Nothing For Granted

Whole lotta workin’ going on over hea-ya.

First in the form of muscles. A hard-core, heavy Body Pump class. Mondays are always the hardest because Chris likes to really challenge us and strays from the normal routine. So many long holds and pulses!! I’m feeling a bit jellyfish at the moment.

My bike ride to the gym and back was INcredible because of this gorgeous wonderful sunny warm weather!! I can’t believe I biked all winter in weather it was so cold I had icicles on my face. Never take spring for granted!

Lunch was awesome. I love salads, and I love sandwiches!

I made a burger with a leftover veggie burger on Great Harvest Spinach Feta. Delicious!! That bread is so soft!

Plus an apple – a tiny Virginia apple from the farmer’s market

And a honkin’ salad – local organic greens, baby spinach, carrot, pepper, Bleu D’Auvergne, sunflower seeds, olive oil, honey, lavender salt.

I am so thankful that my office has open windows, Brendan James, a fridge and a husband in it!

Back to work we go!

    Looks awesome! Question: do you ever get sick of salads? I guess I feel like I always fall back and make the same one, so I get sick of eating them. But I just read the book you reccomended on another website (Superfood RX) and am determined to eat more spinach or romaine! I just wish I didn’t get so bored.

    Also, what about the toppings (like the oil and honey, which are both superfoods). Does that go with just about any salad? And the lavendar salt? Sounds great.

    I guess I think you should do a post just on salads!!

      This salad is my very favorite and I have YET to get sick of it! I’m sure I will sometime. Switching from gross bottled salad dressings to my honey/olive oil combo was a huge key for me. It made me love salads so much more. And lettuce is so SWEET!

      I think a key is thinking outside the (lettuce) box. Their great but I usually fill mine with any kind of vegetable with or without lettuces! Adding squash and hummus, salsa and/or goat cheese really makes it more too….and GH bread on the side of course! 🙂

    Oh! You’re making me jealous with your bread. We don’t have a GH around here, so I came back from my Colorado vacation with 2 loaves of GH in my carry-on! My stock needs replenished, though. I’m asking my uncle to bring some when he flies in for my graduation next week! I will take GH as a graduation gift any day! 🙂

    I just remembered I have 1/2 a loaf of Kansas Krunch in the freezer (excitement over here)!

    Kath- I had my first and most certainly not last GH experience Went to GH Albquerque and had some Green Chile Cheese Bread (Wow!) and Nine Grain Whole Wheat. I have been pretty much living on this stuff since Saturday.

    An extra large salad is the only size I know…looks lovely!

    I was so pleased and surprised that my attempt at making Emily’s bean burger this weekend was successful. These were the first veggie burgers I’ve made that didn’t crumble on me. And, they were super simple and a big hit too!

    Yes I must say I’m pretty jealous of your office set up today Kath! It’s so gorgeous out and I’m stuck inside. We’ve got lots of windows in my office but they don’t open :(. At least I got to go for a stroll at lunch – I’ll be out this afternoon after work for sure!

    I apologize if you have answered this question before, but you drink a lot of sparkling water! Does sparkling water hydrate as well as plain old tap water? (Does it count toward the recommended eight 8oz glasses per day?)

      Not Kath, but the answer to your question is yes! The sparkling water has no additives other than the carbonation. It really is just tap water with with carbon dioxide in it to bubble. I drink it all the time too, it seems more refreshing with bubbles. 🙂

    I had a tasting of that bread during my trip to Great Harvest bakery, it really was delicious and chewy.

    But I held off on buying a whole loaf because I already picked up the Cinnamon loaf and Dakota loaf. Still tasting great after a week in the freezer

      This was a crazy weekend wasn’t it Natalie?! The tornado went north of us, were you affected at all? Scary stuff! We did manage to sneak out and plant some flowers and herbs between storms!

    Your office sounds delightful. Open windows are glorious, arent they! I keep my slider open next to my computer desk whenever possible. Easy to do most of the year in San Diego 🙂

    I know what you mean about not taking nice weather for granted. It is still on the cool side (40* in the AM) here, but I am still so thankful that winter is over and I don’t have to deal with single digits and temps in the teens!!

    I was debating whether or not to get Bleu D’Auvergne at the store today! The only other blue cheese I’ve ever had is Roquefort. How would you say it tastes compared to Roquefort?

      I’m not all that sure what Roquefort is like, but the BD’A is creamy, slightly sweet and slightly sour. Ask your cheesery for a taste!

    I love that you featured Brendan James in this post! I go to UNC Chapel Hill, and he was a Clef Hanger (Acapella singing group) here.I have followed him ever since.. I just love his voice. He’s not very well known so I was really excited to see his name! Oh and the food looks delicious! 🙂

    what’s the hardest workout you do? also, how would you advise a college student who loves sweets (as in can and will eat 4 sundaes every sundae bar) but also loves to be in shape/work out?
