Eat Greens, Then Cake!

We are having the most BEAU-TI-FUL day!!!! Cool, breezy, sunny!

It’s so nice that Matt decided to take a half day and is home brewing beer. It feels just like fall!

After two interviews and a call this AM, I made us both salads for lunch

Garden greens, leftover quinoa with veggies, cottage cheese for a boost more protein and peach!

I think I like quinoa on salads way more than by itself. I have never been the biggest fan..

I opted out of a slice of bread at lunch because I was saving room…

Stacy sent Nathan to work today with some of Drake’s leftover birthday cake since we left before getting to try it on Sunday. It was all homemade – including a marshmallow fondant frosting that I totally loved.

    I also prefer quinoa in wraps or salads more than by itself! That cake looks really good! Yum, cake after greens is the perfect ending of a lunch!

    It’s perfect weather here in Charlotte too – feels like early fall!!

    Glad you guys are enjoying your day – that cake looks unbelievable. Can’t believe it’s all homemade! I hope I can make cakes like that for my kids when I become a mom 🙂

    Matt is so cute. 🙂 Kath, I was recently catching up on your very first blog posts and youtube videos since I am new-ish to your blog. In your video, you said you lost about 30 pounds through calorie counting and writing it all down. I couldn’t agree with you more, I do the same thing since I am trying to lose also.

    Just curious, are you still counting? I notice lots of treats here and there and you said, those bites really do add up. So perhaps you are more lax now and in maintenance mode? Thought I’d ask since I am on a similar journey. THanks!

      No, i stopped counting years ago as I was in maintenance mode. I put a little back on, and then took a little back off without counting. I have no idea what I’ll do after the baby comes – assess the damage and then probably give it a try without counting first.

    Don’t you love the weather today?! I’ve been loving quinoa in more breakfasts than savory meals. Maybe try that! And that marshmallow fondant sounds delicious! I love anything marshmallow.

    1) I’m getting real close to trying the quinoa – the protein value is tipping it for me – any ideas on how to introduce it

      I have made many variations to this recipe with what I have on hand. Good luck!!

        Betty – I suggest cooking quinoa in broth vs. water for a flavor boost, esp. if you plan on eating it as a side w/out any mix-ins. Just pair it with a legume of your choice, a variety of veggies, avocado and spices and you have yourself a nutrient dense bowl of goodness.

    It’s amazing outside today (I’m in Baltimore)!! I had to have lunch outside and have my window wide open at work.

    I have a question. I see you’re an RD that is home a lot, and on your blog you’re often saying you have interviews and calls and meetings. I’m just curious as to what you do?

    I’m SO jealous of y’alls weather today. We must be getting a big chunk of TS Debbie here in Charleston because it’s a rainy, gloomy, and chilly day (Did I mention humid too?).

    That cake looks very yummy. I could definitely go for a slice right now. Instead I am drinking a small cup of cocoa. Never thought I would type that in June! 🙂

    Leftover quinoa in salad is one of my favourites! If I make it plain, I ususally like to mix in my veggies with it and drizzle with a bit of EVOOand a squeeze of lemon…it livens it up a bit!

    I definitely like quinoa more in salads too. Just like rice, it’s a little boring on its own! Sounds like a fun day so far. Just think – soon Baby KERF will be out and you can enjoy some of that summer brew!

    I headed out to teach spin at 5 this morning in my usual tank and shorts- and was freezing! I actually had to turn the heat on! I’m not complaining though- it’s a nice break.
    My hubby would be so jealous that Matt took the day off to brew beer (and good for him!). He’s a big nerd too. 😉

    David & I brewed last weekend & it almost killed our dog! Apparently hops are toxic to dogs. 🙁

    I ran into Matt picking up beer-making supplies at Fifth Season yesterday (I was buying supports for my tomato plants)! What a perfect afternoon to be outside.

    On the quinoa front, I made some last night and made a HUGE mess of my kitchen…the little grains tend to get away from me, haha! I do enjoy eating it, though!

      This is what I used for the cake. I didn’t measure the butter and I used my Kitchen Aid and then handy sponge and dough hubby to get the powdered sugar kneaded in well.

    Hey Kath,

    I noticed in your picture that you said “small fork= small bites.” While that’s literally true (obviously you can’t load as much food on a small fork as you can on say a serving fork), you might be interested in this article I read recently that said people who used large forks at an Italian restaurant ate less than those who dined with small forks.

    I think quinoa is best with a miso or lemon-tahini dressing. Or there is a recipe from 101 cookbooks that makes baked quinoa patties.
