Googly Eyes

Hello, hello!

This morning I tackled 2.5 years worth of nutrition papers. I thought I had sorted through all my papers, but this time I was even stricter. So much to recycle. Poor trees 😥

Now I have a binder of reference information (such as some of my best printed class notes and some tests) plus flash cards leftover from finals to study for the RD exam

And two binders more – one for R.D. paperwork (transcripts, insurance, etc.) and one for my internship that I have to carry around.

Whew!!

Matt arrived home from his workday to find me still in my PJs, singing and organizing. We couldn’t tell who was stinkier – me having showered last night and rolling around in my PJs or him after 8 hours of baking bread having showered at 3AM!

While he napped, I made my trip to the gym. I biked there – in 26* – wrapped in my Lands End jacket, scarf and gloves. It was cold, but I was sweating on the inside.

I did 35 minutes of Squirrellipticalling at the gym, followed by a wimpy round of upper body weights (with all my back problems I didn’t want to push it. I need to schedule that massage ASAP!) Then I biked home.

3 loads of laundry folding, a shower, dressing + make-up later…..

I made a Googly-Eyed Salad!

The base was spinach (plain) topped with mango, chopped almonds and Costco cinnamon-cranberry goat cheese

It rocked.

And the eyeballs were a Dakota bun smothered in some Kalamata olive hummus broiled with mozzarella cheese. SO GOOD!

    I have been tackling the papers today, too. I had them in notebooks, but now SO many of them are heading for recycling. And, what’s left is much neater :-D. Have fun shopping!! Can’t let those cards depreciate!

    You’re so organized! I have tons of paper work to get through. 🙁
    I was just wondering if you have a good way of telling when your mango is ripe. The last mango I bought I thought was over-mushy but when I opened it, it wasn’t ripe yet. I have another one sitting in my fruit bowl. Any suggestions?

    Wow – amazing job with the organization! You must have felt so good after that. What’s in the binder that you carry around? I didn’t have one during my internship. Well thinking about it I think we had a mini notebook with important information in our lab coats at all times. That salad looks delicious! Enjoy shopping.

      We have all these competencies we have to complete and we must document them as we do them and get them initialed by our preceptors. Maybe you did it a different way, or perhaps the ADA is getting stricter?

    1st off, I need to let you know that, as weird as it sounds (because you have no idea who I am), you’ve been an inspiration ever since I found your blog and read about your journey to health. It is such a GREAT help seeing what you eat and drink — portion control is one of my downfalls and I visit your site daily to remind myself of what’s healthy (and to get ideas for my morning oatmeal)! Thank you for doing such a great job…

    2nd-ly, (and I know you are super-busy with your RD stuff) is there a way you could tell us readers what the ingredients are in your Costco cranberry cinnamon goat cheese, so I can attempt to recreate it? (We unfortunately don’t have a Costco where I live.) I have some chevre in the freezer just waiting to be mixed with something other than dill, garlic and salt and the combination of cranberries and cinnamon sounds heavenly.

    Uh, yeah. I ran five miles this morning at 9:30 and just showered now, after singing in my sportsbra and dancing around to Michael Buble while cleaning the house. It’s 1:30 pm. Oops.

    Looks delicious! We just had a huge organizing day too! and last weekend we went and used our gift cards too! Trader Joes and Bed Bath and beyond…so fun to spend but not really spend your money! I love the blog , you two remind me of my husband and I !

    Biking in 26 degrees? That HAD to be chilly!
    I could never do that squirrel elliptical. That one is tough – more so than the regular E.T.

    I used to work at a bagel shop in college and had to start at 4 am, and i NEVER showered before work! What a clean husband you have (or maybe I am just really dirty?) And I think I have you beat; I was in pajamas until noon today!
