kath!

    I had brussels sprouts in the fridge, and didn’t know what I wanted to do with them until I saw this post! So tonight, I cooked them up with some maple syrup, and it was EXACTLY what I needed. 🙂
