Lunch Break

Squeezing it in!! Morning agenda went well – got most of my lab complete. Now I’m putting on workout clothes stuffed with lunch to get ready for 3pm Girls on The Run and beyond. I can’t even think about running right now!

Lunch ended up a mish-mosh of stuff that was surprisingly filling and delicious!

A big salad with the kitchen sink

  • Spinach/romaine 
  • Capers + a few olives
  • Carrot, celery, green pepper from our garden
  • Leftover apple
  • Avocado
  • Feta
  • And cubes of leftover frittata,which was fantastic on a salad!

I used our Williams Sonoma balsamic for dressing plus the juice of a lemon –

Plus grapes on the side (on their last day!)

And a piece of toast, topped with some jam, leftover cream cheese + a few walnuts for omega-3s!

With seltzer and a tiny bit of sunshine, which we need more of today.

    What a fabulous lunch. It looks so crisp and filling. I wish all my lunches could be as beauitfully prepared as yours!

    That salad looks awesome!!

    I have a question/concern that I hope someone could help me with. I recently started adding a cardio kickboxing class to my workout schedule two times a week. The class is usually a great workout, and I find myself really gross and sweaty after, which I love! After last night’s class however, I was barely even sweaty! The movements and steps weren’t any easier than any of the previous classes, so I’m sort of confused! I didn’t have my usual pre-workout snack before because my stomach was feeling weird; could this have something to do with it? Or am I simply getting used to the workout?

    Any answers would be helpful 🙂

    Ah, garden-fresh veggies sound so tempting! One day we will get out of our apartment…

    DaisyMay, I know Kath has a busy day and my in-laws are all Indian, so I’ve seen most of this stuff prepared first-hand and thought I’d try to help! Any kebabs or anything prepared tandoori style is pretty healthy, tandoori roti are DELICIOUS and whole grain, and basically anything without the words “kofta” (deep fried) or “korma” (creamy) is typically made flavorful with spices, not fat. Hope this helps! Do you live in CT? I went to school there…miss it!

    Are those seltzer’s like diet sodas? Or are they just flavored carbonated water? Or are they like regular soda with cal’s in them? I can never find anything like that in my grocery store but maybe I’m looking for the wrong thing, I look by the tonic water because I assume it was like that, maybe I should be looking by the soda

    Argghhhhh. Kath – I need ToDoist help. I have the sidebar installed on my firefox so it sits next to my gmail calendar all day. But when i try to delegate tasts, AKA one major task with various steps, the steps come up under the major task and AGAIN on their own. Any ideas?

    Forget food – you’re my organizational guru.

    mish-mosh salads are sometimes the best. You can come up with flavor combinations you never thought of. I find myself at Jason’s Deli from time to time and always order their salad bar. And it’s my favorite one by far. Why? I mean, seriously, if they’re all lettuce, veggies, and (essentially) the same dressings, why would one be any different than another? Well, it is. And I think what I like about their fixin’s is I get to make a “guy” salad. So it has bacon, and cheese, and hard boiled eggs. No bean sprouts here! Plus some spiced crispy things — no idea what they are — and topped with high octane dressing.

    At least I haven’t deluded myself into thinking I’m having some sort of diet food because it contains lettuce. 🙂 But it’s not an every day thing, so I’m okay with it.

    Kath,
    I know you’re past counting calories and all, but was wondering if you could tell me approximately how many calories you eat for breakfast, lunch, & dinner. You obviously have good eating habits and am just looking for some type of baseline for myself (I know activity level makes a difference!). Just a baseline of info. Thanks!!!

    Is the balsamic vinegar from Williams Sonoma really better than regular grocery store. I don’t think I have had a really good balsamic and wondering if it is worth the price. Don’t mind paying for it if there is a taste difference,

    Yes! It matters where you get it! Good balsamic gets all its flavor from the aging process and the real aged balsamic is rare at the supermarket. Most of the commercial brands add sugar, salt, and caramel. The real stuff is just the vinegar.

    Oh man, you gotta go to W&S and taste some of the balsamic. You’ll instantly understand why we’re crazy about this stuff. We encouraged my grandmother to go and check them out, and she’s a little old southern lady so we weren’t expecting much. Well she tasted the kind we have ($20) but ended up buying one that was $50!! She thought it was that good.

    Personally I cringe whenever I have to buy anything from W&S because their markup is ridiculous, so I’m gonna look around for some better balsamic sources.

    I found the same with kickboxing – sometimes I had a great workout and other times it was barely better than walking. I think for me it was all dependent on the instructor and even the same one could vary from week to week. I would just try to keep moving and make the moves as challenging as possible. Maybe you were less intense with your stomach problem this week.

    We got that one at Costco. They are just plain sparkling water with “natural flavor” in them – so there’s only a tiny citrus taste. They aren’t sweet at all and there are no artificial sweeteners.

    I’m sorry but I don’t really understand what’s going on!? When you add things in ToDoist when it’s in a regular browser window does it do the same problem? You might have to indent or * the task to get it to be under one? Have you checked all the “how to” pages?

    I have roughly 400 kcal for breakfast, 500-600ish for lunch, 200-300 for afternoon snack, 400-500 for dinner, and maybe another small snack/dessert.
