Pumpkin Heaven

If there is a pumpkin heaven, it exists within this bowl of oatmeal –

Best bowl I’ve had in weeks! And I think it may have been my mom’s leftover pumpkin. She brought me a little tupperware of leftover pumpkin from her pie, and I swear it was already sweetened. Not pie sweet, but not canned pumpkin un-sweet.

The heavenly mix:

  • 1/3 cup oats, 2% milk, water, 1/2 large banana, pinch salt
  • 1/4 cup wheatberries
  • 1/2 cup mom’s leftover pumpkin
  • A few walnuts
  • A few dark chocolate chips
  • Spoonful of Barney Butter (I’m scraping the bottom!! 😥 )

We were up at 5am this morning (although it was a slow start) to head to the gym. I did an easy 35 minutes on the ET with Real Simple and then we did a round of lifting – pullups, pushups, triceps, shoulders, abs.

I’m off to class to take a quiz I am not ready for, and then it’s time for my LAST CHEMISTRY LAB EVER!!!!!!!!!!!!!!! I had 3 semesters worth of horrible chemical labs ahead of me when I started this program and I cannot believe today is my last one. Hooray!!

In other news, THE SUN IS OUT!!!

    hey kath, quick oatmeal question-

    do you use half milk and half water (as opposed to all milk) because of the taste combo or to lighten calories? i always use all milk (vanilla soy) and today i tried half water and i think i actually preferred the taste? thanks!

    I’ve been reading your blog for a couple of months, but waited until today to make your oatmeal, and all I can say is WOW! I usually don’t really enjoy stovetop oats, but cooking them together with water, milk, and banana made them so creamy and gave them great texture. I added pumpkin puree, pumpkin butter, and a spoon of natural peanut butter, and OMG! So delicious! I totally understand why you’re such an oatmeal enthusiast!

    that bowl does look like heaven-close enough to it! what a good idea for choco chips inside. yesterday i added tina’s pumpkin chocolate loaf to my oats—it was a great addition. i get awesome oat ideas from you, Kath, I added wheatberries today!! and a z bar. soo yummy and chewy- i highly suggest!

    Kath, Can you remind me of the great blog publisher that you use? I remember a while back you found some publisher program that speeds up uploading pictures and formatting posts….I am now realizing why you may have been so excited because WordPress is slow!

    Today is my last Chemistry lab ever too! I seriously can’t wait. All the accidents and frustrations end TODAY. Of course finals are next week, but oh well…

    Dang it!!! I was going to tell you to mix in your leftover cranberry sauce to your oatmeal — like I’ve been doing for the past three days! — but you beat me to it.

    I made my own sauce this year, too, just boiling cranberries in orange juice until they popped, then adding cinnamon, brown sugar and toasted walnuts. Add a huge glob to a bowl of oatmeal and some skim milk and it’s to die for! And I had been worried about what to do with all the leftover cranberry sauce….

    I flew through Charlotte yesterday and you must be VERY happy for the sun being out. If it had been snow instead of rain yesterday, I’d probably still be there.

    I use the half and half because I think it’s the best of both worlds: the milk makes it creamy and adds some protein + calcium and the water makes (in my opinion) the oats cook plumper. Plus, I think all milk is a little too heavy and adds more calories that I could use on fun toppings!
