I got a lot done this morning – including a video post that will go up while I’m in Bermuda! I have TONS (over 50) guest posts that I’m working on scheduling for the week, so you guys will be entertained 😉
I was ready to hit the gym at 12:30, but since it had been 4 hours since breakfast, I had a snack to tide my lunch hunger another hour or so.
A bit of Chocolate Vanilla Almond Butter between a few kashis and a dried mango. This almond butter is the BEST EVER!!!
I biked to the gym in this freezing breezy weather, spent 30 minutes climbing stairs, did 10 minutes of lifting (which was hard with my hurt thumb, so I didn’t get that great of a workout) and biked back home.
Cravings today included chickpeas and spinach!
I made a Lemon-Tahini Chickpea Salad with these –
- ~1/2 a lemon
- Sprinkle dill, salt + pepper
- 1 tbsp tahini
- 1/2 cup chickpeas
Turns out my tahini had gone bad! I bought a kind that was kind of a tahini-hummus hybrid. It was mostly tahini with chickpeas, lemon + salt too. It was all black and moldly about 2 months after opening it 🙁 But luckily Artisana saved the day with their sample size!
I mixed the beans and dressing with about 1.5 cups of chopped carrot, cuc, jalapeño, green pepper and zucchini, all served over spinach.
An apple on the side, which put me over the edge fullness-wise. Too much crunchy produce in one meal!!
So I ended with a milk chocolate Adora. Not sure which kind I like more! These sure are a fun way to end a meal 🙂
We MAY be getting me an iPhone this afternoon. We’re going to see what the damage is. Long-term it won’t cost us anything more because we are essentially replacing Matt’s Blackberry with a text-messaging cell phone (since he’s at the bakery all day and never uses it like he did when he worked in insurance) and getting me the iPhone. But it’s the up front costs that are killer! Crossing my fingers….
Thanks for the head’s up on the upgrades. I think I read that current iPhone users will be able to upgrade their phones, so there are just a few items that are unique to the functionality of the 3G. Correct me if I’m wrong, but it might be too late!

hope you get the iphone…my dad just got one and LOVES it…. it would be perfect for you i think!

The chickpea salad looks divine. I’m making one today, too! I never liked them as a child but now I love them.
I’ve always wanted an iphone they look so fun!Your salad looks good! I was wondering how long tahini lasts…I bought an organic kind 6 months ago and it been opened and in the fridge, but it looks fine….Just seems like that stuff would go bad.(??)
i always thought you had to keep tahini in the fridge, but the kind i opened recently says no need to refrigerate. do you think it would keep longer if i refrigerated it?
My tahini went bad because it was not true tahini – it had beans, etc. in it. True tahini, as in sesame paste, shouldn’t go back.
I want an iPhone too! But just a heads-up, Apple is coming out with new phones/upgrades in June.
I hope you don’t me asking this, but would you please post a couple days worth of meals that you ate during your weight loss period? Ii would help me to get a sense of whay 1200-1600 calories a day looks like. I’m trying to focus on REAL food instead of “fake” processed foods. Thanks for your help.
I wasn’t blogging during my weight loss, so I don’t have any meals archived. And I also never ate 1200 calories per day – or even less than 1500 thanks to daily exercise. Check the FAQ page to learn more about my NET calories approach. I ate the same way I do now!!
beautiful salad! I’m so behind the times with my cell phone – I don’t have the capabilities to text, but I’m okay with that. 🙂
that AB sounds amazing!
Love your blog! Someone mentioned this a few comments up. But there are rumors that Apple will upgrade their iPhone in June, so it may be better to wait a bit than to get stuck with an older model for a couple years. Just something to consider.
I’ve been eyeing an iPhone for quite some time now. Just patiently (yeah, right) waiting for my Verizon contract to run up…
Sarah (lovINmytummy) says
Good luck with that iPhone. Now you can start sending messages that carry that elitist tag line, “sent from my iPhone.”
Um…this comment was…
Sent from my iPhone.
Melissa @ For the Love of Health says
What a fancy looking salad! I love when food is placed well like that! 🙂
Great snack! I need to get some chocolate vanilla almond butter for sure!
Have a great afternoon and I hope you get the phone you wanted!
Whoohooo for the Iphone! I swear if I got one I would have NO idea what to do wiith it! I can’t even use speed dial on my cell phone. I’ll leave that stuff to the more technology savvy 🙂
If you are already on AT&T, you may be able to get a refurbished 3G Iphone for $100. That is what I did.
Kailey (SnackFace) says
Gorgeous salad! I love chickpeas so much, they do no wrong. Good luck with the iPhone. They seem a bit complicated for me, plus I’m a little klutzy and would drop it all the time.
Shannon (The Daily Balance) says
salad looks awesome!love chickpeas! yay for iphone!
I still say check out the 3G G1 from TMobile…
Courtney (The Hungry Yogini) says
Yay for productivity!
Your lunch looks wonderful! I love chickpea salads. In fact, I made one yesterday!
I’ll keep my fingers crossed for the iPhone =)
I’m shopping for a new phone, let us know what you think of the Iphone!
That almond butter sounds extremely tasty.
The guest posts are a great idea, I’m looking forward to it.
Has Matt ever written up about his transition from insurance to the bakery? It sounds like a leap of faith. I love hearing those inspiring stories.
I love my iphone and am so happy I got it! The new OS they have is pretty slick because right now you can’t send pictures in text messages and getting them is a pain because you have to access a website and enter in a pre-generated code to see them, and its supposed to have that! It is supposedly coming out this summer but nothing official as to a June release, my bro in law at AT&T hasn’t heard anything about it at all so I’m doubtful it will be that soon.
That chickpea salad looks amazing! I’m definitely going to have to try it out! It’s almost like hummus without the blending. 😉
That’s so exciting about the iPhone! Hope you end up getting one! I have a blackberry and love the thing… I don’t know how I lived without it. 🙂
Meghan (Making Love In The Kitchen) says
What a delicious little chickpea indulgence. Yummy!
Ugh I want a iPhone so bad, I’ve convinced myself I actually NEED one. I haven’t been able to convince myself that I can afford one though, so I wait and wait. If Kath gets one though…might consider it 😛
Hmm I threw out some tahini awhile back because I hadn’t used it in ages so I figured it went bad. Maybe I didn’t need to? Does this mean I can actually buy a new jar for the few times a year I make hummus? YAY!
(and if I had an iPhone, I could be in the store and looking up info about the shelf life of tahini. SEE?!? Need one!)
You should be able to get one for $100 on some deal if you are on AT&T. Also remember to ask for your student discount at Apple. I got a cool 10% off.
I have the iPhone 3G (the one out right now) and it’s the best thing ever! At first I was afraid I wouldn’t use all of the applications, but trust me YOU DO! They’re extremely handy! And yes, you are correct the iPhone 3G will be eligible – in fact free – for the upgrade in June. So it’s perfectly fine to buy one now.
Your food looks as great as always!
Have a fun trip!
The chickpea salad looks great. And, I love dried mango! I’ll have to try that almond butter- sounds awesome!
Oooh, the chickpea salad looks delicious!!!

Guess my comment got lost! Would love to try the vanilla-chocolate almond butter, but it doesn’t seem to be on their website. Is it coming soon?

Mary Ponzio says
wow that chickpea salad looks incredible!! I have a new found love for chickpeas. I’d love to test this out.
What is Tahini like? Does it resemble hummus at all?
I didn’t see the Chocolate Vanilla Almond Butter on the site either…
Only the Vanilla AB.
I just got an iphone a few weeks ago and love it! I think it’s a blogger dream come true. Love all these gadgets to stay on top of everything 🙂
Are you still accepting pics of food (for your guest posts) or did you receive too many of them? I’d love to send you a pic of one of my yogurt concoctions…
Oh Kath, go for the iPhone! It is BY FAR the best purchase I’ve ever made, ever! You’ll love it!
Oh She Glows says
Oh my gosh 50 guest posts!! That must be soo much to organize. Good for you!!!

The chocolate vanilla almond butter sounds soooooo goooood!
In any of your classes, have you discussed the reason behind some dieters of the same height being able to eat back their ‘net’ amount of calories due to exercise, as you did, and still lose weight, and those who are like me & can’t go over about 1200 w/ vigorous exercise while dieting or they gain? I know the obvious answer is metabolism, but is there anything else at work here barring a thyroid issue?
I don’t want to seem like I’m trying to compare myself to you excessively I’m just curious – thanks!
Dried mango, almond butter? Perfect.
Your salad looked DELISH!!!
Good luck with the iphone – let us know how it goes!
Kevin said that even though he doesn’t read the blog, he was happy he went! He loves talking about phones!
If you do get it, Renee will have the perfect opportunity to gloat 🙂 Haha!

That salad looks really good! I am going to have to buy some tahini!
I totally want to order some Naturally Nutty after seeing the owner lives in Traverse City, MI – my mom’s hometown! Too cool.
Re. Chocolate Vanilla AB,
I don’t think it’s out yet – it’s a sneak peak. I’ll let you know if I see it!
It’s kind of like a bland nut butter. Not much flavor compared to almond and peanut.
Yes, metabolism is probably the best answers, but I’d also say that maybe you’re not accurately counting and/or there are other factors in your life that are preventing weight loss too. I wouldn’t assume it’s metabolism without checking with an R.D. who can evaluate your whole lifestyle.
Tell Kevin thank you for the push to get one at BB!!
That lunch looks divine! I’ve been vacationing this week, and it’s been hard to answer all my healthy cravings (yesterday it was spinach, but we were at Epcot so I’ll be on the prowl for leafy green goodness today 😉 )
Sweet Phone! I am waiting until they are available from verizon but it is so hard to be patient! You mentioned biking to the gym. I am trying to get into that. If you have time check out the questions about it I posted on my blog, thanks.
Do you know if regular tahini goes bad? I hope not. I have a big, open, expensive jar.
Yum, that chickpea salad looks so good!
Congrats on the iPhone purchase – I’m so jealous! I have to use an old model blackberry – but my work pays for it, so I guess I can’t complain 😉
Hi! I found your blog today and am so happy to have stumbled on to it. That chickpea spinach salad looks absolutely delish! I have been trying to find a dynamite salad recipe for either lentils or chickpeas (my 2 faves). Can’t wait to try this one! Thanks and looking forward to reading more 🙂
