Pumpconut Oatmeal

Today was my last day of 9am class until at least next fall! Next semester Biochem starts at 9:30, and that extra 30 minutes is all the time in the world (I guess because I wake up at the same time

:mrgreen: this !
) I got in a great workout this morning – 30 minutes on the Stairs (that flew by), 14 more on the Squirrelliptical (see FAQs!) to finish my magazine, and then another 10 of pull-ups, dips, squats, jumping lunges and planks.

Then I came home to assemble this awesome mixture:

  • 1/3 cup milk, oats, water, 1/2 med. banana, pinch salt, vanilla
  • 2-3 tbsp wheatberries
  • 1/2 a cup of Libby’s pumpkin (which IS sweeter than the organic kinds I had for a while)
  • Cinnamon
  • Coconut
  • Coconut butter
  • EF PB

So filling!!! You know, I used a banana that still had a slightly green top and the oats were not nearly as sweet as normal.

    I had the same banana issue this morning! It wasn’t ripe enough and my pumpkin oats were much more bland. Have a great day!

    I’ll only eat slightly-green bananas, haha – they’re less starchy.

    I am also a huge fan of Libby’s canned pumpkin. I sometimes make a delicious snack by heating it up and tossing in a few dried cherries (raisins, cranberries, whatever) and chocolate chips.

    i had pumpkin oats all last week…i think they’re my fav! i felt like i should give myself a break from them this week but don’t really want to. this time of year they’re all i want to eat!

    Baking cookies? I wish we were neighbors and you’d bring some over (hehe) – I actually need to bake a batch tonight for a party tomorrow – and I don’t get home until 9 p.m. tonight 🙂

    A question for those who like steel cut oats:

    I LOVE the frozen steel cut oats from Trader Joe’s. They are perfectly creamy with just a little bit of chew left to the oat. However, they are also expensive so I’m trying to replicate them with dry steel cut oats. I followed the cooking instructions on the package (4 c boiling water, 1 c oats, 30 min of simmering) and they came out pretty chewy. I didn’t want to overcook them, though. Any thoughts?

    All,
    I use to LOVE green bananas and would only eat them with green on the tip. But now I’ve done a reversal and don’t like any green on them at all – in fact, the more brown spots the better 🙂 I guess b/c I used to eat them out of hand and now mostly put them in/on things.

    I find I always have to cook steel cut longer than recipes say. When they are declared done time-wise, I add another half cup of milk and cook until that is absorbed. Then they’re done.

    After reading your lesson on wheatberries, I finally got some for myself this weekend… I nibbled on them yesterday for a snack and added them to my oatmeal this morning. Love it! Thanks for all the great info and inspiration!

    Kath..I bought vanilla hemp milk yest (on sale for $2.50) after reading your reviews on it. Can’t wait to try it in my oatmeal tomorrow. I need to try the pumpkin with my oats sometime. I loved the egg and oatmeal combo.
    I love “pumpkin raita” (a traditional pumpkin yogurt salad) and never have any leftovers for other recipes. Oh and I make pumpkin tortillas too when I have some hours to spare.

    I am particular about my banannas too. This weekend my banannas were on their way out, so I sliced them up( put them into individual servings in ziplocks) and put them in the freezer. This morning I threw the frozen bananna slices in while the oats were cooking and they cooked up and tasted perfect! Which was awesome since the banannas I got at the grocery yesterday were way too green to use. 🙂

    And thanks for the oatmeal “how to” video, ever since I watched it I have made perfect oatmeal every time!
