I Need A Broomstick

Because I’m flying from one meeting to another!!

How much more efficient [and fun!] would that be!

Got home from a late meeting at 1:30 ready for lunch. I decided to whip up a quick stir-fry.

In general I crave cold lunches – sandwiches, salads, fruit, snack plates – but sometimes a hot lunch sounds good. I knew I had enough veggies to throw together a dish.

I’ve been on a big tempeh kick lately. I had forgotten about it and picked up a package recently and have been loving it for lunches – on sandwiches, salads, stir-fry. I made Matt a lunch today that I took to the bakery this morning and put some crumbled onto a salad for him.

My stir fry was broccoli, pineapple, 1/3 a block of Lightlife’s 3 grain tempeh, steamed in a pan with a few tbsp of water and then tossed with teriyaki sauce. I added coconut butter on top (GOOD CHOICE!) and some chips on the side for crunchy carbs

As soon as I can change clothes and bike over, I’m headed back to the bakery.

    Love how you are ALWAYS able to get in a healthy lunch – homemade – with wholesome, healthy foods.. no matter how busy you are. You really put your health first, which is hard to do. BUT AWESOME!

      I agree! I’m always really impressed by how many veggies you eat.

      I have all the time in the world to make a healthy lunch, but still sometimes stick to lots of carbs and dairy, cause it’s easy.

        I wish I had the time! Sometimes its not only the cooking time, but the clean up time- or the coming home to dishes that I dread 😉

    I am the same way with lunches! However, during the cooker months, I like to put hot stuff on my cold greens! I like the hot/cold mix. Your lunch looks delicious! Have a great afternoon Kath!

    I agree – tempeh is really good, and totally versatile! And it’s been a while since I had a hot lunch, but they’re always nice to switch things up with. Good luck at the bakery this afternoon!

    I have yet to find a way I really enjoy tempeh, so maybe I’ll have to try this! I didn’t love tofu the first few times I tried it, but now that I know how to prepare it, I have it often!

    Sounds tasty! I haven’t had tempeh in a while but I love its interesting texture. I’ve also been eating more cold lunches than hot ones lately now that the weather is warming up, but sometimes hot ones just taste better!! Have a good afternoon at the bakery!

    Hmmm tempeh on salads is delicious! I love that you paired it with pineapple. I love it with sweet stuff….especially jam on sandwiches! Just like you 🙂

    Yummiest tempeh dish I had recently: crumbled tempeh, adobe rice cooked in veggie broth–mix two in wok and add a bit of white truffle infused olive oil. SOOOO GOOOOOOD. Also, since it was a vegetarian/vegan pot-luck, there was a side of grated extra sharp white cheddar cheese if you wanted to put that on top.

      The texture is kind of like rice packed into a patty. The flavor is neutral like tofu, with an ever-so-slight earthiness to it

    I have to admit I’m still kind of weirded out by tempeh (I was just getting used to tofu!). I think it’s got a pretty good texture though. Speaking of weird meat substitutes though, I remember when I was living in England as a kid, they had something called Quorn? (Actually, I just looked at Wikipedia and apparently it still exists and is actually extracted from an exotic fungus…hmm). Anyway, we ate a ton of it because my sister’s a vegetarian and it was pretty good.

    I need a broomstick too. Is there one available that could fly me over to a spa for the day or the week where I could pretend I dont have 17 things to do…all at once? haha! 🙂

    Tempeh has been in heavy rotation at my house too. have you tried tempeh bacon? Delish! I also made tempeh “crab”cakes recently – I don’t eat seafood, but was told by friends that do they were pretty good! 🙂

    I’ve been big on the tempeh lately too! And boy does your lunch look delicious. I have a trip to the grocery store in my future and I think I need to pick up ingredients for a stir fry…mmmm. 🙂

    At least the one nice thing about your meetings is that they aren’t all in one building. I hate meeting, but being able to move around in between would be nice.

    I’m with ya on the cold lunches. I’m definitely a cold lunch person myself but today I had a veggie burger on a whim and it was SO delicious. It pays to mix things up every once in a while I guess!

    I do stir fries for dinner a lot but never really thought of them for lunch. As big as mine usually are, if I had one for lunch, I’d only need a snac for dinner. Sounds like a plan…I’ll try it. Yours looked really yummy. Can’t find tempeh around here (southern NJ). I’ll have to look harder.
