Sleepy Salad + Sandwich

I just deleted over 2,000 photos from my Eye-Fi card! That’s a lot of food 😉

I’m feeling the effects of my sleeplessness today, but luckily I’ll be able to sleep in a little tomorrow morning. I don’t have Food Lab this Friday so my weekend starts tonight at 7:45! Unfortunately I’ve got 1,000 things to do + projects for school, so I will not be sipping pina coladas.

I packed my lunch today since we had good options in the fridge. First was this bright salad

Contents:

  • 2 cups baby spinach
  • 1/2 a giant carrot
  • A few mini peppers
  • ~1/3 cup chickpeas (love eating these on salads!)
  • Some leftover shredded chicken
  • Avocado (which made the salad)
  • Squeeze lemon juice (for the avocado and light dressing)

I also had a small Tempeh + Pumpkin Butter Sandwich on GH Cinnamon Raisin Bread.

And a container for fruit. I was going to save most of this for clinical, but I needed it : )

My friend Lauri and I are going on a walk in a bit over to EarthFare and back (she needs some groceries). It’s really nice out but still pretty nippy. Can’t wait for 75* this weekend!

    Harris Teeter shoppers!,
    I have a realllly random question… does Harris Teeter sell Ezekiel/food for life english muffins? I suppose I can just go and see, but I wanted to ask before I spend the bus money to hop on over there, but then find out they don’t have them, I’m a college student you know 🙂 Thanks!!!

    I cannot wait to try tempeh. It looks soo simple and full of goodness.
    The salad sounds like a wonderful blend of flavors. I miss avocado, I wish our cafe had them available every day!

    I can’t wait to try a tempeh sandwich. I love that you enjoy them with just three ingredients too. I noticed that I have some cranberry butter still in the pantry, I’m going to give that a whirl soon! Hope you get some rest on your long weekend too!

    Harris Teeter has limited Ezekiel breads and they are in the frozen section – you have to thaw them yourself. Most of them come frozen though, and lots of grocery stores thaw them for you.

    Can someone tell me where to find tempeh in the grocery store? Google said it can be refrigerated or frozen… so I’m not really sure where to look in Whole Foods! Thanks so much!
