I really can’t believe how many animals we have lived with…

Hilarious Tig was outside perched on the porch for a while – all I could see was his tailless bum!

I went to cycle this morning – and totally could have cycled there! The rain held off. But I drove instead. It was a great class (she played “You And I” <– my favorite song!!) and Sara, my new friend who is moving into our house, was there for some excitement!)

Lunch today was nice and easy – and totally flavorful!

I sautéed some leftover zucchini and tomatoes along with tempeh and red pepper in a skillet and then added some Dr. Pete’s Praline Mustard Glaze  and bleu d’auvergne.

Unbelievably delicious!! The Dr. Pete’s gave it all a slight toffee flavor that went perfectly with the blue cheese.

      Matt is extremely allergic to cats!!!!!

      Dogs too although he won’t admit it because his symptoms are milder.

      So pets…probably not.

    All your animals make me smile! 🙂 Love that salad too. I just bought tempeh for the first time last week and don’t know what to do with it. Your salad came at just the right time! I may have to copy you for lunch. Now if I only had that bread and vanilla almond butter………. 🙂

    You’ve gotta love all of those animals who graced you with their presence. This spring / summer at our house, a family of bunnies has grown up alongside our puppy, meaning that each and every morning they are chased from their hiding spots and into neighboring yards / bushes. We also have a bird that sounds like a dying cat, a lone chipmunk, and two squirrels who have taken to hiding nuts in my flower pots on the front porch!

    I went to WF to get coconut oil. Kath which one do you use? You mention putting in your salad and oatmeal both, right? I saw 365 Organic Unrefined Coconut oil. I was expecting it to be more liquidy. HELP!! I desperately want to try it.

      The coconut oil will get more liquidy at room temp in your pantry! I use the Spectrum brand and was thinking the same thing when I first got it 🙂

      Mine is some Tropical brand, but Spectrum is also very good. It will turn liquid at home – but in the winter it goes solid again!

    Wow, that IS a lot of animals! I don’t think I would’ve survived… hah.

    I am a huge fan of that bowl (and the delicious spread of veggies inside too)–I love boxy things like that 😉

    We used to have tons of camel crickets in our old house in Kansas. We called them ‘spider crickets’ cause they looked like spiders, but jumped around like crickets. Ewww, I’m getting chills just thinking about them! Later on, we adopted two cats, and the took care of quite a few of them for us. 🙂

    OMG deer are the worst pests! My parents have all of their bushes in wire cages to stop them from getting munched on. That being said, there’s nothing sweeter than a doe with her babies 🙂

    Kath, I’m looking for 2000 and 2200 calorie meal plans. I think I like balance (lately I’ve been doing the grain-veggie-fruit-dairy-protein at each meal and it seems to work to balance things out that way). Maybe a zone type of plan (30-40-30)? If you can suggest some books and websites that would very helpful for me. Thanks!

      Hey Gena,

      I actually don’t know of any meal plan sites….I tend to eat close to 1800 so add a few snacks to KERF and you’d have one? Sorry I’m not more helpful

    It’s a veritable zoo over there!! But holy hell I would spray the ish out of that mailbox wasp, especially since you’re suspecting he might be building some sort of permanent fortress in there?? I’m talking long hose with high water pressure from about 20 feet away.

    PS, I was stung viciously by wasps growing up– you can probably tell it was horribly scarring haha.

    Is Tig a manx? I used to have a manx named Tigger and he was the best cat. His personality was much more like a dog than a cat though.

    How do you prepare your tempeh? I just bought some and I want some healthy ideas on how to prepare it quickly.

      I just put it in a skillet with some saucy flavor. You can eat it raw so there’s no risk of undercooking

    You guys DO need a pet! haha I just read your response saying Matt is allergic to cats and dogs. My Father is highly allergic to cats and dogs and he and his wife have a Labradoodle. It is a hypo-allergenic doc (hair not fur) and is a cross between a Lab and a Poodle. His name is Fynn and he is the cutest, sweetest, smartest dog ever. My Dad has had zero problems with allergies around Fynn.

    Praline mustard glaze??? Sounds like another awesome combo with that blue cheese. YUM as always 🙂

    Too bad Matt is allergic to cats/dogs (Me, too…even though I had shots/drops to desensitize as a kid) – maybe a nice fish aquarium? I, for one, will miss pics of Tig when you move!

    See, you get a cat, which then means that bugs become free, readily available, edible, and fun cat toys. Not pests – free cat toys. That’s what I tell myself, at least… (by the way, I adore Tig – he looks a lot like a cat I used to have, missing tail and all)

    Kath, what do you think is the easiest way to search for your lunch menus when you used to pack your lunches everyday? (you were still in school) My problem is that I’m such a temperature snob & I don’t have a fridge at school. I like my sandwiches very cold as well as my yogurt, hummus, and dipping veggies. Salads don’t have to be super cold I guess… idk nothing seems appealing to me at room temp!

      Hmmm. I’d go back to the archives from March to July of 2010 and look for lunches. They were nearly all packed. Or go back even farther to semesters like Sept – Dec 2008 or the summer of 2008 when I packed dinner’s too. I’m sorry I don’t have a better way – perhaps a post on that soon!

    HAHA! This whole post cracked me up because I remember so many of these instances when they happened. You really HAVE lived with far too many animals/insects/bugs, etc. There must be something warm and inviting about you that just makes them follow you guys wherever you go 🙂
