Dining Room Lunchbox

Snacktime in class! I dug in around 4PM in the middle of Nutr. Education. Yogurt + cereal is not really the best snack to eat during class, but luckily I have cool professors and I was too hungry to wait till 5PM!

Kelsey also brought me this fun surprise from EarthFare! I didn’t make it to the banana, but I did try the omega-3 sour raspberry gummies. You know that super tasting tongue / nose combo I have? I could totally taste fish. I can always taste the fish in the gummy / gel ones 🙁 Ick. Lauri didn’t notice it!

And then we found out our evening class was canceled!!!!!!!!!!!!!!!!!!! I actually don’t like having classes canceled at the last minute because it usually means making up the material in a hurry and I never learn it as well for a test. So I was kinda disappointed it was canceled. Call me crazy.

So to make up for it I came home and completely knocked out an assignment before dinner!! YIPEE!!!

More snacks happened first though. I got a sample box of Food Should Taste Good chips, which I got to enjoy this past spring. The sweet potato flavor is one of the best chips I have ever tasted!!!

So I had to dig into a few.

I also procrastinated starting my project by eating the Flax Oat Bran bites I’d packed to have for dinner during class. Total emotional eating. (There were more in there!)

About two hours later and lots of happiness for a project well done, I broke for dinner. I was definitely hungry again.

This was my packed dinner – a bean salad. Chopped veggie + bean + grain salads are the best kinds of packed dinners, in my opinion.

This one was a hafl cup of mixed beans from a bag Victoria gave me (they were Trader Joe’s 14 beans or something like that?)

Plus:

  • Cucumber
  • Tomato
  • Grapes
  • Coconut
  • Cinnamon almonds (the secret ingredient)
  • 2 tbsp lime juice
  • Squirt Guidens Zesty Mustard
  • Squirt honey
  • Pinch salt

The grapes + honey + almonds made it a sweet/savory dish and it was very refreshing!

Last but not least, a Gossip Girl amazing no cook chocolate hazelnut bite. Only one left!!

Thanks to Kelsey for sharing this cool article on food pounds! I swear that I eat the same weight/volume everyday no matter what the caloric intake is. It’s probably mostly habit, but I still have never bought the french-women-don’t-get-fat-just-have-2-bites-of-a-decadent-food-and-you’ll-be-satisfied mentality.

    Yes, that whole “French paradox” explanation has always sat strangely with me, too. After all, the idea that people eat the same amount in weight each day without regard for the caloric density is the whole theory behind the “volumetrics” diet. An interesting topic, indeed! On the other hand, though, fats DO tend to be more satiating — at least some of the time — so it’s hard to say. Perhaps if the person eating the calorie-dense food is aware of its density, it’s somehow more satisfying? Odd. Hmm… I’m sure we’ll read more about this in the future.

    I’m a total nerd, too, because I always hated canceled classes in graduate school. I think that’s a good sign, though; it reflects genuine interest and desire to learn!

    I love Food Should Taste Good Sweet Potato chips, too! They’re the best!

    I love Food Should Taste Good chips! I tried finding those Pop Chips you have sometimes, Kath and I couldn’t find them in the store (Hannaford) which has almost all “specialty” items you can think of. 🙁 Boo! They look so yummy lol.

    I loved the PN article – I read it as soon as I saw it in my inbox this afternoon! I felt like it made a lot of sense, and it was definitely encouraging to me to continue to eat a lot of fruits, veggies, nuts, and whole grains 🙂

    I heard about Google voice a few weeks ago.. Pretty much instead of having a house or cell phone.. you can receive all of your calls through your computer. I’m pretty sure you can even screen calls with it.. pretty crazy stuff! You can even download voice mails and store them in your email for future use. Ah technology.. Supposedly they’re only releasing Google Voice to a few people at a time.. when you get an email from them, then you’re allowed to use the program.

    Lovely dinner! I love the combination of delicious veggies and crunchy sweet potato chips. 🙂

    i just hate when you don’t know class is canceled until you’re there…
    where i got my masters one of our teachers got sick once and my advisor called each of us personally to make sure we knew! it was sweet of her to save us the drive…

    Cereal and yogurt is such a classic, even if it is a little difficult to eat during a class. LOVE Chobani! 🙂

    Bummer about the canceled class. I’m the same way as you… if the class was planned, I would rather go to it and learn the information! But at least you enjoyed your evening. What a great “packed” lunch!

    One of my coworkres who is a web genius loves Google vioce. I think it’s a competitoy to Skype. He uses it to talk to family in Mexico.

    Mmm I love fruit in savory salads. I sometimes do apple and tuna, which people think is weird, but if you put parsley in the dressing I swear it bridges the gap!

    Okay, I’m SO glad to hear you say that about the Omega-3 Gummis…..

    I KNEW I could taste a very slight fishy taste with my Omega-3 eggs, and my boyfriend thought it was in my head…

    Now I don’t feel so bad! 😀

    Good job getting that assignment done before dinner! I wish I could be as driven to do homework as it seems you are sometimes. Hmm…that’s weird that you could taste the fish in those gummies. Actually, I bet that tasted kinda gross!

    I think that it is so funny that you could taste the fish! I can too in some of the Omega-3 egg brands!!

    Yeah, the French. Living in Europe has really enlightened me as to how other people eat and live. It has been interesting. They definitely drink more than us, but they eat a bigger meal for lunch than they do at night. They don’t eat as much processed food as Americans do though. They also walk A LOT, and ride their bikes everywhere. I see elderly women and men riding their cute little bikes with baskets in the front or back. They are so much more active than the majority of Americans! I think that people should aim to get in the appropriate amount of veggies/fruits a day, and then eat what they want after that within moderation.

    Congrats on still getting work done at home! I’ve been wanting to try those chips so bad…my store never has that flavor though. I can always taste fish in products like that too…yuck! 🙂

    Thanks for linking that article. I feel the same as you do. I’d rather have a big bowl of something with less calories that a tiny bite of something decadent. I just don’t feel satisfied with one bite.

    I don’t have Google Voice, but I do have a Skype phone. It works well and is very cheap. After we bought the special Skype phone we only pay $30 a year that pays for our designated phone number. Very cool!

    Kath, do you include readings on your master assignment list? I am intrigued by the concept. Do you do a weekly “to do list” for different classes as well? I’m in grad school and I’m always looking for organizational tips to help me manage my job, schoolwork, and home life better…

    I don’t include readings because I don’t do many of them 😉 Luckily in nutrition we don’t have a lot of “read and discuss” style classes, but when I used to have those in history I would do the readings in advance and take good notes in the margins so I could just skim them to refresh the night before.

    I do have some weekly small assignments that I can’t do in advance that I have my G-cal remind me of each Monday. They are very, very annoying!

    How come you drink your chard from a champagne flute? Portion control or just for fun?

    As for food pounds, I’m kind of with you. I tend to be really unsatisfied by small portions of calorie dense things… I like to keep my mouth busy!

    Hi Kath, First time reader here. Especially enjoyed reading about you. I had much the same experience with weight gain in college. Lost it after jaw surgery and determined never to gain it again. I’m much further down the line than you. At age 54, I weigh the same as I did in high school. I’ve started to share many of my secrets on my new blog.     I used to hate last minute cancelations for the same reasons. At least if it was cancelled ahead of time I knew the prof could adjust to fit the material in so we weren’t rushed.

    At least you got some time to get some work in though.

    I’ve gotta ask – how do you keep your food cold during the day? my Wednesdays are usually jam packed with classes from 11-5:30, but I do get an hour break and I don’t want to eat the junk on campus. however, I take a yoga class Wednesdays at 7:30 so I would rather eat something heavier during the day instead of right when I get home and just before I leave for yoga.

    That article about food weight is so interesting! I’m actually doing a challenge with a friend this week to eat only unprocessed foods, and the article was totally relevant. It’s much harder to overeat if you’re only eating REAL FOODS! But this challenge has been much harder than I expected… lots of things that seem healthy are actually processed… breads?! Surprising, right? Love the blog!
