So Boring. So Delicious.

I know, I know, I talk about the weather all the time and it is so boring.

But I am so influenced by it!! If it were sunny right now, I would have been itching to get outside with enthusiasm. But since it’s extremely cloudy, I’m inside, hunkered down at my computer all day. Which, in fact, is a very good thing! I just turned in an article, and have 4 more things on my KERF list before I can move onto my Great Harvest list for the week. When I am focused, it’s best to just keep charging through.

Our loan closing went well. SO SCARY! Opening a business is 1,000 times scarier than buying a house. And about that buying a house thing? I don’t know if we’ll ever be able to buy again! [I exaggerate, but it might be a lot longer than I thought.] Banks don’t like small business owners and we have to prove income over a long period of time. I’m very very sad about that. Hurry up and make some money GH!

I bike to and from the bank, which wasn’t very far, and opted out of a run for lunch. Some days I just don’t feel like running and I’ve learned to just postpone to another day so I’ll enjoy it when I do.

Just as boring as me talking about the weather is the fact that every day in 2011 I have had this exact same salad, give or take an ingredient!

“KERF Is Boring” Salad

  • Baby spinach
  • Carrots
  • Peppers
  • Cucumbers
  • Blue D’Auvergne
  • Honey, olive oil, lavender salt
  • Bonus: Spiced pecans + bean dill dip from Saturday

SO easy to make. SO nutritious. SO delicious!

    That salad is in no way boring no matter how many times you have it! In fact I just wrote down the ingredients yesterday as I plan to have the same for the foreseeable future 🙂

    Congratulations on your business loan closing!!!
    My husband and I opened a small-business a little over a year ago and we were also looking to buy a home. We found out quickly that most banks will not give small-business owners mortgage loans until they have been in business for 2+ years. However, there are several great banks out there (they’re usually smaller) who will work with you and approve you for a mortgage loan based on your entire “portfolio”. Usually, they make you go though a long process and provide Certified P&L’s for your business to verify funds, etc. We actually got this kind of loan and are closing on a new home! So it can be done 🙂

        Try credit unions too. I find they are more willing to help out with home loans.

    I know what you mean about the weather and exercise. It’s overcast and rainy here, and even though I had plans to run today, the cold makes me want to sit inside and watch my recorded Big Love (haven’t finished the last season yet). All I need is my blanket, couch, and a cup of tea.

    And congrats on the loan! Wish I lived nearby to pay a visit when your GH location opens.

    If you have a sizeable down payment and can prove a reasonable income you shouldn’t have trouble getting a mortgage.

      If I remember correctly, you’re from Canada. It’s still very easy to get a mortgage here – (I’m pre-approved for $370,000 just on my own (boyfriend already has a place). But the banking system in the U.S. Is still reeling from all the toxic assets and bad mortgages. Yet another reason we’re lucky to be Canadian 🙂

        Oh gosh, that whole sub-prime mortgage fiasco is such a disaster. I got my house at the beginning of ’09 when even the people here were worried about the real estate market. It ended up a win for me as a buyer.
        I think the market is back to normal here for the most part. I figured the same of the US. I haven’t been following it much lately.

    I’m glad that just because you “scheduled” a run, you don’t make yourself do it if you’re not in the mood. Sometimes I feel like I HAVE to do what I say I will and then I end up just getting annoying throughout it. Bike your heart out!!

    And as far as lunch goes, if it’s not broke, why fix it? 🙂

    WIth pictures like that, your salads can never be boring!!! And I totally understand how weather can affect yoru entire day. It’s rainy and cloudly here. All I want to do is curl up on the couch!

    Hi Kath,
    I never get bored with your blog!
    I know you’ve been using your lavender salt for ages, but please remind me where you bought it and who made it? I love drizzling honey and balsamic vinegar on my mixed greens w/ a dash of freshly ground pepper and sea salt. I bet the lavender salt is delicious (obviously, if you eat it every day).

    I totally feel you on opting out of runs when your body just isn’t feeling it! When I do push through.. while I may feel great at the end of the run… the process of the run is draining and I am practically cursing the whole way through it! Must better to just let it be for the day.. and take on the run with an open mindset the next day!

    Congratulations and good luck! I love our local GH and if I was in your town, I’d certainly frequent your shop. I also wanted to thank you for the inspiration for my tasty breakfast this morning. I just discovered your site yesterday and loved all your oatmeal recipes/pictures. I went right home and made some overnight oats (totally winging it since I didn’t have time to pull up your recipe).     I do the same thing everyday for lunch too. Some variation of the same salad, but I never get bored eating it so that’s all that counts!

    KERF is NOT boring! Even though you may eat the same salad base daily, I still love reading about the little differences (like being topped with different dips, nuts, fruits, croutons, etc). And of course the variability in drinks and side dishes is interesting too 🙂

Pretty much the transactions themselves were nothing short of agonizing. Not to scare you off!! Just to tell you that your instincts are correct but that just means you know what you’re in for and that yes, when GH starts making money…you two are set. Dream house awaits 🙂

    No worries 😉 I have had almost the exact same salad (give or take an ingredient) for the last couple weeks and I still love it. It has a combination of… hardboiled egg, romaine, hijiki seaweed, miso-ginger dressing, veggies stir-fried in peanut oil (burdock, cabbage, sprouts, etc…), sesame seeds, and a grain (white or brown rice, couscous). Mix it all up in a bowl and I am in heaven 😀

    I’ve just recently found your blog and LOVE it! You are so inspiring. No way is that a boring salad. Looks delicious and that is what I’m planning on for my lunch for tomorrow (and the rest of this week). I never thought about putting hummas or bean dill dip on a salad. What a splendid idea. I’ve gotten so many healthy food ideas from your blog. It will certainly help me on my path to healthier eating. Keep up the wonderful work! P.S. The bean dill dip….. is that something you made?     I am SO so so so glad to hear that I’m not the only one who doesn’t feel like lacing up the running shoes every single day. As someone who ran through the worst of winter, I pride myself in running every day, no matter the weather or my mood. But some days, (like today,) it’s yucky outside and I’m a little achy and I’m just not feeling it. But you’re totally right, sometimes it’s better to forsake a day of running in order to keep your body and brain healthy. So if it means I only run 4 days this week instead of 5, (I’ll try for 5 still, but work may make it difficult,) then that’s what happens. Life goes one.

    My husband and I own our own business and it was hard to get a loan too. Luckily we worked with a great loan agent and accountant to help us. It was a headache though. But, well worth it. I know when the time is right, things will work out beautifully for you both!

    Nothing wrong with having a variation of the same thing every day, as long as you’re not bored with it. I love salads for lunch, too, and yours always look delish (and are photographed so nicely). We made an opposite loan move in 2006–we opted to buy a house instead of starting a bakery/coffee shop/cafe. Couldn’t do both, and while we sometime have a twinge of regret, we made the right choice for us. Congrats on the loan!

    I am so boring when it comes to something I like too! If I find a combo that is absolutely delicious I tend to eat and eat it until I completely exhaust it and then I move on to something else! Right now I have been obsessed with salads and haven’t lost my cravings yet! 🙂

    I want the weather to be warm and sunny so bad! The gloominess has over-stayed it’s welcome!

    Your salads always look so good! At least you change them up a bit with a different ingredient here and there. Sometimes my mind goes blank on what to make when planning dinner for the evening 🙂 But with great recipe blogs out there like your’s, I have the help I need at my fingertips.

    I bring a salad everyday to work with only a variation of a few ingredients here or there. Theres nothing wrong with sticking with what works and what you like! Plus it looks so delicious.
    My parents opened a business last year that sales supplements so I know how hard and scary it can be! My dad has always been passionate about fitness and health but worked at a dealership my whole life. Following your dreams is admirable! There will be a light at the end of the tunnel.

    Ha! When I was at the store today buying ingredients for a huge salad for our dinner, I thought to myself “Now what was it that Kath put in that salad the other day??” Lol..they are not boring! No matter how many times you eat them 🙂

    I’m sure the bakery will make tons of money once the ball gets rolling, but I know it’s kind of crappy that you have to wait! :/

    I think it’s a good idea to only do certain exercises when you are in the mood for them…like running. My training plan has me doing 3 runs a week on specific days, but if that day comes around and I don’t feel like it, I just move it over! Enjoying your exercise is a big deal! 😉

    I understand the weather blahs. I live in Minnesota. It may snow tonight…it is 43 degrees right now and I am supposed to run after work. Ugh.

    Congrats on the business loan closing! One step closer to the bakery being officially open! 😀 I got a loaf of the blueberry high five bread at Great Harvest today and I’m in love! I had to walk out of the kitchen and away from the loaf, otherwise I bet I could eat the entire thing before dinner.

    I have a feeling your bakery will start earning money in no time. 🙂 You can expect me in for a no onion sandwich soon!!!

    When you use the honey, olive oil and salt, do you just drizzle it over the salad and mix? It sounds like a nice alternative to making a salad dressing with vinegar/oil but wondered if the honey gets too thick/sticky on the salad?

      I drizzle honey and balsamic vinegar ALL the time and it has never gotten thick or sticky. It’s great!

    I talk about the weather just as much! It just plays such a big role in your day! For me the temperature matters as much as the sun though. When it’s cold I just want to curl up in a ball on the couch. But thank goodness it’s spring because spring fever has me motivated!

    Good job on listening to your body– your such a good example of that 🙂
    I totally agree, simple does not mean non- nutritious. My fav snack is carrots and peanut butter. Boring, yes. But oh- so- good and nourishing. Looks like my exact salad from lunch! Salad beasts are the besttt 🙂
