Sauteed Salad

Hola! I gotta run – I have to get to class early to set up a presentation on an enzyme deficiency for Metabolism.

I was too full to run this morning and had to get going by the clock, so I called it a gym did and did the usual: Bike —> 30 mins of Stairmaster with Real Simple —> Bike. Am planning to run + sculpt class tomorrow!

While I showered I put the oven on low and reheated two slices of leftover pizza.

I normally despise leftover pizza 9the cheese is never melty; the crust is never crisp) but some time in the oven vs. the microwave or cold (eww!) helped a lot. This was delicious!

I was not feeling a salad today, so I had a sauteed salad instead.

Spinach, zucchini, green pepper, tomato, leftover eggplant and millet cooked in a skillet with a little Emeril’s seasoning and olive oil. Warm veggies are so satisfying!

I’ve got an army’s worth of food I am taking to campus – 2-3 snacks and dinner. I originally was going to eat dinners at home on my late nights, but I’ve found that class is more enjoyable if I have food. Maybe I don’t appreciate the ambiance of eating as much, but it sure tastes better in class than it does when I am beyond starving on my way home or too full from too many snacks to hold me over.

    pizza is always 989832 times better if you reheat it in the microwave

    i remember in elementary school how taking cold pizza was a “cool” lunch and so I begged my mom to let me do it… ick! I ended up trading lunches with someone else 🙂

    That pizza looks delish! Even though you’re slightly crazy for not liking cold pizza. 😉 I never have cheese on my pizza, however, so maybe that’s the secret.

    I love cold pizza! Your vegetables with millet look delicious – I have never tried millet and am always intrigued by new grains. Good luck with your presentation.

    I really don’t like cold pizza, and I am usually too impatient to wait for the oven to heat up+warm up the pizza, so I end up with a rubbery microwave pizza. I need to work on being patient!

    Heating up leftover pizza in the oven is the way to go! Microwaving just doesn’t do it for me. My roommate just introduced me to black olive & jalepeno pizza – yum!

    my mom used to reheat my pizza in a skillet, which always came out good…but i do like cold pizza anyway…

    I am a cold pizza lover. But I don’t necessarily like it re-heated. But, if I was forced to, I don’t think I’d have a problem eating the re-heated slice 🙂

    I used to love to eat in class too. No idea why, but it definitely made the class more enjoyable.

    I love pizza when it’s been sitting out on the counter for hours, but I hate it cold. That’s really gross now that I think about it.

    I would do the same thing when taking a night class.

    I had several semesters when my kids were small where my class was from 7-10 p.m. I usually had to go straight from work too. But the teacher didn’t mind people eating, because most were in the same boat.

    It was so much better than waiting to get home and eating at 10:30 at night!

    I love leftover pizza, and always re-heat it in the oven too, so its not super soggy! Good luck on your presentation!

    Leftover pizza is usually the pits. That’s the reason I used to eat the whole thing 🙂 Now I have Hunni to finish off the leftovers for me.

    Whenever I eat leftover pizza I always wish I had a toaster oven! It is so good and crispy in the toaster oven! Good Luck with your presentation!

    I agree with Lynn- the skillet is the way to go for reheating pizza! I put a lid on it to get the cheese melty and the bottom crisps right up- yum!

    Thank you, thank you, thank you. We seem to live in a world where everyone is pushing raw and rawer foods. It’s a delight to hear someone speak well of cooked or steamed veggies. Certain people seem to respond better to slightly cooked veggies, rather than raw, and I’m one of them.

    So thank you again, for this comment. I thank you, and my slightly steamed veggies thank you. 🙂

    I don’t mind cold pizza some of the time but I’ve found that re-heating it in a frying pan gives you crispy crust and re-melts the cheese!

    Snacks are so key. I used to do the same thing with night classes and suffered through them because I was hungry!

    I have to agree leftover pizza is awesome. I always get embarrassed packing a bunch of food with me to take to school and I never enjoy it while nervously making sure people aren’t staring at me. What types of foods do you suggest?

    I recently came across the best way to reheat pizza. In a pan over medium heat on the stovetop. Keeps the crust “crusty” and gets the cheese melty. It actually works with any leftover foods that normally do not withstand microwave reheating.

    Btw, I LOVE that little hedgehog in your last post. I turn into such a girly girl when I see things that are that cute and tiny. Awww…

    hey kath, i have a question for you regarding heart rate monitors. i’ve been wanting one for a while but i’m not sure which one is the best. on your faq’s you say that you wear a polar f4 but i think you got a garmin 305 recently? would you recommend the garmin over the polar or is the polar a pretty good HRM for someone who just wants to know mostly calories burned and HR in the gym but occasionally track pace and distance on a run? thanks so much!

    Definitely get the Polar. The Garmin does not measure calories burned based on heart rate and can’t be used indoors.

    There is a garmin you can get that calculates cals based on HR, it’s the next step up from mine, I think it might be called 450cx or something like that. It’s blue.
